BUNS:
1 pkg (1/4 oz active dry yeast (2-1/2 teaspoons))
1 cup warm milk (110F)
1/4 cup agave nectar
1/3 cup vegetable oil
3 large eggs (lightly beaten)
1 teaspoon salt
4 to 4-1/2 cups white whole wheat flour
CARAMEL PECAN TOPPING:
1/3 cup butter
3/4 cup coconut sugar (or brown sugar)
1/4 cup agave nectar
1/4 teaspoon baking soda
3/4 cup chopped pecans (toasted)
FILLING:
2 tablespoons butter (softened)
1/3 cup coconut sugar (or brown sugar
1 tablespoon ground cinnamon

Steps:

  • Make the buns: In the bowl of a large stand mixer, fitted with a dough hook, dissolve yeast in warm milk. Let stand 5 minutes until foamy. Mix in agave, oil, eggs, salt, and 4 cups flour on medium speed until dough pulls away from sides of bowl into a ball. (if dough seems too sticky, add additional flour by the tablespoon until it comes together)
  • Turn dough onto a floured surface and knead until smooth and elastic. Place in a greased bowl, turning once to grease top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.
  • Make the topping: In a medium saucepan over medium heat, melt butter. Whisk in sugar, and agave. Bring caramel to a simmer, stirring occasionally until caramel begins to thicken and turns golden brown, about 5 minutes. Remove from heat and stir in baking soda and toasted pecans. Immediately spread into the bottom of a 9x13 baking pan. Set aside.
  • Assemble the buns: Punch risen dough down. On a floured surface, roll into a 12x18 rectangle. Spread butter to within 1/2-in of edges and sprinkle sugar and cinnamon over butter, patting flat. Roll up tightly along the long side and pinch edges to seal. Cut into 1/2 to 1-in rolls and place swirl-side up over pecan-caramel sauce in pan. Cover pan with plastic wrap and refrigerate overnight. NOTE: if baking immediately, let buns rise 30 minutes at room temperature then bake as directed.
  • The next morning, remove sticky buns from refrigerator and remove plastic wrap. Bake at 375F 20-25 minutes or until golden-brown and caramel is bubbly. Remove from oven and let stand 5 minutes, then invert onto a serving tray. (if any pecans and caramel stick to pan, scrape off with a spatula and drizzle over buns) Enjoy sticky buns warm!

3/4 cup (180 ml) buttermilk, room temperature
1/4 cup (50 grams) granulated sugar
2 1/4 teaspoons (7 grams) instant or rapid-rise yeast
2 teaspoons (10 grams) salt, divided
4 1/2 cups (563 grams) all-purpose flour
16 tablespoons (226 grams) unsalted butter, divided
1 3/4 cups (350 grams) light brown sugar, divided
6 tablespoons (90 ml) light corn syrup, divided
2 tablespoons (30 ml) heavy cream
2 teaspoons (5 grams) ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon (5 ml) pure vanilla extract
1 cup (240 grams) pecans, toasted and chopped

Steps:

