1 package (4 ounces) wild rice
1-1/2 pounds fresh asparagus, trimmed and cut into 1-inch pieces
2 cups cubed fully cooked ham
5 tablespoons butter, divided
12 large eggs
1/2 cup whole milk
1 teaspoon salt
1/4 teaspoon pepper
CHEESE SAUCE:
2 tablespoons canola oil
3 tablespoons all-purpose flour
1 cup whole milk
2 cups shredded Colby or Gouda cheese
1/2 teaspoon ground ginger
Dash white pepper

Steps:

  • Cook rice according to package directions. Spread in greased 13x9-in. baking dish; set aside. , Meanwhile, preheat oven to 325°. Place asparagus and 1/2 in. of water in a large saucepan; bring to a boil. Reduce heat; cover and simmer 3-5 minutes or until crisp-tender. Drain and set aside., In a large skillet, saute ham in 2 tablespoons butter until lightly browned. Spoon over wild rice. , In a large bowl, whisk eggs, milk, salt and pepper. In the same skillet, heat remaining butter until hot. Add egg mixture; cook and stir over medium heat until eggs are completely set. Spoon over ham; top with asparagus., For sauce, heat oil in a saucepan. Stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add the cheese, ginger and pepper. Cook and stir 2 minutes longer or until cheese is melted. , Pour over casserole. Cover and bake 30 minutes. Uncover; bake 10-15 minutes longer or until a thermometer reads 160°.

1cup1 cup raw wild rice
3cups3 cups water
Salt, to taste

Steps:

  • Preheat oven to 350°F. Wash the rice thoroughly. Pick through it and remove any foreign objects and discolored grains. Put the rice in a casserole dish and add the 3 cups of water. Cover the casserole dish and place on the center rack in the oven. Bake for one hour. Check the rice and add water if the rice is nearly dry but still uncooked. Fluff with a fork. Replace the cover and bake for another 1/2 hour. Check the rice. It should be tender but not mushy. The grains should be splitting open but not so soft that they are beginning to disintegrate. Remove the dish from the oven. Drain if necessary and fluff the wild rice with a fork before serving. Wild rice is not uniform from one bag to the next. Water amounts and cooking time will vary, so watch your wild rice carefully as it bakes.

2 (14.5 ounce) cans chicken broth
1 cup uncooked wild rice
½ cup water chestnuts, sliced
¼ cup butter
1 teaspoon salt
½ pound fresh mushrooms, sliced
½ cup onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring chicken broth to a boil in a medium saucepan.
  • In a 1 1/2 quart baking dish, mix chicken broth, uncooked wild rice, water chestnuts, 2 tablespoons butter and salt.
  • Cover, and bake in the preheated oven 30 minutes.
  • While rice mixture is baking, melt remaining butter in a medium skillet over medium heat. Place mushrooms and onion in skillet, and slowly cook and stir until tender. Stir mushrooms and onion into the wild rice mixture, cover, and continue baking 30 minutes, or until liquid has been absorbed.

Amid the duck and turkey, the oysters and persimmon pudding was "that most domestic of all cereals," wild rice, in a hearty soup. Easy enough for a weeknight, this simple recipe doesn't have to be relegated to the annual feast. Pair it with roast chicken or broiled fish, or top it with cooked Italian sausage and mushrooms to make it a meal of its own.

1/2 cup plus 2 tablespoons wild rice
1 tablespoon butter
6 tablespoons finely chopped onion
Salt to taste, if desired
Freshly ground pepper, to taste
2 cups water or chicken broth

Steps:

  • Rinse and drain the rice.
  • Heat the butter in a saucepan and add the onion. Cook until the onion is wilted. Add the rice and stir. Add salt and pepper to taste. Add the water or chicken broth and bring to the boil.
  • Cover closely and let simmer 30 to 45 minutes or until the rice ''blooms'' and is tender. Cooking time will vary due to grain size and moisture content.

2 cups wild rice
6 cups water

Steps:

  • You want to fix this the night before you need it.
  • Preheat oven to 450 degrees.
  • Using a heavy kettle (with a lid), bring the water to a boil.
  • When the water comes to a rolling boil, turn the heat off and add the rice.
  • Stir so the wild rice is evenly distributed.
  • Put the lid on the kettle and put into the oven.
  • TURN OFF OVEN.
  • Do not open the oven until morning.
  • If there is any liquid left in pan, drain off.
  • Then add to your salads, soups or casseroles.
