15 BEAN SOUP (EASY RECIPE)
Steps:
- Rinse the beans. Place them in a large pot and cover with water over medium-high heat. Bring the beans to a boil, stirring occasionally.
- Remove the pot from the heat and cover with a lid. Let the beans sit for an hour, then drain and set aside.
- Pour the olive oil into the pot over medium heat. Saute the ham hocks, onion, and celery until tender. Add the garlic and saute for 2 more minutes.
- Add the beans. Pour water until it's 2 inches above the beans.
- Stir in the tomatoes (juice included), parsley, rosemary, salt, pepper, and bouillon cubes.
- Bring the mixture to a boil, stirring occasionally. Reduce the heat to medium-low and cover the pot. Let it simmer, stirring occasionally, for 2 to 2 ½ hours or until the beans are tender. Add more water if the mixture is getting too thick.
- At the last 15 minutes of cooking, mix in the flavor packet that comes with the beans.
- Taste the soup and season with more salt and pepper if needed.
- Serve on its own or on top of rice. Enjoy!

OVERNIGHT VEGETABLE SOUP
- Don't use beans: Brown rice, chickpeas, aduki or mung beans might be OK, as they don't get everything cloudy. In this case use 2 cups raw and skip the chestnuts listed in the recipe. (Passover: No beans no legumes) - Optional but really delicious: Any stems (repeat: Just the stems, not the leaves) from a bunch of kale or Swiss chard whose leaves you used for another dish, thinly sliced. - Low maintenance. Soup I could just throw in a pot and forget all about. No sauteing or frying or anything. After dicing everything, I considered my labor done, and so will you! - Use only vegetables that will stand to the long cooking time: In other words, no zucchini, peas, string beans, cabbage etc. - Use ingredients that would yield a clear broth, not release starch that would cloud the soup. - Don't use any tomato product, except maybe 2-3 tablespoons tomato paste to deepen the color (I didn't use any). Like chocolate, tomatoes tend to dominate a dish and blow all other ingredients out of the water, excuse the pun. That said, the recipe still remains pretty elastic, in that you can adjust the amounts of each vegetable you are using to suit your personal taste. If you want to make this a meat soup, go ahead and throw in 2-3 pounds beef chunks. Still I would say, don't skimp on the mushrooms, or the squash, these two are too delightful to reduce. 10 BEAN SOUP
Yes, another soup recipe! We really love a hot bowl of soup on a cold winter day for lunch. The challenge is keeping it low fat and healthy. This bean soup is fantastic! It makes alot and it freezes well. You can really use any favorite bean mixture (dry) or use your own! I buy the 10 Bean mix in bulk at a local grocery store. It also has some pearl barley thrown in there too!

- Soak beans in water overnight. Drain the beans the next morning or afternoon.
- In large soup pot saute onion, carrot, and celery in oil for about five minutes. Add garlic, salt, and pepper and saute another five minutes.
- Add chicken broth, vegetable broth, diced tomatoes, water, and beans to vegetable mixture.
- Bring to a boil. Reduce heat to a low boil and cover. Cook for about 2 hours. Stir occasionally.
- Add green beans and corn and contine to cook covered for about 1 more hour or until beans are tender.
- Prep time is soaking beans overnight and chopping vegetables.

BEAN SOUP REAL NAVY BEAN SOUP
I have been making this soup for at least 25 years. I never change anything! Just follow the recipe and you cannot go wrong. This is a excellent soup for all seasons.

Steps:
- Put beans in a larger bowl covered with water and soak overnight. Make sure there is at least 3 inches of water covering the beans.
- After soaking overnight drain the beans and put into crock pot. Chop the onion, garlic and ham,add to crock. Put the smoked ham hocks in along with the Fresh Ground Pepper and bay leafs. Add the water making sure there is at least 1 to 1 1/2 inches of water covering the beans, ham hocks etc.
- Cook on low for 7-8 hours. Remove the ham hocks and any fat that has cooked off the hocks! Put the ham off the hocks back in the pot, if you have a warm setting use that setting while you are separating the fat from the ham on the hocks.Serve hot.

WORLD'S BEST BEAN SOUP
This is from Oneota Community Food Coop in Decorah Iowa. I picked it up with a bad of bulk mixed beans. I posted a photo of the bean mixture so you could see all the different beans and grains in it.

- Wash the beans and place in a Dutch oven.
- Cover with water and soak overnight.
- Drain the beans and add the water, ham hock, salt and pepper.
- Cover and bring to a boil.
- Reduce heat and simmer 1 1/2 hours until beans are tender.
- Add the remaining ingredients.
- Simmer 30 minutes more, stirring occasionally.
- Remove ham hock from the soup.
- Remove from bone, chop and return meat to the soup.
- Serve with your favorite homemade bread.
NAVY BEAN SOUP
By Winslow. Make sure your beans are fresh and haven't been sitting in the cupboard for months. As they get older, they tend to not cook very well and it is difficult to make them get tender or done. Serve with cornbread and hot sauce if you like. Sometimes I add a little minced onion on the top for garnish.

Steps:
- Sort beans and place in a large pot, cover with cold water, and soak overnight. Or bring to a boil for 3 minutes, then cover, remove from heat and beans sit undisturbed for one hour.
- Drain bean water.
- Add remaining ingredients except celery and carrots to beans (including 7 cups water).
- Bring beans to a boil, then lower heat, cover, and simmer for about 90 minutes, stirring and skimming occasionally.
- Adjust cooking time if needed until beans are soft and tender.
- Add carrots and celery and cook for about half an hour.
- Fish out the ham hock, and when cool enough to handle, remove its meat and add the meat back to the pot.