  • DOUGH: In a bowl attached to an electric stand mixer, mix eggs and buttermilk to combine. Whisk in granulated sugar, yeast and 1 1/4 teaspoons of salt. Mix in 2 cups (250 grams) of flour and 6 tablespoons (85 grams) of melted butter until just combined.
  • Attach dough hook to the stand mixer and mix in 2 cups (250 grams) of flour. Knead for 5 minutes. The dough should feel soft and moist but not sticky. If needed, add more flour, 1 tablespoon (8 grams) at a time. Continue to knead for 5 minutes. Dough should clear the sides of the bowl and not stick to the bottom.
  • Lightly flour a clean and dry surface. Knead dough by hand for 1 minute. Dough should not stick the counter. If dough is sticky, knead in 1 tablespoon (8 grams) of flour.
  • FIRST PROOF: Lightly grease a large bowl with vegetable oil. Transfer dough to the bowl and invert dough so that the bottom of the dough which touched the greased bowl is now facing up. Loosely cover the bowl and keep in a warm and draft free area until doubled in size, about 2 to 2 1/2 hours.
  • GLAZE: In a small saucepan over medium heat, whisk 6 tablespoons (85 grams) butter, 3/4 cup (150 grams) brown sugar, 3 tablespoons (45 ml) corn syrup, 2 tablespoons (30 ml) heavy cream and a pinch of salt until butter is melted and mixture is thoroughly combined.
  • Pour glaze into a 13×9 inch baking pan. Spread glaze to ensure every area is covered.
  • FILLING: In a small bowl, whisk 3/4 cup (150 grams) brown sugar, cinnamon, cloves and a pinch of salt together. Make sure to break up any lumps of sugar.
  • Once dough has doubled in size, lightly flour a clean and dry surface and gently roll out dough into a 16×12 inch rectangle.
  • Brush dough with 1 tablespoon (14 grams) melted butter leaving 1/2 inch border along the top edge. With the remaining melted butter, brush the sides of the 13×9 inch baking pan; set aside.
  • Evenly sprinkle cinnamon-filling mixture over the dough leaving 3/4 inch border along the top edge. Gently press filling mixture into the dough to adhere.
  • ROLLING THE DOUGH: Starting on the long side opposite of the border free from butter and cinnamon, roll dough, pressing lightly to form a tight cylinder. Firmly pinch seam to seal.
  • Using a serrated knife, in a gentle sawing motion, slice the roll in half. Cut each half again in half to create 4 equal quarters. Slice each quarter into thirds to create 12 buns. Note: the end pieces may be smaller than the rest.
  • Arrange buns cut side down onto the glaze in the baking pan. Cover and refrigerate for 8 to 12 hours.
  • SECOND PROOF: In a roasting pan or kitchen sink, fill with warm water. Place baking pan in the warm water bath for 20 minutes. Remove from water bath and allow buns to rest and rise at room temperature for 1 to 1 1/2 hours until buns have puffed and are pressed together.
  • About 20 minutes before baking, place a baking stone on an oven rack adjusted to the lowest position for a more even browning of the buns. Heat oven to 350°F (180°C).
  • Place baking pan above baking stone. Bake for 25 to 30 minutes rotating pan halfway through baking.
  • Allow baking pan with buns inside to cool on a wire rack for 10 minutes before inverting pan onto a large platter or cutting board. Scrape any excess glaze from the pan onto the buns and allow to cool while preparing the topping.
  • TOPPING: In a small saucepan over medium heat, mix 1/4 cup (50 grams) brown sugar, 3 tablespoons (42 grams) butter, 3 tablespoons (45 ml) corn syrup and a pinch. Bring to a simmer whisking occasionally to combine. Remove from heat and mix in vanilla and pecans until pecans are evenly coated. Spoon heapful of pecan glaze over each bun. Pull the buns apart or cut with a serrated knife and ENJOY while warm!

Pecan caramel sticky buns are allowed to rise overnight in the fridge so that they are ready to bake off for an indulgent and delicious breakfast the next morning.

Yield 12-14 sticky buns

Number Of Ingredients 14

½ cup unsalted butter, plus more for the bowl and pan
1 cup milk
5 tbsp sugar
1 tbsp active dry yeast
1½ tsp kosher salt
1 large egg + 1 large egg yolk
3 to 3½ cups all purpose flour
¾ cup unsalted butter
¾ cup packed brown sugar
¼ cup light corn syrup
¾ cup chopped pecans
4 tbsp unsalted butter
1 cup sugar
1 tbsp cinnamon

Steps:

