BACON-WRAPPED CHICKEN IN THE OVEN
Chicken wrapped in bacon... Goes well with corn, probably other vegetables or bread, too.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
- Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
- Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Serve topped with parsley.

- Preheat oven to 425°F. Line two rimmed baking pans with aluminum foil and top with metal rack. (I used two jellyroll pans and topped each with a cooling rack the same size)
- In large plastic zipper bag, dump in all the herbs and spices. Close bag and shake to blend.
- Place each chicken tender in the zipper bag, close, and shake bag to coat the chicken in the spice blend. Once coated wrap in bacon being sure to tuck in the ends and then place on rack in prepared pan.
- Bake for 35 minutes at 425°F. Bacon should be crispy. If bacon isn't crispy, you can place each pan under the broiler for a minute or two.

- Fill a large bowl with warm water and a couple tablespoons sea salt. Add the chicken breast tenderloins (making sure the water covers them). Set aside to brine for at least 10 minutes.
- Meanwhile, preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with foil (greased lightly) or parchment paper.
- Remove the chicken from the water and pat dry. Place a piece of cheese over each piece of chicken. Wrap the two together in a slice of bacon. Place on the baking sheet, with the cheese side facing up. Repeat with the remaining chicken, cheese, and bacon.
- Bake for about 13-16 minutes, until the chicken is cooked through. Place under the broiler for a couple of minutes to crisp up the bacon.

- Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on top of a rimmed baking sheet.

- Preheat the oven to 375 degrees F. Heat the olive oil in a medium skillet over medium heat. Add the onion and cook, stirring, until golden brown, about 6 minutes. Stir in the garlic and cook 30 seconds more. Remove the pan from the heat and add the cream cheese, chives and Worcestershire sauce and stir until evenly combined. Season the filling with salt and pepper.
- Halve each chicken breast horizontally, leaving it attached at one side so it opens like a book. Sprinkle the chicken with salt and pepper, then divide the filling among the breasts, spreading it evenly on the inside of each. - Set a cooling rack in a rimmed baking sheet and transfer the chicken breasts with the bacon seam-side down to the rack. Bake until the chicken is almost cooked through and an instant-read thermometer inserted in the middle of each breast reads 155 degrees F, about 35 minutes. Heat the broiler and broil the breasts until the bacon turns golden brown and crisp, about 5 minutes. Serve hot.

Steps:
- Heat Foreman Grill (you may pan-fry also).
- Sprinkle Cajun Seasoning generously on both sides of chicken.
- Wrap a slice of bacon around each chicken tender.
- Grill on the Foreman for 4 minutes (or pan fry 4 minutes each side).
- In a separate pan, saute your onion and bell pepper in the 2 T butter.
- Place chicken on top of sauteed vegetables.
- Cover and cook on med/lo for 20 minutes.
- Uncover (careful to watch for steam) and smother with the cheese.
- Cover and cook 10 additional minutes.
- Sprinkle with green onions.
