2 ripe medium tomatoes (1 red and 1 yellow), cored and roughly chopped (about 1 1/2 cups)
1 clove garlic, peeled and smashed
1 scallion (white and green parts), thinly sliced
3 tablespoons extra-virgin olive oil, plus additional for brushing
2 teaspoons red wine vinegar
2 teaspoons kosher salt, plus additional for seasoning
Freshly ground black pepper
1/3 cup torn fresh basil
3 tablespoons roughly chopped fresh tarragon
3 tablespoons roughly chopped fresh flat-leaf parsley
4 chicken paillards, about 6 ounces each (see chef's note, below)

Steps:

  • Prepare an outdoor grill with a hot fire.
  • Toss the tomatoes, garlic, scallion, the 3 tablespoons olive oil, vinegar, the 2 teaspoons salt, and black pepper to taste in a medium bowl. Add all the herbs to the bowl but don't toss.
  • Brush the chicken paillards lightly with olive oil and season with salt and black pepper to taste. Grill the chicken, turning once, until cooked through, about 2 minutes per side. Stir the herbs into the tomatoes. Put a paillard on each of 4 plates, spoon some herb-tomato salad on top (watch out for the smashed garlic-you might want to remove it), and serve.

This handy recipe has you pound chicken breasts into even flat paillards which are quick and easy to cook. Then they're cooked in a grill pan and served with a light salad of herbs and sautéed radishes.

4 8-ounce boneless skinless chicken breast halves
Extra-virgin olive oil, for brushing
Coarse salt and freshly ground pepper

Steps:

  • Place a chicken breast between 2 layers of plastic wrap, and using a meat mallet, pound to a 1/4-inch thickness. Repeat with remaining chicken. Brush both sides of chicken with olive oil, and season with salt and pepper.
  • Preheat a stovetop grill pan over high heat until very hot. Cook chicken until grill marks appear, about 3 minutes. Turn, and continue cooking until browned and cooked through, 2 to 3 minutes more. If cooking in batches, remove from heat and keep warm until serving.
  • Squeeze lemon juice over each chicken breast. Serve warm, topped with herb salad and sauteed radishes.

1 stick (1/2 cup) unsalted butter, softened
2 tablespoons drained and finely chopped oil-packed sundried tomatoes
1 teaspoon minced fresh sage
1 tablespoon finely chopped fresh parsley leaves
Pinch Cajun spice
Pinch salt
1 (2-pound) boneless pork loin
1/2 cup all-purpose flour
Salt and pepper
1/4 cup grapeseed oil
1 teaspoon minced fresh thyme
1 teaspoon minced fresh parsley
Salt and pepper
1 bunch asparagus
1 teaspoon minced fresh parsley, for garnish

Steps:

  • For the compound butter: In a bowl, combine the softened butter with the sundried tomatoes, sage, parsley, Cajun spice, and salt. Whisk together until well blended. Transfer the mixture to a piece of parchment paper and roll into a cigar shape about 1 1/2 inches thick. Refrigerate until ready to use.
  • For the pork: Slice the loin into 3/4-inch thick slices, and then one by one, cover with plastic wrap and pound with a meat mallet until each slice is flat and even (about a 1/4-inch thick).
  • Season the flour with salt and pepper, and then dredge the pork in the seasoned flour.
  • Heat the oil in a heavy bottom saucepan over medium-high heat. Season the pork with salt and pepper. Once the oil has heated, add the floured pork to the pan and allow to cook until browned, 1 to 2 minutes. Reduce the heat, flip, add some thyme and parsley, and repeat the process on the second side until finished cooking, 2 to 3 minutes. Once cooked, remove from the pan and keep warm. Repeat the process until all the pork is cooked.
  • For the asparagus: Bring a pot of water to a boil and add salt. Trim the woody bottoms of the asparagus and peel the stalks. Blanch in the boiling water until bright green, 2 to 3 minutes. Remove from the water and season with salt and pepper.
  • Place asparagus in the center of a serving plate, arrange the pieces of cooked pork on top, and top with a 1/4-inch disk of sundried tomato butter. Garnish with parsley. Store the remaining butter wrapped in plastic in the refrigerator.

3 cups thin asparagus, ends snapped off, stalks cut into 1-inch pieces
2 teaspoons chopped fresh parsley

Steps:

  • Blanch the asparagus in lightly salted, boiling water for 1 minute. Drain and rinse under cold running water. Drain again and pat dry. Toss with remaining salad ingredients and set aside.
  • Heat a large, heavy-bottomed nonstick skillet over medium-high heat until very hot. Let turkey rest, then slice into 4 pieces. Sprinkle the salt in the skillet. Add the turkey and saute until cooked through, about 1 1/2 minutes per side.
  • Remove the turkey from the pan and squeeze the juice of the lime over it. Place 1 piece of turkey on each of 4 plates, top with the salad and serve immediately.

