A recipe for 'Otai (Tongan Watermelon Drink)! Shredded watermelon is combined with crushed pineapple and coconut for a light and refreshing drink.

2.3 pounds (1 kg) shredded, seedless watermelon (around 5 cups )
20 ounces (567 grams) canned crushed pineapple with juice
1/2 cup (50 grams) shredded fresh coconut
13.5 ounces (400 milliliters) canned coconut milk
2-3 cups (473-710 milliliters) water
3 tablespoons (40 grams) granulated sugar (to taste)

Steps:

  • In a large bowl, combined the shredded watermelon (use a fork, large-holed grater, or melon scraper to shred) with the crushed pineapple and juice, shredded coconut, and coconut milk.
  • Mix in 2-3 cups water to desired consistency. Stir in sugar to taste.
  • Serve chilled with crushed ice if desired.

''Otai' is a fruit drink which originated in Tonga and is usually made as a summertime refreshment. It is a blend of water, coconut milk, and any variety of pulped tropical fruit such as coconut, watermelon, mango, and pineapple but is almost always watermelon as it is plentiful in Tonga. A small amount of sugar may be added, although the recipe is considerably sweet on its own. I lived in Sydney many moons ago and the Polynesian families drank this by the gallons in the summer. Soooo refreshing and yummy! Serve over ice cubes.

1 seedless watermelon, halved and sliced
3 cups water
1 (15.25 ounce) can crushed pineapple
1 (12 fluid ounce) can evaporated milk
½ cup shredded coconut
2 tablespoons white sugar, or to taste
½ lime, juiced

Steps:

  • Grate watermelon with a fork from the rind into a large bowl, leaving no large chunks. Stir water, pineapple, evaporated milk, and coconut into the grated watermelon. Add sugar; stir until dissolved. Squeeze lime juice into the watermelon mixture.

1 pineapple
1/4 medium watermelon
1 coconut, fresh
2 tablespoons sugar, more to taste
1 cup water

Steps:

  • Grate the pineapple into a large container.
  • Finely chop the watermelon, or scrape the melon and the juice into the pineapple.
  • Sprinkle with sugar.
  • Add the fresh coconut flesh directly to the fruit or by making a rich coconut cream from the grated coconut and adding the cream to the fruit juices.
  • Dilute with the water.
  • Chill and serve.

  • Place watermelon in a large bowl and mash or grate until mostly liquid but still some small chunks remain. Add in the rest of the ingredients except simple syrup and mash a little more, stir well. Taste and add simple syrup if a more sweet drink is desired then chill 30 min then serve over ice
  • My way. The lazy way. Add all the ingredients except simple syrup to a blender ad pulse until blended but still chunky - you don’t want a thin puree. This drink has texture to it. Taste and add in some simple syrup and pulse for a few more seconds taste again and add more sweetener if desired. Chill for about 30 min then serve over ice.
