3 Tablespoons Olive Oil
1 Pound Italian Sausage Meat Removed From Casings
1 Cup Chopped Onion
4 Garlic Cloves, Minced
1 Large Head Escarole, Chopped (About 10 Cups)
3/4 Cup Dry White Wine
4 (15-ounce) Cans Cannellini Beans, Rinsed (Or 6 Cups Cooked Beans)
1 Cup Chicken or Vegetable Stock
Salt & Pepper To Taste
1 Tablespoon Calabrian Chili Paste
Freshly Grated Parmesan Cheese (optional)

Steps:

  • Heat oil in heavy large pot over medium-high heat in a large skillet.
  • Working in batches, sauté sausage meat until cooked through, breaking up with two forks.
  • Using slotted spoon, transfer sausage to bowl, leaving drippings in pot.
  • Reduce heat to medium; then add onion to pot and sauté until translucent, about 5 minutes.
  • Add garlic and escarole and sauté until wilted, about 4 minutes.
  • Add wine and cook 4 minutes until slightly reduced.
  • Add beans, stock, chili paste, and sausage and simmer 10 minutes to blend flavors.
  • Season to taste with salt and pepper then transfer to large bowl.
  • Top with grated Parmesan, if desired.

Pasta with Italian Chicken Sausage, Escarole and Beans made with lots of garlic, lean Italian chicken sausage, white cannellini beans, crushed red pepper and grated cheese.

10 oz pasta (wheat or gluten-free pasta)
1 tsp olive oil
1 medium onion (chopped)
4 cloves garlic (chopped)
12 oz uncooked Italian chicken sausage (removed from casing (Al Fresco))
1/2 cup fat free (low sodium chicken broth)
1 cup cannellini beans (drained and rinsed (Eden))
1 medium head (7-8 cups escarole rinsed and torn into bite sized pieces)
1/4 cup grated Parmesan or Romano cheese
1/4 tsp crushed red pepper (or to taste (optional))
salt and fresh pepper to taste

Steps:

  • Rinse escarole and tear into bite sized pieces.
  • Cook pasta according to package directions for al dente in a large pot of salted water. Reserve 1/2 cup water before draining.
  • While pasta water boils, heat a large non-stick skillet on medium heat.
  • Add olive oil; when hot add onions, garlic, salt and pepper until soft, about 4-5 minutes.
  • Add sausage, breaking up with a wooden spoon and cook until golden, about 6 to 8 minutes. Set aside in a dish.
  • Add chicken broth and beans to the skillet.
  • Add the escarole; stir and cook about 4 minutes or until wilted.
  • Gently stir in sausage, pasta, red pepper flakes, 1/2 cup of the reserved water or more if needed and grated Parmesan. Adjust salt and pepper if needed and toss well; transfer to a large serving bowl. Enjoy with some extra cheese on the side.

2 tablespoons olive oil
2 garlic cloves, chopped
1 pound escarole, chopped
Salt
4 cups low-salt chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1 (1-ounce) piece Parmesan
Freshly ground black pepper
6 teaspoons extra-virgin olive oil
Serving suggestion: crusty bread

Steps:

  • Heat 2 tablespoons of olive oil in a heavy large pot over medium heat. Add the garlic and saute until fragrant, about 15 seconds. Add the escarole and saute until wilted, about 2 minutes. Add a pinch of salt. Add the chicken broth, beans, and Parmesan cheese. Cover and simmer until the beans are heated through, about 5 minutes. Season with salt and pepper, to taste.
  • Ladle the soup into 6 bowls. Drizzle 1 teaspoon extra-virgin olive oil over each. Serve with crusty bread.

Pasta with chickpeas and greens is a classic dish from the Puglia region of Italy. In our riff with chickpea pasta, we added sausage to complement the earthy flavors of the greens and noodles.