4 boneless, skinless chicken breasts, tenders removed and trimmed of any cartilage
1 lemon, zested and juiced, 1 tablespoon juice reserved
1/4 cup plus 2 tablespoons olive oil
1 small shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh tarragon leaves
3 tablespoons chopped fresh parsley leaves
Salt, for seasoning
Pepper, for seasoning
1/2 cup white wine
1 cup chicken broth
1 tablespoon cold butter

Steps:

  • One by one, place the chicken breasts between 2 pieces of plastic wrap, or inside of a resealable plastic bag, and pound with a meat mallet or rolling pin or heavy-bottomed pan until about 1/2-inch thick. In a glass baking dish, combine the zest and all but 1 tablespoon of the lemon juice with 1/4 cup of the olive oil, the shallot, garlic, and a little more than 2 tablespoons of each of the chopped fresh herbs. (Reserve the remaining chopped herbs.) Add the pounded chicken breasts to the herb mixture and turn to coat. Season generously with salt and pepper, cover the dish with plastic wrap, and put in the refrigerator to marinate, at least 20 minutes and up to 1 hour.
  • Heat the remaining 2 tablespoons olive oil in a large saute pan over high heat. Add the chicken breasts to the pan and cook, turning once, until cooked through and golden brown on both sides, about 4 to 5 minutes per side. Cook the breasts 2 at a time if the pan is too small. Transfer to a serving platter and keep warm.
  • Add the remaining 1 tablespoon of lemon juice and the white wine to the pan, scraping to loosen any brown bits, and reduce until almost dry. Add the chicken broth and reduce by half, then off the heat add the reserved herbs and cold butter, swirling to melt the butter and thicken the sauce. Pour over the chicken paillards and serve immediately.

Paillard is just the culinary term for a thin slice of meat and it is usually cooked quickly by grilling or sautéing.

1 boneless, skinless turkey breast (about 1 ½ pounds)
Coarse salt and freshly cracked black pepper, to taste
Several sprigs fresh thyme and rosemary, chopped (about ¼ cup/60 ml)
1 Tbsp butter (15 ml)
1 Tbsp grapeseed oil (15 ml)
2 tsp Worcestershire sauce (10 ml)
½ cup dry white white (125 ml)

Steps:

  • Preheat oven to 375 degrees F.
  • Slice turkey on the bias into four ½-inch slices. Season with salt and pepper and rub with chopped herbs.
  • Over high heat, add butter and grapeseed oil to a large skillet with ovenproof handles. When butter melts and oil is hot, panfry the turkey slices until golden, about 2 minutes per side.
  • Transfer pan to oven and cook until meat is no longer pink, about 5 minutes. Remove pan from oven. Transfer cooked turkey to a plate. Keep warm.
  • Return skillet to stovetop over high heat. Add white wine and Worcestershire sauce to the pan to deglaze. Reduce the pan sauce until syrupy and just starts to thicken, about 3 to 5 minutes. Pour sauce over turkey. Serve immediately.

Recently previewed on Food 911. It looked amazing. The recipe suggested a 'handful' of the parsley, mint and dill but the computer would not accept that as a measurement. Please see note regarding the amounts at the end.

2 cups all-purpose flour, plus more
all-purpose flour, for dusting
1 teaspoon salt
1/4 teaspoon sugar
3/4 cup unsalted butter, cold and cut into small chunks
1 large egg yolk
3 tablespoons ice water, plus more if needed
3 tablespoons extra virgin olive oil
2 large vidalia onions, sliced
3/4 lb smoked ham, cubed
8 large eggs
1 quart heavy cream
kosher salt
fresh ground black pepper
2 lbs asparagus, stems trimmed (2 bunches)
4 ounces parmesan cheese, shaved with a peeler
2/3 cup fresh flat-leaf parsley
1/3 cup of fresh mint
1/3 cup fresh dill
extra virgin olive oil
1/2 lemon, juice of
kosher salt
fresh ground black pepper

Steps:

