2 cups sugar
1 1/2 cups butter, softened
1 cup buttermilk
4 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon vanilla
2 cups sweetened flaked coconut
1 cup chopped pecans
1 cup firmly packed brown sugar
1 cup chopped pecans
1/3 cup butter, melted
1/4 cup heavy whipping cream or 1/4 cup milk

Steps:

  • Heat oven to 350°F
  • Combine all cake ingredients except coconut and pecans in large bowl.
  • Beat at low speed, scraping bowl often, until all ingredients are moistened.
  • Beat at high speed, scraping bowl often, until smooth.
  • Stir in coconut and pecans by hand.
  • Pour into greased and floured 13x9-inch baking pan.
  • Bake for 45 to 50 minutes or until cake springs back when touched lightly in center and edges begin to pull away from sides of pan.
  • Heat broiler.
  • Combine all frosting ingredients in small bowl until well mixed.
  • Spread over warm cake.
  • Broil 2 to 4 inches from heat until bubbly (1 to 3 minutes).
  • Serve warm or cool.
  • Note: Substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. Let stand 10 minutes.

1 1/2 cups paper-thin onion slices
1 pound Yukon Gold potatoes, peeled, coarsely grated on large holes of box grater or in processor (about 2 1/2 cups)
1 teaspoon salt, divided
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 425°F. Butter large rimmed nonstick baking sheet. Place onion in large bowl. Toss potatoes with 1/2 teaspoon salt in medium bowl. Let stand 5 minutes. Using hands, squeeze out excess liquid from potatoes. Add potatoes, 1/2 teaspoon salt, and melted butter to onion. Toss to coat.
  • Divide mixture into 4 mounds on prepared baking sheet, spacing apart. Roast 15 minutes, then turn mounds over with spatula, pressing down to flatten to 4-inch-diameter rounds (cakes will still be soft). Reduce oven temperature to 350°F; bake until cakes are golden and crisp around edges, about 45 minutes longer.

Just make sure the cheese is always on top to pull it together. The combined flavors of the ingredients that I've listed blows my mind every time I make this. Eat with a knife and fork!

2 hoagie buns, split
2 tablespoons mayonnaise
2 teaspoons prepared coarse-ground mustard
1 pound deli sliced roast beef
2 tomatoes, thinly sliced
½ red onion, thinly sliced
4 slices provolone cheese
salt and pepper to taste

Steps:

  • Preheat oven on broiler setting.
  • Cut rolls in half, and toast in a bread toaster. Place on a baking sheet. Spread each half with mayonnaise and mustard. Layer with roast beef, tomato, red onion, Provolone, salt and pepper.
  • Broil 3 to 6 inches from heat source for 2 to 4 minutes (keep a constant eye on it) until cheese is bubbly and is beginning to brown.

1/4 cup heavy cream
1 cup packed light brown sugar
1 cup shredded sweetened coconut

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 13 x 9-inch cake pan.
  • To prepare the cake, pour 1¼ cups boiling water over the oats in a bowl. Let stand for 20 minutes. Cream the butter, sugar, and brown sugar with a mixer. Add the oats; mix well. Add the eggs and vanilla; mix well.
  • Sift together the flour, baking soda, salt, and cinnamon. Add to the oats mixture; mix well. Pour into the prepared pan. Bake for 30 to 35 minutes, until browned. Preheat the broiler.
