With a handful of simple ingredients you can make this paleo pumpkin bread recipe easily in one bowl. It comes out deliciously perfect every time.

2 cups almond flour
1/2 cup tapioca flour
1 1/2 tbsp pumpkin spice
1 tsp baking soda
1/4 tsp salt
2 large eggs
1 cup organic pumpkin puree
1/4 cup butter or coconut oil
1/3 cup maple syrup
1 tsp vanilla extract

Steps:

  • Preheat your oven to 350 degrees fahrenheit.
  • Grease a loaf pan and line with parchment paper. If using a special loaf pan (as I am), see notes below.
  • Add all ingredients to a mixing bowl and blend together with a hand mixer on medium speed until just combined.
  • Pour the batter into your loaf pan and cook for 50-60 minutes or until a toothpick comes out clean.

1 cup canned solid-pack pumpkin
3⁄4 cup sugar
White icing, optional (recipe follows)
1⁄4 cup orange juice
2 large eggs
1⁄4 cup vegetable oil
2 cups all-purpose flour
2 teaspoons baking powder
1⁄2 teaspoon salt
1 teaspoon pumpkin pie spice
1 cup fresh or frozen blueberries, not thawed
1 cup sifted confectioner sugar
2 tablespoons softened butter
1-1⁄2 to 2 tablespoons milk
1⁄2 teaspoon vanilla

Steps:

  • Pumpkin Bread Instructions Preheat oven to 350°. Butter an 8-½ x 4-½ inch loaf pan. In a large bowl, beat pumpkin, sugar, orange juice, eggs, and oil until smooth, about 1 minute. In a small bowl, stir flour, baking powder, salt, and pumpkin pie spice. Add to pumpkin mixture and stir just until just combined. Spoon 1/3 of the batter into pan and spread evenly. Stir blueberries into remaining batter in bowl and spoon over batter in pan, spreading evenly. Bake for 60-65 minutes; cool in pan on a rack for 10 minutes before turning the loaf out onto the rack to cool completely. Drizzle with glaze.
  • Glaze Instructions In a bowl, combine sugar and butter until combined. Add milk and vanilla and continue beating until smooth. Drizzle over bread.

1 cup cashews
1/2 cup macadamia nuts
macadamia nut oil
1 cup pumpkin puree
1 banana
2 eggs
1 cup almond meal
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon pumpkin pie spice
1 pinch sea salt
coconut oil
1 cup blueberries

Steps:

  • Preheat the oven to 375°F.
  • Add cashews and macadamia nuts to the food processor and blend into a fine nut meal.
  • Drizzle macadamia nut oil while the blade is going until you have nut butter.
  • Add banana and pumpkin puree to the food processor along with the nut butter and process until you have a thick mixture.
  • In a large mixing bowl beat the eggs. Then add the banana nut mixture, almond meal, baking soda, baking powder, cinnamon, pumpkin pie spice and a pinch of sea salt.
  • Mix until combined then fold in blueberries.
  • Coat a bread pan with coconut oil and pour your mixture inches.
  • Bake for 45-60 minutes or until the center is set.
  • Let cool for 5-10 minutes before serving warm.

3 tablespoons grated orange rind
3 tablespoons butter
1 cup blueberries
1/4 cup boiling water
1 teaspoon salt
1 teaspoon baking soda
1/2 cup orange juice (reserve 1 tbsp for glaze)
1/2 cup powdered sugar

Steps:

  • Mix water and butter.
  • Add orange juice and rind.
  • Beat eggs in sugar.
  • Add eggs to orange juice mixture.
  • Add dry ingredients, then add blueberries.
  • Bake at 350 for 1 hour.
  • Make a glaze of 1/2 cup powdered sugar, 1 tbsp orange juice and 1 tbsp hot water.
  • Drizzle over hot bread.

1/2 teaspoon baking soda
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon clove
1/2 cup canned pumpkin
2 tablespoons honey
1/4 teaspoon stevia
3 large eggs
1/2 cup chocolate chips (optional)

Steps:

  • In a food processor combine almond flour, salt, baking soda and spices.
  • Add pumpkin, honey, stevia and eggs and pulse for 2 minutes.
  • Scoop batter into a mini loaf pan.
  • Bake at 350° for 35-45 minutes.
  • Cool for 1 hour.

2/3 cup white whole wheat flour or 2/3 cup oat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1 cup solid pack pumpkin
1/4 cup undiluted evaporated milk
1/3 cup butter (canola)
1/2 cup packed brown sugar
1 egg
1 cup blueberries
1 tablespoon flour

Steps:

  • Combine 2 T flour, 2 T sugar, and 1/4 tsp cinnamon. Cut in 1 T butter until crumbly.
  • Combine first seven ingredients, ending with the allspice. In separate bowl, combine pumpkin and milk until blended. Cream shortening and sugar with mixer in large mixing bowl. Add egg, and beat until fluffy. Add flour mixture alternately with pumpkin mixture, beating well after each addition. Combine blueberries and flour. Gently stir into the batter. Pour in bread pan, and sprinkle with streusel. Bake at 350 degrees for 1 hour, or until toothpick inserted in middle comes out clean.
