4 firm bananas, peeled and halved lengthwise
¼ cup maple syrup
1 tablespoon ground cinnamon
1 (1 inch) piece fresh ginger, grated
1 ½ teaspoons ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.
  • Bake in the preheated oven until heated through, 10 to 15 minutes.

Steps:

  • Cover banana in aluminum foil and place into oven at 400°F for 15 minutes
  • Remove from oven, slice banana in half and place back into oven on full heat
  • Remove from the oven and dispose of banana peel.
  • Spread melted nutella on top of cooked banana.
  • Crumble digestive biscuits and sprinkle on top.
  • Serve warm with vanilla ice cream or whipped topping.

4 ripe firm bananas
3/4 cup orange juice
1 teaspoon vanilla
1/2 cup all-purpose flour
3/4 cup packed brown sugar
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
6 tablespoons cold butter

Steps:

  • Preheat oven to 375 deg F.
  • Peel and slice bananas and divide, cut side up, among 4 greased ramekins or custard cups.
  • In a small bowl, combine the orange juice and vanilla, and drizzle over the bananas.
  • In a large bowl, combine the flour, oatmeal, brown sugar, nutmeg and salt. Cut in the cold butter until you have pieces the size of small peas. Spoon evenly over the fruit.
  • Bake for 15-20 minutes. Serve warm, with vanilla yogurt or ice cream, if desired.

1 cup sugar
3 tablespoons cocoa powder
1 heaping tablespoon all-purpose flour
1 teaspoon vanilla
1/8 teaspoon salt
1/2 cup milk
1 cup fresh raspberries
Biscuit scraps or whole biscuits, store-bought or homemade, recipe follows, for crumbling
2 cups self-rising flour, sifted, plus more for flouring work surface
1/4 cup cold coconut oil (refrigerate to solidify prior to measuring)
3/4 cup cold milk
Melted butter, for brushing

Steps:

  • Add the sugar, cocoa powder, flour, vanilla and salt to a small pot. Add the milk and cook over low heat, whisking, until thick.
  • Divide the raspberries among 4 bowls and serve topped with crumbled biscuits and the warm chocolate gravy.
  • Preheat the oven to 450 degrees F.
  • In a bowl and using your fingers, mix the flour and coconut oil together very well until the mixture feels crumbly. Add the milk and mix (but don't overmix). Knead the dough just a couple of times, then roll it out to a thickness of 1/2 inch on a floured surface. Cut into 3-inch rounds and put the rounds on a baking sheet.
  • Bake for about 3 minutes, then liberally brush the biscuits with melted butter. Bake until golden, about 12 more minutes.

400 g nutella

  • line the base of a 24 cm springform tin with baking paper grease the sides.
  • preheat oven to 180 Celsius.
  • place everything except the nutella into a medium sized bowl. mix until crumbly.
  • press 2/3 of the mix across the base of the tin and a little up the side of the tin.just enough to hold the nutella inches.
  • spread the nutella across the base. if the nutella is a bit hard, warm it in the microwave.
  • sprinkle the rest of the crumbs over the top of the nutella.
  • cook for approximately 30 minutes or until top is golden.
  • cool completely.

½ cup walnuts
½ cup unsweetened shredded coconut
⅓ cup dried cherry
2 tablespoons flax seed
½ teaspoon ground cinnamon
½ teaspoon kosher salt
¼ cup coconut oil, melted
3 tablespoons honey, plus more for drizzling
½ teaspoon vanilla extract
4 ripe pears, such as Bosc, D'Anjou or Barlett
whipped topping, of choice, for serving

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a food processor, combine the oats, hazelnuts, walnuts, shredded coconut, cherries, flax seeds, cinnamon, and salt. Pulse until finely ground.
  • Add the coconut oil, honey, and vanilla, and pulse until just combined. The mixture should hold together when squeezed between your fingers.
  • Cut the pears in half lengthwise. Using a tablespoon, scoop out the cores. With a paring knife, cut a "v" shape around the edges of the stem, cutting downward on an angle. Remove the stems.
  • Set the pears in a baking dish, cut-side up. Fill each with ¼ cup (30 grams) of the crumble topping, pressing lightly into the pears.
  • Bake for 30-35 minutes, or until the topping is golden brown and the pears are tender when pierced with a paring knife.

My brother and I love digestives and Nutella (who doesn't?:)). As kids messing about in the kitchen one day, we came up with this 'recipe'. It's not really a recipe I know, but it is most certainly yummy! I like to mix the Nutella into the digestives but feel free to eat it how you like. I sometimes even add a little bit of salt to the digestive mixture or even cinnamon. A quick and easy treat that goes well with a hot cup of tea :)

So I am putting it here for safekeeping. I made it for Christmas morning and it was really delicious. It made a huge pan, but the leftovers were good for a couple of days, cold and hot!

4 tablespoons butter
1 loaf challah, torn into bite-size pieces
3 bananas, sliced
1/2 cup nutella chocolate hazelnut spread
6 eggs (or 1 1/2 cups egg substitute)
1 1/2 cups low-fat milk
1 cup brown sugar, divided
2 teaspoons vanilla extract
1 cup quick-cooking oats

Steps:

  • Preheat oven to 375 degrees F.
  • Coat 13x9 baking dish with 1 Tbsp butter.
  • Place remaining butter into small bowl to soften.
  • Tear bread into bite-size pieces. Place 1/2 bread into baking dish.
  • Top bread with 1/2 of the banana slices and dollops of 1/2 of the Nutella.
  • Repeat layers of bread, banana, Nutella.
  • Whisk together eggs, milk, 1/2 cup brown sugar, and vanilla. Pour mixture over bread.
  • Let stand for 15 minutes or until most of the liquid is absorbed.
  • Combine oats and 1/2 cup brown sugar and softened butter until crumbly. Sprinkle over top of bread mixture.
  • Cover with foil and bake for 30 mins until set.
  • Remove foil and bake 10-12 mins more until topping is golden. Let stand 10 mins before serving.

These are one of the most popular biscuits sold commercially in Britain. They are very delicate and, therefore, extremely difficult to reproduce exactly but this recipe is fairly close. The ORIGINAL recipe is posted, verbatim, below. However, please note that I used Pillsbury plain whole wheat flour (which I sifted) and I used 4 ROUNDED, not level, tablespoons of wheat germ. These minor modifications were made as a result of the (always) invaluable advice and information I received from fellow chefs in a Recipezaar discussion forum. Biscuits will be 2 1/2 inch diameter x 1/8 inch thick.

4 tablespoons wheat germ
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons nonfat dry milk powder

Steps:

  • Combine the dry ingredients, and then cut in the butter so that the mixture resembles breadcrumbs.
