ORZO PASTA WITH PEAS AND ANNATTO SAGE SAUCE
This is a delicious and very different pasta dish, inspired by the African cuisine. Created by chef Keith Famie.

Steps:
- Soak the mushrooms in warm water for 30 minutes. Drain and discard the liquid.
- Heat a saute pan over medium heat. Add the cream and simmer for 3 to 4 minutes. Stir in the annatto powder and sage. Continue to simmer the cream sauce for another 2 minutes. Season the annatto-sage cream sauce with salt and pepper. Keep warm.
- In a different saute pan over medium heat, saute the drained mushrooms in the butter until golden brown and tender, about 4 to 5 minutes. Add the blanched peas, sundried tomatoes and orzo to the pan. Toss all the ingredients until hot. Stir in the annatto-sage cream and the grated cheese. Stir in the chopped parsley. Serve!

Steps:
- Preheat the broiler.
- Bring a small pot of water (with a lid) to a boil (about 5 minutes).
- Add asparagus and orzo to the pot.
- After 3 minutes, remove only the asparagus and continue cooking orzo according to package instructions (usually about 6 minutes).
- While orzo cooks, season 5 oz. salmon filet with salt and pepper and broil for 5 minutes, or until opaque throughout.
- Meanwhile, whisk together feta, dill, lemon juice, olive oil, and pepper to taste.
- Flake the fish and toss together all ingredients.

ORZO WITH PEAS AND MINT

- Cook orzo according to package directions. Melt butter in a medium saucepan over medium heat. Add shallot and lemon zest, and saute until translucent.
- Add peas, and cook until bright green and tender, adding a little water if shallots brown before peas are tender.
- Add cooked orzo, season with salt and pepper, and toss to combine. Remove from heat, and stir in mint.
PESTO ORZO WITH PEAS
Orzo, or Rosamarina, is a rice-shaped pasta that cooks quickly. Adding the peas and pesto gives it a nice flavor. It makes a nice side dish to grilled chicken, oven-baked pork chops or anything you can think of.

- Cook pasta according to package directions until al dente (tender but still firm). Drain.
- Toss with 1/2 teaspoon olive oil; set aside.
- Heat remaining 3 tablespoons olive oil in large skillet over medium heat until hot. Add garlic; cook and stir 2 to 3 minutes or until golden.
- Add shrimp; cook and stir 3 to 5 minutes or until shrimp are opaque (do not overcook).
- Stir in pasta, tomatoes, cilantro, parsley and lemon juice continue to cook until all is heated through.
- Sprinkle with feta cheese. Season to taste and serve.

- First what you have to do is cook your orzo for about 10 minute Get the water to a boil then through in the pasta. To find out when its ready throw a piece of orzo at the kitchen wall if it sticks it's ready! If it falls cook it some more!
- Next pour about 2 cups of orzo through a drainer. Make sure all the water is out of there, next put it in a bowl and get ready for making the Alfredo sauce and the shrimp!
- To cook the shrimp all you need to do is boil as many as you need for about 7 min till they are the color red!
- Once the shrimp are done, follow the directions on the packet of the Alfredo sauce mix. Once that is done add everything together, mix it well and bon appetit!

- Cook orzo according to package directions; drain. Set aside.
- Remove and discard broccoli leaves and tough ends of stalks. Wash broccoli thoroughly and coarsely chop. Cook broccoli in a small amount of boiling water 8 minutes or until crisp-tender. Drain well.
- Cook pine nuts in olive oil in a small skillet over medium heat 2-3 minutes or until browned, stirring often. Add red pepper; cook 1 minute, stirring constantly.
- Combine orzo, broccoli, pine nuts, feta cheese and remaining ingredients in a large bowl; toss gently. Serve immediately.

- Heat the butter and olive oil in a pan over medium heat. Add the onions and cook, stirring often, for 3-4 minutes. Add the garlic and orzo, cook, stirring constantly, for 1-2 minutes.
- Add the chicken broth, season with sea salt and freshly cracked pepper, then cook uncovered, stirring occasionally, until the broth is absorbed. Add the frozen peas and Parmesan cheese then stir until evenly combined; let the orzo cook for 1-2 minutes or until the peas are cooked & the Parmesan is melted. Serve immediately. Enjoy.
