- Preheat the oven to 500 degrees F (260 degrees C).
- Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
- Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
- Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

- Preheat the oven to 425° and have ready one (or two) large rimmed sheet pans lined with either nonstick aluminum foil or parchment paper. Quarter the potatoes lengthwise. Cut each quarter into thirds.
- Transfer the potatoes to the sheet pan, drizzle with canola oil and sprinkle with salt and pepper. Toss until evenly coated. Transfer half of the potatoes to a second sheet pan to prevent overcrowding, if necessary. The potatoes will not properly roast/brown if there is no space between them.
- Place in the oven and bake 18 minutes. Remove from the oven and carefully turn wedges over, using tongs or a fork if necessary to keep from burning your fingers. If the potatoes stick to the foil, allow them to sit for 1-2 minutes, and then turn.
- Return to the oven and bake for an additional 16-18 minutes, or until the potatoes are golden-brown and crisp. Serve and enjoy.

- Preheat an oven to 425 degrees F (220 degrees C).
- Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
- Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

- Preheat oven to 450 degrees F.
- Add coconut oil to a large cookie sheet and put into the oven while it preheats.
- Cut your potatoes into 8 long steak fries each.
- Microwave for 5 minutes.
- When oven is ready, swirly the melted coconut oil in the pan and then add fries to cookie sheet. Be careful because the coconut oil will be very hot as will the cookie sheet.
- Make sure the fries are well distributed and sprinkle with salt and pepper.

- Flip and then raise the heat to 525 degrees and cook for 10 more minutes or less.

- 1. Preheat oven to 425 degrees F, with the cookie sheet in the oven to get it hot. Once hot: Take the cookie sheet out of the oven and brush on a thin coat of olive oil (not the 3 T).
- 2. In a bowl, coat the potatoes with 3 T olive oil, dried herbs and the steak seasoning or salt and pepper, and mix well.
- 3. Spread the potatoes to the corners of the cookie sheet and cook for about 25 minutes (*could be sooner or later - check them as they cook - See note in step 4), turning once halfway through cooking. Serve once they are nicely browned to your liking!
- 4. Note: I find that if my wedges are thin, a total of 20-25 minutes is enough. If the wedges are thicker, a total of around 40 minutes works better.
OVEN BAKED STEAK FRIES
Steps:
- In a large skillet heat oil over medium high heat. Add butter and stir until melted. Add potatoes and toss to coat. Cook the potatoes for 10 minutes, occasionally tossing and stirring them. Transfer potatoes to a baking sheet and roast in oven at 400 degrees for another 20 minutes. Bake until potatoes are golden brown and crispy. Season with salt and pepper.

- To prepare the potatoes: wash and peel the potatoes. Cut them into thick wedges. (See Note 1 for cutting instructions). In a large bowl, soak the potatoes in cold water for at least 1 hour, or up to overnight! (Refrigerate, if soaking for more than 4 hours.)
- To make the secret mixture: combine water and cornstarch in 1-cup measuring cup. Microwave for 1 minute or so, then mix it well until smooth, thick, opaque and gelatinous. Then stir in paprika and garlic powder. (I know, this sounds SO weird, but this's what really make these steak fries the best! I learned this trick from this America's Test Kitchen video and it was a game-changer!!!)
- To cook the potato wedges: preheat the oven to 425°F. Spray 2 baking sheets with non-stick cooking spray and divide the oil between 2 baking sheets. Spread the oil evenly all over. (I use this pastry brush for this step.)