Kosher salt
One 8-ounce box dried chickpea penne
1/4 cup olive oil
8 ounces sweet Italian sausage, casings removed
1 small red onion, thickly sliced
1 medium head escarole, trimmed and coarsely chopped
1/4 teaspoon crushed red pepper flakes
1/2 cup grated Parmesan
1/2 cup grated Pecorino Romano

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente, 1 to 2 minutes shy of the package directions. Reserve 1 1/4 cups pasta water, then drain.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the olive oil. Crumble in the sausage and cook until no longer pink, 2 to 3 minutes. Add the onion and cook until golden and wilted, about 4 minutes.
  • Add the escarole, red pepper flakes and 1/2 cup pasta cooking water. Cover and cook until the escarole has just wilted, 3 to 4 minutes. Increase the heat to reduce the liquid in the skillet and thicken it slightly, about 1 minute.
  • Add the pasta to the simmering sauce and drizzle with the remaining 2 tablespoons olive oil. Toss well, adding a little more of the reserved pasta water if it seems dry. Remove the skillet from the heat. Sprinkle with the Parmesan and Pecorino, toss and serve immediately.

This is...not healthy, but oh so good. I got this recipe out of the Gourmet Cookbook. I've modified it only slightly. Now that I've made it once, my bf asks for it over and over again :roll: I serve it over whole grain pasta with a salad and a nice white wine.

1 teaspoon olive oil
1 lb bulk Italian sausage, broken into 1 inch pieces (sweet or hot)
10 large garlic cloves, minced
1 teaspoon red pepper flakes (to taste)
1 head escarole, trimmed and cut into 2 inch pieces
3 cups white beans (cooked or canned any variety but I used great northern)
3 cups chicken stock
4 tablespoons unsalted butter
1/2 cup grated parmesan cheese
2 plum tomatoes, diced
2 tablespoons fresh flat-leaf parsley, chopped
kosher salt and pepper

Steps:

  • Heat oil in a large skillet and brown the sausage for about 7-10 minutes, stirring constantly.
  • Add garlic and red pepper flakes and cook until the garlic softens.
  • Add escarole and cook until wilted (2 minutes).
  • Add beans and cook for a minute.
  • Add the stock and bring to a slow boil.
  • Stir in the butter, cheese, tomatoes, and half of the parsley and cook until heated through and the butter is all melted.
  • Season with salt and pepper.

1 cup onion, chopped
1 cup red potatoes, peeled and cubed (about 6 oz.)

1 (16 ounce) can cannellini beans or 1 (16 ounce) can other white beans, rinsed and drained
1 (14 ounce) can reduced-sodium fat-free chicken broth
4 cups escarole, sliced (about 4 oz.)

Steps:

  • Heat a large nonstick skillet with high sides over medium-high heat. Coat pan with cooking spray.
  • If you prefer crumbled sausage, remove casings. Add sausage and onion to pan, and cook 4 minutes or until sausage browns, stirring to crumble.
  • If you prefer sausage slices, cook whole sausages in a little water until almost firm. Slice sausages and return to pan with onion and cook until onion is lightly browned and no pink remains in sausage.

2 tablespoons olive oil
6 bone-in skin-on chicken thighs
1 small yellow onion, diced
2 garlic cloves (crushed or minced)
1 head escarole, washed and chopped
1 (14 ounce) can white beans, washed and drained
1 1/2 cups dry vermouth or 1 1/2 cups dry white wine
1 1/2 cups chicken stock
2 tablespoons dry sherry
1 tablespoon chopped fresh sage
1 dash red chili pepper flakes
kosher salt
fresh ground pepper
1 (16 ounce) package bow tie pasta, plus
water, to boil it in

Steps:

  • - boil water and cook pasta noodles. after you drain them add a little butter to the noodles to keep them from getting sticky.
  • - wash chicken and pat dry. salt and pepper chicken on both sides.
  • - heat olive oil in large saute pan until shimmering.
  • - add chicken and brown for five minutes on each side. remove chicken to plate and let rest.
  • - drain pan of most of the chicken fat and return to med-low heat. add diced onion. after onions turns opaque, add garlic. cook until fragrant, about one minute.
  • - add chopped escarole to onion mixture and saute until wilted, about three minutes.
  • - add white beans, wine and chicken stock. also add sage and red pepper flakes. up heat and simmer five minutes until slightly reduced.
  • - return chicken thighs to pan. put lid on pan and turn heat to med-low. if you need to you may add more broth or wine. you want there to be a sauce for the noodles.
  • - after about ten minutes flip chiken thighs and put lid back on. simmer ten more minutes.
  • - remove lid and add sherry. simmer on low five more minutes and check thighs for doneness. may take a few minutes more depending on their size. serve over buttered bow-tie pasta with grated parmesan to garnish.
