ASIAN SWEET CHILI CHICKEN

Asian Sweet Chili Chicken is so crispy, sticky, sweet, slightly spicy and completely addicting you won't even miss your favorite Asian takeout.

2 egg whites
1 cup all-purpose flour (sifted)
1/2 cup cornstarch
1 teaspoon baking powder
1 cup water (ice cold)
2 tablespoons canola oil
1 pound chicken thighs (boneless-skinless and cut into 1 inch pieces)
canola oil for frying
1 tablespoon oil
3 cloves garlic (minced)
3 green onions (sliced thinly, tip to tail not including the root)
1/2 cup Thai sweet chili sauce
1/2 teaspoon crushed red pepper
white sesame seeds
minced green onions

Steps:

  • Mix together the batter ingredients in a large bowl.
  • Heat a frying pan up with oil deep enough to fry your chicken pieces without them touching the bottom of the pan, a couple inches should be enough space.
  • Using a slotted spoon drain the batter as much as possible and slide the chicken into the pan.
  • Break apart the chicken after the crust starts to form and cook until the chicken is golden brown (4-5 minutes)
  • Work in batches to prevent the oil from dropping too far in temperature.
  • Remove the last batch of chicken from the pan and discard almost all the oil, leaving just a couple of tablespoons in the pan.
  • Add the garlic and green onions to the pan and cook it on medium heat for 20-30 seconds.
  • Add the chicken back in along with the sweet chili sauce and crushed red pepper.
  • Toss to combine and serve immediately.
  • Garnish with sesame seeds or green onions if desired.

1 medium carrot, diced

1 can (13.66 ounces) light coconut milk
1 tablespoon red curry paste
3/4 teaspoon salt

1 cup frozen shelled edamame, thawed
2 cups fresh baby spinach
1 green onion, minced
1/2 teaspoon grated lemon zest
Fresh cilantro leaves
Dry roasted peanuts

Steps:

  • In a large saucepan, heat sesame oil over medium heat. Add chicken, carrot and celery; cook and stir until vegetables are slightly softened, 3-4 minutes. Add ginger and garlic; cook 1 minute more., Stir in tomatoes, coconut milk, curry paste, salt and pepper. Bring to a boil. Reduce heat; simmer, covered, 10 minutes. Add edamame; cook 5 minutes more. Stir in spinach, green onion and lemon zest until spinach wilts. Remove from heat; top with cilantro and peanuts.

2 chicken breasts
1 teaspoon salt
½ teaspoon pepper
1 egg, beaten
¾ cup flour
1 green pepper, sliced
1 red pepper, sliced
rice, to serve
3 cloves garlic cloves, crushed
1 red chilli, chopped
3 tablespoons soy sauce
2 tablespoons tomato puree
½ cup water

Steps:

  • Season the chicken with salt and pepper.
  • Cut the chicken into thin strips then coat in the egg wash and flour.
  • Shallow fry for a few minutes on each side, until golden brown.
  • Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
  • In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
  • Add back in the chicken and peppers and stir well in the sauce.
  • Serve with rice.

A fresh, light Oriental stir-fry which is low in fat and ready in 10 minutes - fresh and light after rich festive fare

1 tbsp olive oil
375g packet diced (uncooked) chicken breast
1 red pepper
half a bunch of spring onions - about 6
half a 250g packet of rice noodles
½ tsp red chilli spice blend (chopped fresh chilli in a tube) or a small pinch of crushed chillies (from a jar)
3 tbsp soy sauce , preferably dark
1 tbsp clear honey
5 Savoy cabbage leaves
a small handful of fresh coriander , about half a pack

Steps:

  • Put a kettle of water on to boil. Meanwhile, heat the oil in a wok, tip in the chicken and give it a good stir. Leave it to cook over a high heat while you quarter, seed and slice the pepper. Throw the pepper into the wok when it's ready and stir. Quickly trim the roots from the spring onions (hold them as a bunch and slice off in one go), then cut off the bulbs with a generous length of stem (don't throw away the green leaves). Add the onion bulbs to the pan and stir - by now the chicken should be starting to turn from pink to white.
  • Pour boiling water over the rice noodles in a bowl and leave to soak.
  • Spoon the chilli, soy and honey into the wok, then continue cooking while you slice the cabbage into thick strips - slice them as a stack and remove the white spines first if they're tough. Pile on top of the chicken, cover and cook for a minute or so more while you slice the reserved spring onion leaves and roughly chop the coriander. Toss these into the wok and stir well. Serve with the drained rice noodles.