  • Melt the butter in a small saucepan over medium-low heat. Stir in the milk and sugar. Heat until lukewarm, about 110F, stirring so that sugar dissolves. Transfer the warm milk mixture to a bowl. Stir in the yeast. Allow to sit for 10 minutes to activate the yeast, then stir in the salt.
  • Beat the whole egg and egg yolk together until combined, then stir into the yeast mixture. Stir in the flour 1 cup at a time until the dough comes together and is still a bit sticky. Scrape onto a floured work surface and knead for 5 minutes, or until smooth. Grease a large bowl and transfer the dough into it. Cover loosely with plastic wrap and allow to rise in a warm place for 2 hours, or until tripled in size.
  • Melt the butter with the brown sugar and corn syrup in a small saucepan over medium-low heat, stirring to combine. Grease a 9x13-inch baking pan with melted butter. Pour the sugar mixture into the greased pan, spreading it over the pan in an even layer. Sprinkle with the chopped pecans.
  • Punch down the dough and turn it onto a lightly floured work surface. Knead for a minute, then roll into a 15x12-inch rectangle.
  • Melt the 4 tbsp of butter for the cinnamon-sugar filling and then brush it over the dough. In a small bowl, whisk together the cinnamon and sugar. Sprinkle over the buttered dough. Roll the rectangle up, jelly roll-style, along a long edge.
  • Slice the rolled dough into 1-inch thick slices. Arrange them cut side up, over the pecans in the prepared pan. Cover with plastic wrap and refrigerate overnight.
  • The following morning, remove the pan from the fridge and allow it to warm for 1 hour. Meanwhile, heat oven to 350F. Put the pan with the sticky buns in the oven and bake until golden brown, about 35-40 minutes.
  • Remove from the oven and cool for 5-10 minutes. Invert the pan onto a large serving plate or baking pan. Serve warm.

This recipe has four components: the dough that is shaped into buns, the filling that creates the swirl in the shaped buns, the caramel glaze that bakes in the bottom of the baking dish along with the buns, and the pecan topping that garnishes the buns once baked. Although the ingredient list may look long, note that many ingredients are repeated. Leftover sticky buns can be wrapped in foil or plastic wrap and refrigerated for up to 3 days, but they should be warmed through before serving. They reheat quickly in a microwave oven (for 2 buns, about 2 minutes at 50 percent power works well); they can also be put into a 325-degree oven for about 8 minutes.

1 cup very warm milk (120°F to 130°F)
1/3 cup butter or margarine, softened
1 egg
1 cup packed brown sugar
1/2 cup butter or margarine
1/4 cup dark corn syrup
3/4 cup pecan halves
1/2 cup chopped pecans
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter or margarine, softened

Steps:

  • In large bowl, mix 2 cups of the flour, the granulated sugar, salt and yeast. Add milk, 1/3 cup butter and the egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1 cup at a time, to make dough easy to handle.
  • On lightly floured surface, gently roll dough in flour to coat. Knead about 5 minutes or until smooth and elastic. Place in greased large bowl, turning dough to grease all sides. Cover and let rise in warm place about 1 hour 30 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Grease 13x9-inch pan. In 1-quart saucepan, heat 1 cup brown sugar and 1/2 cup butter to boiling, stirring constantly; remove from heat. Stir in corn syrup; cool 5 minutes. Pour into pan. Sprinkle with pecan halves.
  • In small bowl, mix all filling ingredients except 2 tablespoons butter until crumbly. Punch down dough. On floured surface, pat or roll into 15x10-inch rectangle. Spread with 2 tablespoons butter; sprinkle with filling. Roll up tightly, beginning at 15-inch side. Pinch edge of dough into roll to seal; stretch and shape to make even. Cut into fifteen 1-inch slices. Place slightly apart in pan.
  • Cover unbaked rolls tightly; immediately refrigerate at least 12 hours (to allow for rising) but no longer than 48 hours.
  • Heat oven to 350°F. Uncover and bake 30 to 35 minutes or until golden brown. Immediately place heatproof serving plate upside down onto pan; turn plate and pan over. Let pan remain about 1 minute so caramel can drizzle over rolls.

1/4 cup sugar

4 cups all-purpose flour
1/2 cup dark brown sugar
1/4 cup dried currant
1 tablespoon ground cinnamon
4 tablespoons butter or 4 tablespoons margarine, melted
2/3 cup dark brown sugar
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons light corn syrup
2 tablespoons honey
1 1/4 cups pecans, coarsly chopped

Steps:

  • Prepare Dough: In cup, combine warm water, yeast, and 1 teaspoon granulated sugar; stir to dissolve. Let stand 5 minutes, or until foamy.

