1 tablespoon vegetable oil
3 cloves garlic, minced
1 medium onion, finely chopped
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 1/2 cups ketchup
1/4 cup apple cider vinegar
2 tablespoons unsalted butter
1 tablespoon Worcestershire sauce
3 1/2 pounds chicken legs and thighs
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.
  • Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Turn the chicken skin-side up and bake until golden and browned in spots, about 15 minutes more. Toss to coat with the sauce on the baking sheet and serve.

3 c. your favorite BBQ sauce
1/2 c. peach preserves
1 clove garlic
Hot sauce, optional
12 whole chicken thighs, bone-in, skin-on
Olive oil for brushing

Steps:

  • Combine BBQ sauce, peach preserves, garlic, and hot sauce in a medium saucepan and heat over medium heat for 5-10 minutes, or until nice and hot. Set aside.Preheat oven to 400 degrees.Drizzle olive oil on 2 rimmed baking sheets and place chicken thighs skin side down in the pans. Roast for 25 minutes. Remove from oven briefly, brush sauce all over the thighs, then use a spatula to flip them over to the other side, being careful not to tear the skin. Brush the tops with more sauce and return to the oven for 7 minutes. Remove from oven, brush on more sauce, and return to the oven for another 7 minutes. Remove from oven, brush on sauce, and turn up the temperature to 425 degrees. Continue roasting for another 5 to 7 minutes, or until the sauce is starting to brown around the edges and the thighs are totally cooked through. Remove from the oven and let sit for at least 10 minutes before serving. Delicious!

3 cups your favorite barbecue sauce
1/2 cup peach preserves
1 clove garlic, grated
Hot sauce, to taste
Olive oil, for drizzling
14 bone-in, skin-on chicken thighs

Steps:

  • Combine the barbecue sauce, peach preserves, garlic and hot sauce to taste in a medium saucepan and heat over medium heat until nice and hot, 8 to 10 minutes. Set aside.
  • Preheat the oven to 400 degrees F.
  • Drizzle some olive oil on 2 rimmed baking sheets and place the chicken thighs skin-side down. Roast for 25 minutes. Remove from the oven, brush some sauce all over the thighs, then use a spatula to flip them over, being careful not to tear the skin. Brush the tops with more sauce and return to the oven for 7 minutes more. Remove from the oven, brush on more sauce, and return to the oven for another 7 minutes. Remove from the oven, brush on more sauce, and increase the oven temperature to 425 degrees F.
  • Continue roasting the chicken thighs until the sauce is starting to brown around the edges and the thighs are totally cooked through, 5 to 7 minutes more. Remove from the oven and let sit for at least 10 minutes before serving. Delicious!

1 small onion, sliced
1 (12 ounce) bottle chili sauce
1 (8 ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon dried oregano

Steps:

  • Spray skillet with cooking spray and brown chicken.
  • Transfer chicken to a greased 11x7 baking dish and top with onion.
  • Combine chili sauce, tomato sauce, Worcestershire sauce and oregano; pour over chicken.
  • Sprinkle with pepper.
  • Bake, uncovered, at 350 degrees Fahrenheit for 45 minutes or until meat juices run clear.

EASY OVEN BARBEQUED (BARBECUED) CHICKEN

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer. If the chicken is still half-frozen even after some defrosting in the microwave, this recipe still works fine.

1 chicken, cut up (skin on)
12 ounces barbecue sauce (1 bottle)
1 tablespoon seasoning salt
1/2 cup butter
1/2 cup water

Steps:

  • Pre-heat your oven to 350-degrees F.
  • Dump the cut up chicken parts (you can use all of one kind, such as thighs or drumsticks if you wish -- just use about three pounds or a little more, of chicken) into a large mixing bowl. Melt the butter in the microwave and pour it all over the chicken (if the chicken is really cold the butter will re-solidify and that's okay.).
  • Sprinkle the seasoning salt all over the chicken and blend the chicken parts around until they are evenly covered with the butter and seasoned salt. I don't bother to trim the chicken -- it really makes little difference whether you do or not. You can also add a little garlic powder and/or herbs if you like those flavors -- a little rosemary would be terrific.
  • Prepare a roasting pan (or large casserole dish) by placing a rack in the bottom (or anything else, such as an ovenproof plate) which will keep the chicken off the bottom. Add the water to the bottom of the roasting pan. Lay out the chicken on the rack. Cover the roaster with a lid or aluminum foil and bake for one hour at 350-degrees F.
  • At the end of the hour, uncover the chicken and brush on the barbeque sauce until the chicken parts are well-covered. Don't worry too much about the undersides. Re-set the oven to 250-degrees F. and bake the chicken for another full hour (add another 1/2 cup of water if the roasting pan is dry -- this steams the chicken and gets it really tender.) Serve with side dishes (I like steamed asparagus and microwave-baked potatoes.).
  • I like to serve the chicken with additional barbeque sauce at the table. My three favorite commercial sauces (in order of preference) are Kroger's hickory sauce (store brand), Sweet Baby Ray's sauce, and Open Pit (regular.).

Before discovering Zaar, I had a a terrible habit of printing off recipes from other sights or clipping them from magazines and newspapers anticipating making them in the future. This particular recipe I printed in Sept/03 and decided to make it yesterday Jan.10/06 as I wanted to try something a bit different with chicken. It is from another site - southernfood.about.com and was very simple to make. My hubby was the taste tester for this particular dish and it must have met with his approval as there was a note on the kitchen table when I got home today that said - "Hope there is chicken left for me for dinner tomorrow. It is really, really good."

1 cup barbecue sauce (such as Sweet Baby Ray's®)

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking pan with heavy-duty foil to make cleanup easier.
  • Prepare chicken breasts by cutting off the rib meat if you wish and rinse and pat dry. Leave the skin on. Season chicken with salt and pepper and put in the pan.
