Categories     main-dish

Time 51m

Yield 4 servings

Number Of Ingredients 19

2 pounds thick fish fillets or steaks, halibut, cod or salmon
4 teaspoons fresh lemon juice
2 tablespoons vegetable oil
2 cups finely chopped onion
1/4 cup vegetable oil
2 teaspoons minced garlic
2 teaspoons minced ginger
1 teaspoon minced green chile, serrano, Thai or jalapeno
1 cup chopped fresh tomatoes
Spice mixture:
6 teaspoons ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground red pepper, cayenne
1/4 teaspoon ground black pepper
1/4 teaspoon ground turmeric
1/2 teaspoon fennel seeds, coarsely ground with mortar and pestle
1 1/4 teaspoon salt
1/2 cup canned unsweetened coconut milk
1/4 cup chopped cilantro, for garnish

Steps:

  • Cut fillets crosswise into strips 2-inches wide. Rub fish with mixture of lemon juice and oil, cover and refrigerate for 1 hour.
  • Preheat oven to 350 degrees.
  • In medium frying pan, over medium high heat, fry onion in oil until edges are nicely browned. Add garlic, ginger, and green chile, and stir over medium heat for 2 minutes. Add tomatoes, spice mixture, fennel seeds, and salt, and fry, stirring constantly until tomato pieces break down to form a lumpy paste. Add coconut milk and simmer about 5 minutes until a thick, rich sauce is formed.
  • Arrange fish in an oiled baking/serving dish large enough to hold fish in a single layer. Bake, uncovered, for 10 minutes in the preheated oven. Pour sauce over fish, cover tightly with aluminum foil, and return to oven for 15 to 20 minutes until fish is opaque.
  • Garnish with chopped cilantro.

ISLAND COCONUT CURRY SAUCE

Island Coconut Curry Sauce image

Brush this slightly sweet sauce on shrimp or chicken before and during grilling. The recipe makes enough for 1 1/2 pounds of chicken or shrimp, with some left over to pass at the table. DO NOT substitute coconut milk for the cream of coconut. Coco Lopez is usually found with drink mixers in the grocery, I have found other brand for much less at my local Asian markets. You can also use as a marinade.

Provided by momaphet

Categories     Low Protein

Time 5m

Yield 1 1/2 cups

Number Of Ingredients 7

2/3 cup cream of coconut (such as Coco Lopez)
1/2 cup fresh lime juice
6 tablespoons green onions, minced
2 teaspoons curry powder
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Whisk cream of coconut and fresh lime juice in small bowl until smooth. Stir in green onions, curry powder, cayenne pepper and salt. (Can be made 1 day ahead. Cover and refrigerate.)
  • Brush half of sauce over chicken or seafood before and during grilling. Pass remaining sauce separately.

ISLAND FISH

Island Fish image

You can't always be vacationing in an island paradise. But you can pretend you're in the tropics by making this fruity, coconutty island-inspired fish.

Provided by My Food and Family

Categories     Recipes

Time 35m

Yield Makes 6 servings.

Number Of Ingredients 7

1/2 cup KRAFT Zesty Italian Dressing
1 whole jalapeño pepper, seeded, finely chopped
2 tsp. freshly grated fresh ginger
8 large banana leaves
6 mahi-mahi fillets (4 oz. each)
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted
3 limes, thinly sliced

Steps:

  • Preheat oven to 400°F. Mix dressing, jalapeno and ginger; set aside. Hold banana leaf with tongs and pass quickly across a stove burner on medium heat several times until banana leaf is pliable. (Do not overheat or leaf will become brittle.) Repeat with the remaining leaves. Line 13x9-inch baking pan with the softened leaves, with ends of leaves extending over sides of pan.
  • Place fish in prepared baking pan; drizzle with the dressing mixture. Top with the coconut and limes. Fold banana leaves over fish. Top with an empty glass baking dish to hold leaves in place.
  • Bake 20 min. or until fish is cooked through. Serve in baking pan.

FISH IN CREAMY COCONUT SAUCE

Fish in Creamy Coconut Sauce image

This is an AUTHENTIC Malay/Indonesian recipe and tastes absolutely beautiful with rice. Trust me! :) I got this recipe from hawkers in Malaysia--so it's a tad spicy. Chicken breasts may be used in place of fish. Note: This serves 4 with rice and a side of stir-fried vegetables.
