- Preheat the oven to 400 degrees F. Cover a baking sheet with aluminum foil or parchment paper. Slice the potatoes into a french fry shape. Toss in a bowl with the olive oil to lightly coat. Arrange on the prepared baking sheet, so that the fries are spread evenly.
- Bake until golden brown, turning over halfway through, 25 to 30 minutes.
OVEN BAKED PARMESAN FRENCH FRIES

- Preheat the oven to 400 degrees F.
- Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
- Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
- When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

Steps:
- Wash potatoes and cut them into semi-thin strips.
- Place strips in a bowl and add cool water to cover the potatoes.
- Wash out some of the"starch" and then drain the potatoes well.
- Mix in the olive oil and sprinkle with salt.
- Mix all of the potatoes well so that they all get coated evenly.
- Spray a cookie sheet with PAM and then place the potatoes on top.
- Cook at 350F for approximately 20-25 minutes (more if you want them crunchy and brown) Serve and enjoy!

This following Greek fries recipes works very well and is less labor intensive than the pan-fried version which is included. Grilled gives the fries an extra layer of flavor and crispness. These fries are golden to brown, crisp outside and flaky soft inside.

- Preheat the oven to 400°F.
- Oven fried:.
- Pour the oil in to a large bowl, add the potatoes and toss to coat.
- Oil a baking sheet with a little more olive oil, and arrange the potatoes in the sheet. Bake for 50 minutes or until potatoes are golden brown and cooked.
- Sprinkle with the salt and serve with the lemon for squeezing.

- Blot the potato pieces dry with a paper towel. Heat approximately an inch of olive oil in a large heavy frying pan over low heat and add sufficient potatoes to make one layer. Cover and cook until the potatoes begin to turn golden. Remove the lid, increase the heat to medium-high, and frequently turn the potatoes one fry at a time, until they are golden brown. Remove the fries with a slotted spoon to a paper towel lined plate and repeat until all the potatoes are fried. Season to taste.

- Prepare grill heating to 400 degrees. Oil grates well. Place fries on grill lower to 350. Close lid.
- After 15 minutes turn, Close lid.

- Place heavy foil over indirect heat and remove fries from grill and place on foil as they brown and crisp to desired liking.
- Continue cooking till all is done.
- Sprinkle with the salt and serve with the lemon for squeezing.

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.