  • To make the pastry:.
  • Combine the flour, salt, and sugar in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs.
  • Beat the egg yolk and ice water in a small bowl to blend, add it to the pastry. Work it in to bind the dough until it holds together without being too wet or sticky.
  • Squeeze a small amount together, if it is crumbly, add more ice water, 1 tablespoon at a time.
  • Form the dough into a disk and wrap in plastic wrap; refrigerate for at least 30 minutes.
  • Sprinkle the counter and a rolling pin lightly with flour.
  • Roll the dough out into a 14-inch circle about 1/4-inch thick.
  • Carefully roll the dough up onto the pin (this may take a little practice) and lay it inside a 9-inch springform pan.
  • Press the dough firmly into the bottom and sides so it fits tightly; trim the excess dough around the rim.
  • Place the pan on a sturdy cookie sheet so it will be easier to move in and out of the oven, this quiche is pretty heavy.
  • Preheat the oven to 375 degrees F.
  • To make the filling:.
  • Heat a skillet over medium-low heat, coat the pan with oil, and add the onions.
  • Slowly cook the onions, stirring, until they caramelize and release their natural sugars.
  • Add a couple of tablespoons of water to help the onions break down, if needed.
  • Toss in the ham, cook, stirring, for about 10 minutes to get some color on it.
  • Remove from heat.
  • In a large bowl, beat the eggs until frothy, pour in the cream; season with salt and pepper.
  • Arrange the caramelized onions and ham over the bottom of the crust and carefully pour in the cream and egg mixture; the filling should be about 1-inch from the top of the pan.
  • Cover loosely with foil and bake for 1 hour and 30 minutes.
  • Remove the foil and continue to bake for 15 minutes or until the quiche is set, puffy, and jiggles slightly.
  • Remove to a wire rack and let cool for 30 minutes.
  • In the meantime make the asparagus salad.
  • To make the asparagus salad:.
  • In a large pot of boiling salted water, blanch the asparagus for 4 minutes, or until they are just crisp-tender.
  • Drain the asparagus, transfer to a bowl of ice water to stop the cooking, and drain well.
  • Slice the asparagus into 1/2-inch pieces and put them in a mixing bowl.
  • Add the Parmesan and herbs, drizzle the herb and asparagus salad with olive oil, a squeeze of lemon juice, season with salt and pepper.
  • Toss gently to combine.
  • Loosen the quiche from the sides of the pan by running a thin metal spatula around the inside rim.
  • Carefully unmold the ring, and transfer the quiche (with the bottom base) to a serving plate.
  • Cut it into wedges, drizzle with a little olive oil, and a few turns of freshly ground black pepper.
  • Garnish with the asparagus salad on top.
  • NOTE: As hand sizes vary, I have indicated the approximate amount of each per 'my handful' -- adjust accordingly.

1 teaspoon fresh lemon juice
1 (3 inch) cinnamon sticks

  • Some sliced chicken breasts may not be of an even thickness. If necessary, put each paillard between 2 sheets of plastic wrap and pound with flat side of a meat pounder until about 1/4 inch thick.
  • Special equipment:
  • A well-seasoned large (2-burner) ridged grill.
  • Prepare grill pan and start sauce:.
  • Heat grill pan over moderate heat until hot.
  • Meanwhile, simmer all sauce ingredients except butter in a 1-quart saucepan, uncovered, stirring occasionally, 2 minutes. Set aside while cooking chicken.
  • Make paillards:.

  • Transfer to a platter and cover with foil. Grill remaining paillards in same manner, transferring to platter.

  • Pour sauce through a medium-mesh sieve into reserved small skillet, discarding solids. Add any juices from chicken accumulated on platter to sauce and bring to a boil.

Salt and pepper
1 teaspoon fennel pollen
1 teaspoon granulated garlic
1 teaspoon granulated onion
2 teaspoons lemon or orange zest
6 to 8 tablespoons EVOO
8 spears asparagus, trimmed
6 to 7 cups arugula, stemmed if leaves are large, or a combination of arugula, escarole and romaine
1 small bulb fennel, trimmed, halved, cored and thinly sliced or shredded on mandoline or box grater, reserve a handful of fronds
1/2 red onion, peeled and thinly sliced or shredded on mandoline or box grater
A chunk of Parmigiano-Reggiano cheese
2 stalks celery with leaves, sliced
Juice of 1 lemon

Steps:

  • Place chicken breasts on a gel board and halve horizontally but not all the way through, then open like a book and evenly pound to 1/8 inch thick. Season the chicken with salt and pepper. Combine fennel pollen, granulated garlic, granulated onion and zest and use to season both sides of chicken.
  • Pour 3 turns of the pan of EVOO into a large skillet.
  • Fill a medium-sized mixing bowl with ice water. Use a vegetable peeler to thinly slice the asparagus lengthwise; place in ice water.
  • Place the arugula in bowl. Drain asparagus. Top the greens with asparagus, fennel and red onion. Use a vegetable peeler to shave and curl the Parmigiano-Reggiano cheese and add to bowl. Add the celery stalks and leaves.
  • Heat the EVOO in skillet over medium-high heat and have a transfer tray or platter on hand. Add 2 paillards at a time. Cook over medium-high heat for 6 to 7 minutes per batch, turning occasionally.
  • Dress the salad with lemon juice and 2 to 3 tablespoons EVOO and season with salt. Serve the paillards on platters topped with a pile of the citrusy, peppery salad. Garnish with fennel fronds.
