Steps:
- Preheat oven to 350°F. Lightly spray two mini muffin pans with non-stick cooking spray.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in the butter with a pastry blender or two knives until coarse crumbs form.
- In a small bowl, whisk together the egg, vanilla and yogurt. Add the yogurt mixture to the flour mixture and stir until well combined. Fold in the chopped and shredded apples.
- Place a few teaspoons of batter in each muffin cup. Bake for 15 minutes until they just start to brown.
- Remove the fritters from the oven and turn the oven broiler on high. Line two cookie sheets with parchment. Transfer the fritters to the cookie sheets.
- In a small bowl, whisk together 1 cup powdered sugar and 4 tablespoons apple cider. The glaze should be very thin. Brush the glaze over each fritter and let it drip down the sides. Return the fritters to the oven and broil for 2-4 minutes until the glaze starts to caramelize the tops of each fritter. Rotate the baking sheets every minute to insure even caramelization. Be sure to watch the fritters carefully so they don't blacken and burn.
- Remove from the oven. Whisk remaining powdered sugar and apple cider into leftover glaze until it's smooth and thick. Brush glaze evenly over broiled fritters. Let set on cookie sheets until glaze hardens, about 15 minutes.
- Notes: Store in the refrigerator. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for 5-10 minutes.

- Melt butter in a skillet and cook apples over low heat until they become tender. If they take too long cooking, as can happen with certain types of apples, you can add a little water to help them along, but don't add it unless needed, as you could overcook your apples. Some apples just soften up real quick, but others don't. It all depends.
- Sprinkle apples with cinnamon and stir in Splenda brown sugar and cook until apples caramelize, but not so long as to burn the sugar.

FRIED APPLE PIES - JUST LIKE GRANNY USED TO MAKE!
From southernfoodandfun.com

- For this fried apple pie recipe, start with 3 or 4 bags of dried apples and put them in a pot with enough water to just cover the apples. **Cook’s Tip: If you can’t find dried apples in your grocery store—and don’t buy the commercial ones in the aisle with all the dried fruit because they take forever to cook down and they are expensive—try these that I found online.
- Add about 2 cups sugar. Turn heat on high and bring to a boil, then turn it down to a simmer and cook down until the apples are tender and juicy.
- Remove the apples from the heat and let them cool while you’re getting the fried pie dough ready. **Cook’s Tip: Place some of the apples in another dish to help them cool faster.
- For the dough, start with about 4 heaping cups of self-rising flour and add shortening and butter. **Cook’s Tip: I recommend White Lily flour because it’s lower in protein and gives you a more tender crust.
- Stir ice water into the dough with a fork, scraping underneath the dough to mix in all the dry flour.
- Dip both hands in flour then sprinkle a little flour on top of the fried pie dough, lift it up, and sprinkle a little more flour along the sides.
- Alright, you have the dough and the apple filling so let’s talk about how to make fried apple pies—time to put it all together! Next you will pinch off small pieces of fried pie dough and roll into balls.
- Take each ball of dough and roll out until it’s pretty thin, then put a heaping spoonful or two of apples on one side, leaving an edge for sealing.
- Dip your finger in water and rub the edge around the apples, then carefully fold the dough over and press down. The water acts as a sealant and will keep the dough from separating.

- Allow to cook for about 8 minutes, stirring often, just until the apples have softened. Then, sprinkle in the brown sugar, cinnamon, and salt and stir to coat.
- Once the apples are fork-tender and the syrup has taken on a dark, amber-colored syrup-like consistency the Fried Apples are ready. Remove from the heat, allow to cool slightly, serve and enjoy!
