GRANDMA'S FALL OFF THE BONE BBQ COUNTRY STYLE PORK RIBS
My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

- Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
- Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
- Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
- While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
- Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
- Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
- Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

- Preheat oven to 350 degrees.
- Rinse and pat dry the pork ribs. Place the ribs in a baking dish. Brush the ribs with olive oil and sprinkle the salt over the ribs. Let the ribs sit at room temperature for about 5 minutes.
- Place ribs in the oven to bake. After 15 minutes, remove the ribs, and brush with the barbecue sauce. Return to the oven and bake for another 15 minutes.
- After 30 minutes total baking time, the pork ribs should be done. Remove from oven, and check for doneness.
- Plate the ribs and serve with a good glass of Merlot! Pass extra BBQ sauce at the table.

- Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
- Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
- Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.
- Turn oven down to 275°F and bake ribs, uncovered, for 1 hour more, or until you can pull the meat apart with a fork (if your ribs were small and already pretty tender when you put them back in the oven, start checking after 20 minutes). Brush with another coat of BBQ sauce, rest for 5 minutes, serve and enjoy!

- Preheat your oven to 350°F (175°C) and trim any excess fat cap (an even layer of thick fat) from your boneless country style pork ribs as needed.
- Season both sides of the country style ribs with salt and pepper, then arrange them on a couple of sheets of aluminum foil (large enough sheets to wrap around your pork ribs and seal securely). Place the foil with the ribs into a baking dish or onto a rimmed baking sheet.
- Create the 'pouch' around your seasoned country style ribs, pulling up the sides so it will hold in the liquid, then pour the apple cider vinegar over the ribs. Seal the aluminum foil securely.
- Bake at 350°F (175°C) for 2 hours or until your pork ribs are fork tender (small 4 ounce ribs may cook quickly, and large 10 ounce ribs may take a bit longer).
- Remove from the oven and open the aluminum foil carefully (vent the steam away from your body!). Transfer the pork ribs to a clean sheet of aluminum foil and drain the fat from your baking dish or sheet pan, then discard the used aluminum foil.
- Move the ribs back into your baking dish and coat all sides of the pork ribs generously with the BBQ sauce. Return to the oven and bake uncovered for an additional 20 minutes.
- Remove from the oven when done and allow the pork ribs to rest for 10 minutes before serving. Slather with more BBQ sauce if desired.

THE BEST BONELESS RIBS
These are the best tasting beef ribs I have ever had in my entire life. This recipe was given to me by a dear friend, which was passed on to her in her family. I usually double this recipe when I make it. It's great in the oven or in the crockpot! I like to use the boneless beef spare ribs.

- Combine all ingredients in a large pot and bring to a slow boil. Simmer for 45 minutes.
- Double wrap ribs in aluminum foil, place in a 9x13-inch baking dish and bake for 1 1/2 hours in a 350°F oven.
- Remove ribs from the aluminum foil.
- Place ribs and sauce in a roaster and bake uncovered for 45 minutes in a 350°F oven.

OVEN BAKED COUNTRY RIBS WITH GRAVY
This is a very economical recipe that I came up with out of sheer boredom. Country ribs are always on sale and because of that, I buy them often, but we got tired of BBQ ribs fast! I used very lean, boneless ribs and they came out flavorful and fork tender. I made the entire recipe in my cast iron skillet, but you can also bake it in a casserole dish. As always, this is a base recipe. Feel free to adapt to your family's tastes.

Steps:
- Heat oven to 350°F.
- Dredge in flour sage, salt and pepper mixture.
- Heat oil and butter in a medium high fry pan.
- Add ribs and brown on all sides, then remove from pan.
- Lower heat and brown onions and garlic lightly, about 2 to 3 minutes.
- Add soup, broth, water and Kitchen Bouquet, stir to combine.
- Add ribs back to pan and spoon soup mixture over meat.
- Bake covered for 35 minutes then flip ribs and check thickness of gravy, add more liquid at this point if necessary.
- Continue baking, covered another 20 to 30 minutes, until ribs are fork tender This last step may take longer, depending on the size of your ribs.
