This version is easy since it uses the chicken cutlets which are much thinner than the whole breast - thus no pounding - and the ingredients are layered instead of rolled. It all came together accidentally tonight when I realized the cutlets were too small to roll. My family loved it...I hope you will too!

6 boneless, skinless chicken breast cutlets
½ teaspoon salt
½ teaspoon ground black pepper
6 thin slices deli ham
2 cups shredded sharp Cheddar cheese, divided
3 tablespoons all-purpose flour
1 egg, beaten
2 tablespoons milk
1 ¼ cups bread crumbs
1 tablespoon garlic powder
1 teaspoon oregano
2 tablespoons butter, melted
½ cup chicken broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Place 3 cutlets side by side in the prepared pan and season with salt and pepper. Top with overlapping ham slices, starting 1/4 inch away from the edges of the cutlets. Sprinkle 1 1/2 cups Cheddar cheese over ham. Lay remaining 3 cutlets side by side on top, covering all the Cheddar cheese. Sprinkle flour on top, spreading with hands to cover.
  • Combine beaten egg and milk in a bowl; pour over the chicken.
  • Combine bread crumbs with oregano in a bowl; sprinkle over the top and sides to cover all surfaces of chicken. Spoon any excess egg mixture from the bottom of the pan over the chicken. Drizzle melted butter on top; pour chicken broth around the edges. Top with the remaining 1/2 cup Cheddar cheese.
  • Bake in the preheated oven until cutlets are no longer pink in the center and the juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Turn oven to broil and cook until top is crispy and golden brown, about 5 minutes more.

4 double chicken breasts (about 7-ounces each), skinless and boneless
Kosher salt and freshly ground black pepper
8 thin slices deli ham
16 thin slices Gruyere or Swiss cheese
2 teaspoons fresh thyme leaves
1/4 cup flour
1 cup panko bread crumbs
1 teaspoon olive oil
2 eggs
2 teaspoons water

Steps:

  • Preheat oven to 350 degrees F. Lay the chicken between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Take care not to pound too hard because the meat may tear or create holes. Lay 2 slices of cheese on each breast, followed by 2 slices of ham, and 2 more of cheese; leaving a 1/2-inch margin on all sides to help seal the roll. Tuck in the sides of the breast and roll up tight like a jellyroll. Squeeze the log gently to seal.
  • Season the flour with salt and pepper; spread out on waxed paper or in a flat dish. Mix the breadcrumbs with thyme, kosher salt, pepper, and oil. The oil will help the crust brown. Beat together the eggs and water, the mixture should be fluid. Lightly dust the chicken with flour, then dip in the egg mixture. Gently coat in the bread crumbs. Carefully transfer the roulades to a baking pan and bake for 20 minutes until browned and cooked through. Cut into pinwheels before serving.

2 large boneless skinless chicken breasts
4 slices deli ham
4 slices swiss cheese
1/4 cup flour, in bowl
1 -2 egg, beaten, in bowl

  • Take chicken and place on a large cutting board. Put a piece of wax paper (or even saran wrap) over the chicken breast.
  • Use a heavy pan, or mallet, and smash the chicken breast till it spreads out to about the size of 2 chicken breasts.
  • Then place 2 pieces of ham on the chicken breast and then 2 pieces of cheese.
  • Take chicken and roll up into a log. If it isn't holding together, place a couple toothpicks into the chicken to hold in place.
  • Roll each piece in the flour, then in beaten egg, then in bread crumbs.
  • Place the chicken breasts in a baking dish and place in oven at 375°F and bake for 30-45 minutes (or until chicken is cooked through).
  • Cut each piece in 2 pieces, and serve!

Our chicken cordon bleu contains some sweet cranberry sauce as well as the classic cheese and ham combo. Fry first and then bake in the oven for a super-crisp coating.