1 cup packed brown sugar
½ cup butter
2 tablespoons light corn syrup
1 cup pecan halves
¼ cup butter, softened
½ cup white sugar
1 ½ tablespoons ground cinnamon

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine yeast mixture, milk, sugar, oil, baking powder, salt, egg and 3 cups flour. Beat until smooth. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Heat brown sugar and 1/2 cup butter until melted. Remove from heat; stir in corn syrup. Divide mixture between two 9x13 inch baking pans. Sprinkle 1/2 cup pecans in each pan.
  • When dough has doubled in size, punch down and turn out onto a lightly floured surface. Roll out into a large rectangle and spread with butter. Sprinkle with sugar and cinnamon. Starting with the long side, roll up the rectangle into a log, and slice into 1 inch wide rolls. Place the rolls slightly apart in pans. Wrap pans with aluminum foil and refrigerate at least 12 hours but no longer than 48.
  • Remove rolls from refrigerator and let stand in a warm place until doubled in size, about 30 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake uncovered in preheated oven until golden 30 to 35 minutes. Immediately invert pan on heatproof serving plate. Wait for 1 or 2 minutes before removing pan, so that caramel drizzles over rolls.

Enjoy a lazy Sunday morning with this indulgent brunch recipe

450g strong white flour
50g caster sugar
85g butter , cut into small pieces
7g sachet dried yeast
2 eggs , beaten
150ml full-fat milk
vegetable oil , for greasing
2 tsp ground cinnamon
85g light brown sugar
100g pecan
125g melted butter , plus extra
125ml maple syrup
50g light brown sugar
100g pecan , roughly chopped

Steps:

  • Place the flour, sugar and 1 tsp salt in a mixing bowl, then rub in the pieces of butter until the mix has the texture of breadcrumbs. Tip in the yeast and eggs. Pour in the milk and mix well until you get a soft dough (you may need to add a little more milk). Knead in a mixer with a dough hook for 7 mins or by hand for about 15 mins until the dough is smooth, soft and springy. Tip into a lightly oiled bowl, cover with oiled cling film or a clean tea towel, then leave to rise in a warm place for about 1 hr or until doubled in size.
  • Make the filling: place the cinnamon, sugar and pecans in a food processor, then whizz until the nuts are finely ground. Punch down the dough and knead to knock out the air, then split the dough in two. Roll and stretch each piece to form a 25 x 35cm rectangle.
  • Melt the butter for the topping. Brush half all over each rectangle, then sprinkle half the filling mixture over each. Use a rolling pin to press the filling into the dough. Tightly roll each rectangle up from one of the long ends to get a thick log, then pinch the ends together to seal. Cut each log into 8 pieces. Can be frozen for up to 1 month.
  • Brush two 20 x 30cm deep baking trays with melted butter. Mix the maple syrup and sugar into the remaining butter, then pour this over the bottom of each baking tray, swirling around so it is coated. Sprinkle with the pecans. Place the rolls on the tray, leaving a gap of at least 2cm around each roll. Cover with lightly oiled cling film, then keep in a warm place for about 30 mins until lightly risen.
  • Heat oven to 180C/fan 160C/gas 4. Remove the cling film from the tray, then bake for 30 mins until the buns are lightly browned and feel firm. Serve warm, sticky-side-up.

1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
3/4 cup warm 2% milk (110° to 115°)
1/4 cup sugar
3 tablespoons canola oil
2 teaspoons salt
3-3/4 to 4-1/4 cups all-purpose flour
FILLING:
1/4 cup butter, softened
1/4 cup sugar
3 teaspoons ground cinnamon
3/4 cup packed brown sugar
1/2 cup heavy whipping cream
1 cup coarsely chopped pecans

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, oil, salt and 1-1/4 cups flour. Beat on medium speed for 2-3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface. Roll into an 18x12-in. rectangle. Spread butter to within 1/2 in. of edges. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices., Combine brown sugar and cream; pour into a greased 13x9-in. baking pan. Sprinkle with pecans. Place rolls cut side down over pecans. Cover and let rise until doubled, about 1 hour., Bake at 350° for 30-35 minutes or until well browned. Cool for 1 minute before inverting onto a serving platter.
