4 tablespoons butter
1 cup long grain white rice
4 pork chops, bone in
Salt
One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
  • Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

1 egg, beaten
2 tablespoons milk
1 cup cornbread mix or 1 cup pork stuffing mix
4 pork chops

Steps:

  • Preheat oven tho 425 degrees.
  • Place butter or margarine in a 13x9x2 pan.
  • Put pan in oven for 3 minutes or until butter is melted.
  • Stir together egg and milk.
  • Put stuffing mix in a resealable bag and crush (or leave as is).
  • Dip pork chops in egg mixture.
  • Coat with stuffing mix.
  • Put chops on top of melted butter in pan.
  • Bake 20 minutes.
  • Turn.
  • Bake 10-15 minutes more.

1 (10 1/2 ounce) can French onion soup
1 cup uncooked long grain white rice (not instant)
4 pork chops (at least four bone-in)
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees.
  • Put approximately 1 cup of uncooked rice in the bottom of a casserole dish.
  • Cover the rice with can of French Onion Soup (save the can!).
  • Brown the pork chops in a large skillet and set aside.
  • Fill the saved can with water and pour into the skillet that you just browned the pork chops.
  • Scrape the fixins from the pan with the water and pour all into the casserole dish.
  • Stir together all ingredients that are in dish and spread rice evenly out on the bottom.
  • Place chops in single layer on top of rice mix.
  • Bake in oven for 1/2 hour uncovered.
  • Cover with foil and bake additional 1/2 hour.

1 clove garlic, minced

  • Method:Preheat oven to 220C. Rinse and wipe dry pork chops. Use the back of a chopper to tenderize them. Mix well with marinade and leave for 30 minutes. Separate a small part of whisked eggs for dipping pork chops and leave the rest for frying rice. After dipping the pork chops thoroughly in beaten eggs, pat lightly with plain flour removing excess flour. Put pork chops in a frying pan over high heat until both sides are brown. Set aside. Add 2 tablespoons of cooking oil to sauté onion until aromatic, add minced garlic. Toss in mushrooms and leave them to cook until dry. Add green, red capsicum and tomatoes, liberally sprinkle salt. Stir well until all ingredients tenderized. Set aside. Add oil in frying pan, pour in the rest beaten eggs. When the eggs cooked half through, toss in white rice, stir well. Place sauce mixture over fried rice. Bake in the oven at 220C for about 15 to 20 minutes, or until cheese turns golden.

2 Tablespoons Worcestershire sauce, (optional)

Steps:

  • Preheat oven to 425F degrees.
  • In a large skillet over medium-high heat, add in butter until it starts to melt, then add in rice along with celery and onion.
  • Stir and cook until rice begins to brown slightly and onion and celery soften just a bit.
  • Then put rice mixture into bottom of 9x13-inch baking dish.
  • Pour beef stock over rice. Add in Worcestershire sauce (if using).
  • Using that same skillet, over high heat, add in a couple tablespoons of vegetable oil.

  • Place 2 pork chops in skillet at a time and brown both sides. You aren't cooking them all the way through. You just want to get a nice brown color on both sides (about 2 minutes per side).

  • Cover baking dish with aluminum foil. Place in oven and bake for about 35-40 minutes.
  • The rice should be tender and the liquid absorbed and pork chops should be thoroughly cooked to 145F degrees.

4 bone-in pork chops ((at least about an inch thick))
4 tablespoons canola or vegetable oil ((divided))
1 small yellow onion ((chopped))
3 large garlic cloves ((minced))
2 cups long grain white rice
4 cups beef broth
1/2 teaspoon salt ((plus more for seasoning pork chops))
1 and a half teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder

Steps:

  • Pre-heat oven to 425.
  • Heat a skillet over medium heat and add 2 tablespoons of oil. Cook the chopped onions until translucent. (About 5 minutes)
  • Once the onions are cooked, add the minced garlic and cook for another 1-2 minutes.
  • Add the onions and garlic to a 9x13 inch pan. Add in the uncooked rice and beef broth and stir to combine.
  • Carefully wipe out the skillet to remove any left over onions or garlic then add the remaining 2 tablespoons of oil.
  • Heat the pan over high heat.
  • Season the pork chops liberally with the pork chop seasoning mixture.
  • Add the pork chops to the hot pan and brown them for 2 minutes per side. (They will not be cooked throughout). You may have to do this in batches so you don't crowd the pan.
  • Once browned, immediately add the pork chops to the pan with the rice.
  • Cover the pan with aluminum foil and bake at 425 for about 25-30 minutes or until the pork is cooked throughout. (160 internal temperature) I like to check the temperature at 20 minutes with a meat thermometer to make sure I don't overcook them.
  • Remove from the oven, and let the pork chops rest for 15 minutes before serving. Fluff the rice with a fork and serve.