A change of pace for you chili lovers. This is something I've developed over the years as a way to use up hoisin sauce. Can be made in crock pot...just throw everything in and cook on low for 6 hours. This makes very thick chili, if you like it thinner, just add water or broth.

1 onion, chopped
2 scallions, chopped
1 red pepper, chopped
3 garlic cloves, minced
1 tablespoon sesame oil
1 lb lean ground beef, browned (can sub turkey or even chicken if desired)
2 tablespoons fresh ginger, minced
1 teaspoon Chinese five spice powder
1/4 cup dry sherry
1/4 cup hoisin sauce
2 tablespoons chili powder
2 tablespoons soy sauce
2 tablespoons thai style chili sauce
1 teaspoon Splenda sugar substitute or 1 teaspoon sugar
1 (15 ounce) can diced tomatoes
1 (16 ounce) can red beans, drained and rinsed
1/2 cup tomato sauce

Steps:

  • Sautee onions, red pepper and garlic in sesame oil until tender (about 5 min).
  • Add remaining ingredients,bring to a boil.
  • Reduce heat and simmer for 1 hour.

  • Heat a saute pan with olive oil. Place chicken and brown both sides. Add green pepper and onion strips, put a lid and cook until chicken is heated through and the onion and pepper strips become tender.
  • Add the seasoning mixture and cook until heated through.
  • Serve immediately.

1 medium zucchini, diced

Steps:

  • In a large skillet, cook sausage in oil over medium heat until no longer pink; drain. , Transfer to a 5-qt. slow cooker. Stir in the chicken, tomatoes, beans, celery, onion, red pepper, wine or broth, chili powder, oregano, garlic and thyme. This is one of our favorite quick and easy stir fry chicken dishes with a slight kick, lots of flavor too. It's about a medium spice.You can easily adjust the heat to your taste. I use boneless thigh fillet because I find the breast is a little dry in this.

8 chicken thigh fillets
1 onion
1 green pepper
1 jalapeno pepper, finely chopped (to taste)
2 garlic cloves, grated
1/4 teaspoon ground ginger, you can use fresh grated

1 cup chicken broth or 1 cup vegetable broth
2 tablespoons soya sauce
2 tablespoons sherry wine

Steps:

  • Grate or finely chop the garlic.

  • Add the chicken, onion, peppers, chilli, garlic, and ginger.
  • Fry for about 5 minutes on high heat.
  • Add the remaining ingredients to the pan and continue cooking about 10-15 minutes until most of the liquid has evaporated and the chicken has cooked through.
  • Serve with rice or Chinese noodles.

Steps:

  • Stir the soy sauce, tomato paste, tomato sauce, chili sauce, vinegar, sugar and black pepper together in a small bowl, then set aside.
  • Put the chicken strips in a large bowl with the cornstarch, turmeric and salt and mix well.
  • Heat the oil in a large frying pan or wok over a medium heat. Add the chicken pieces and fry, stirring occasionally, for 5 minutes, with a slotted spoon and set aside.
  • Tip the garlic and onion into the oil remaining in the pan and fry, stirring for 3 minutes.
  • Add the green chili and fry for 1 minute. Return the chicken pieces to the pan and fry for a further 1 minute.
  • Stir in the spicy sauce mixture and stir for 2 minutes, or until the chicken pieces are cooked through. Check by cutting into a piece of chicken - the juices should run clear.
  • Serve hot topped with the onion slices and sliced green chilies.

Stir fry for a minute more, then serve, garnished with the reserved chillies (if using), and rice.
