SOUTHWESTERN BAKED CHICKEN
This Southwestern Baked Chicken is a delicious and wholesome dinner recipe. It is easy to make-ahead so that dinner is ready to pop in the oven at the end of a busy day.

Steps:
- Preheat oven to 400 degrees F
- In a small bowl, mix together onion powder, chili powder, smoked paprika and sea salt.
- Place chicken in a baking dish and brush with olive oil. Sprinkled evenly with spice mixture.
- Sprinkle with cheese and top with tomatoes, onion, garlic and jalapeño.
- Bake for 25 minutes, until cooked through.
- Squeeze lime juice over chicken and garnish with chopped cilantro and green onions.

An easy Southwest chicken skillet dinner that comes together in just 15 minutes!

Steps:
- Heat a large saute pan over medium heat. Add olive oil then the onion and peppers. Saute for 4-5 minutes, until softened. (Prep your other ingredients while that's going in the pan.) Then add the garlic and saute for another 30 seconds or so, until fragrant.
- Add the black beans, corn and chicken to the pan. Add all of the seasonings (chili powder through black pepper). Stir to combine and let everything warm through for 2-3 minutes.
- Add the lime juice and turn off the heat. You're ready to serve with your favorite toppings!

Steps:
- Preheat oven to 350 degrees F.
- Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder, cumin, paprika and garlic powder.
- Place 3 tablespoons butter in the chicken cavity. Arrange remaining butter around the outside of the chicken. Place the peppers in the chicken cavity.
- Add Liquid smoke to beer and 1/2 into the cavity and the other 1/2 over the chicken.
- Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F. Basting with the drippings every 20 minutes. Remove from heat, and baste with melted butter and drippings.
- Cover with aluminum foil, and allow to rest about 30 minutes before serving.