4 boneless center cut pork chops (about 1" thick)
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons extra-virgin olive oil (or other high-heat oil like canola)
1 tablespoon fresh chopped oregano (or 1 teaspoon dried)
1 tablespoon fresh thyme (or 1 teaspoon dried)
2 cloves garlic (minced)
1 lemon (zested and cut into wedges)
1/2 cup dry white wine (such as sauvignon blanc, chardonnay, or pinot grigio)
1/2 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat your oven to 375 degrees F and place an oven rack in the center. Pat the pork chops dry with a paper towel and season evenly on all sides with the kosher salt (1 teaspoon) and black pepper (1/2 teaspoon).
  • Heat an oven-safe skillet on high or medium-high heat, depending on your burners, until very hot. This will take only 30 seconds or so with stainless steel, but up to 5 minutes with cast iron. (to test, you shouldn't be able to hold your hand a couple inches over the skillet's surface for more than a few seconds.)
  • Add the oil (2 tablespoons) and swirl to coat the bottom of the pan (or use a spatula to evenly distribute it). Add the pork chops to the skillet and allow to sear, undisturbed, for 2 minutes. While they are searing, sprinkle 1 teaspoon of the fresh oregano and thyme (or less than 1/2 teaspoon if using dried), once minced clove of garlic, and half the lemon zest on the top side of the pork chops.
  • Turn off the heat on the burner and flip the pork chops. (Tip: they should release easily from the bottom of the skillet- if they don't, they may need more time searing.) With the seared side facing up, sprinkle the remainder of the fresh herbs, minced garlic, and lemon zest on top of the pork chops. Place the lemon wedges in the spaces around the pork chops. Slide skillet onto center oven rack and bake for 10-15 minutes, or until internal temperature is 145 degrees F (cooking time will vary depending on thickness and oven temperature).
  • Remove pork chops to a plate or cutting board and allow to rest for 5 minutes (tent with foil if resting for longer than that to keep them warm).

1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

Hawaiian Pork Chops are breaded and baked for a healthy version of a classic favorite that is typically fried. The chops are topped with a sweet and sour sauce and served over a bed of rice.

2 teaspoons oil
1 cup sliced red peppers (120g)
1/2 cup thinly sliced onions or shallots(60g)
2 cups vegetable broth (236ml)
8 ounces canned pineapple chunks(225g)
1/4 cup Ketchup (60ml)
2 tbsp brown sugar
1 tbsp Corn starch
2 tbsp cold water
4 pork chops- 3/4 inch thick 4 ounces each chop (1
1 tbsp dijon mustard
1 pkg breading mix (I use shake and bake)
1 cup basmati rice
2 cups water
1 teaspoon salt

Steps:

  • Cook the Rice Bring 2 cups of salted water to a boil in a heavy duty pan that has a lid. Once the water is boiling, add the rice, stir, and bring to a second boil. Immediately turn off the burner, cover with the lid and let the rice sit for 20 minutes before removing the lid. NO PEEKING. Make the Pork Chops while the rice is cooking. Preheat oven to 425 degrees. Spread the dijon on both sides of the pork chop and coat with the breading mix. Place the pork chops on a baking sheet and bake for about 12 - 15 minutes. When the internal temperature reaches 145 degrees F. Remove the chops from the oven and let rest 2-3 minutes before serving. Make the Hawaiian Sweet and Sour Sauce while the Pork Chops and Rice are Cooking. Saute the onions and peppers in the oil until lightly browned but still firm Add the vegetable broth, pineapple chunks, ketchup, and brown sugar. Stir to combine and bring to a simmer. Dissolve the cornstarch in the water. Add this mixture to the sauce. Stir to mix in and thicken the sauce. Turn off burner Assemble and serve. Add 3/4 cup of rice to each place. Add a pork chop next to the rice. Top with the sweet and sour sauce and serve immediately

2 tablespoons butter
1 onion, diced
1 pinch seasoned salt, or to taste
6 thin bone-in pork chops
1 (14 ounce) can beef consomme
10 fluid ounces water
1 ½ cups white rice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion until golden brown, 15 to 20 minutes. Transfer onion to a plate.
  • Sprinkle seasoned salt over all sides of each pork chop. Place pork chops in the same large skillet and cook until browned, 1 to 2 minutes per side.
  • Mix beef consomme and water together in a 9x13-inch baking dish. Pour rice into the broth mixture; add caramelized onion. Gently arrange pork chops over rice in a single layer. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until pork is cooked through, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