4 skinless, boneless chicken breasts
60g/2¼oz emmental cheese
4 thin slices smoked ham (roughly 130g/4½oz)
8 tsp cranberry sauce
25g/1oz plain flour
2 medium free-range eggs
200g/7oz golden breadcrumbs
5 tbsp sunflower oil
flaked sea salt and freshly ground black pepper

Steps:

  • Put the chicken breasts on a board. Using a sharp knife, remove the mini-fillet and reserve to one side. Carefully cut horizontally through each breast from the straighter side almost all the way through to the other side and open out like a book. Cut the cheese into four rectangles, each around 1.5cm/½in wide and roughly half the size of a small matchbox.
  • Take one of the opened breasts and its mini fillet and place between two sheets of cling film. Flatten both by bashing with a rolling pin until around 5mm thick all over. Remove the top layer of cling film and cover the flattened fillet with one slice of ham. Place a chunk of Emmental in the middle of the ham slice and top with two teaspoons of the cranberry sauce.
  • Use the flattened mini-fillet of chicken to cover the fillings and then carefully wrap the chicken breast up by bringing the pointy end of the chicken breast up over the cheese to insure it's tucked neatly inside and, using the bottom layer of cling film, roll the breast up tightly and neatly insuring the cling film remains on the outside of the chicken to create a parcel.
  • Repeat the same method with the remaining three chicken breasts and put to one side.
  • Sprinkle the flour onto a large plate and season with a couple of pinches of salt and lots of freshly ground black pepper. Whisk the eggs together in a shallow bowl. Scatter 50g/1¾oz of the breadcrumbs onto a large plate.
  • Dust one of the stuffed chicken breasts thoroughly in the seasoned flour and pat lightly to remove any excess. Roll the floured chicken in the egg and give it a light shake.
  • Place the chicken on the plate with the breadcrumbs and turn a couple of times, pressing with the breadcrumbs until well coated. Dip back in the egg and then coat in the breadcrumbs once more. This will make sure your crust is really crisp. Put the chicken on a baking tray and leave to stand.
  • Flour, egg and coat the remaining chicken breasts in exactly the same way. You'll need to add 50g/1¾oz of the breadcrumbs to the plate for each breast, throwing away the remaining crumbs from the previous batch as they will be very sticky. (The chicken breasts can now be covered and popped in the fridge until you are ready to cook them.)
  • Preheat the oven to 220C/425F/Gas 7. Heat the sunflower oil in a large non-stick frying pan. Fry the chicken breasts over a medium high heat for 1-2 minutes on all four sides, or until golden-brown.
  • Transfer the chicken to a baking tray and finish cooking in the oven for 25 minutes, or until the chicken is hot and thoroughly cooked - there should be no pinkness remaining. Serve immediately so that the cheese oozes out as it is cut.

PERFECT CHICKEN CORDON BLEU

This chicken was my most requested dinner when I was living at home. Now I make it quite often. It's perfect for a worknight because it's super simple. I'm not usually a fan of swiss cheese but it definitely gives this recipe it's unique taste. The bundles will stay together quite well if you place them crease side down but toothpicks may be used if needed. I love serving this with rice and mixed veggies. To reheat the oven works much better than the microwave.

1 package thin sliced boneless skinless chicken breast (I use Purdue scallopini)
1/4 lb sliced ham (I get Virginia baked ham from the deli)
1/4 lb swiss cheese
1 egg
1/4 cup milk
1 1/2-2 cups Italian seasoned breadcrumbs

  • Preheat oven to 350.
  • Combine egg and milk in small bowl and place breadcrumbs on plate.
  • Dip chicken into egg/milk mixture then coat one side with breadcrumb mixture and place breadcrumb side down in 13 X 9 glass baking dish.
  • After all pieces are in baking dish place cheese then ham on each piece of chicken. (I usually tear the slice of cheese in half so that when I put it on the chicken it covers the whole thing - any remaining cheese or ham I just divide between the chicken).
  • Roll chicken making sure to keep cheese and ham tucked inside and place crease side down in dish.
  • Top with remaining breadcrumbs.
  • Bake for 35 minutes until juices run clear.

4 chicken breasts skinless and boneless
4 thin slices prosciutto di Parma
1/2 pound Gruyere, grated
1/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 cup panko bread crumbs
4 sprigs fresh thyme, leaves only
1 clove garlic, peeled and finely minced
2 tablespoons unsalted butter, melted
2 eggs
Extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
  • Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
  • Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
  • Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.

4 very thin slices smoked ham
2 cups bread crumbs
6 ounces Lorraine Swiss cheese, cut into four chunks

Steps:

  • Preheat oven to 375 degrees. Melt butter in glass baking dish.
  • Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts.
  • Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter.
  • Bake for 40-45 minutes or until golden brown. Serve with parselyed rice and steamed broccoli.
