This is a salad that even non-cabbage eaters love. It is nice and crunchy with great flavor. I once took it to a potluck in my apartment complex and then had to put the recipe up on the bulletin board because everyone wanted the recipe!

2 -3 cups chopped cooked chicken breasts (depending on the amount of chicken you like)
1 head cabbage, shredded or chopped
1 bunch green onion, finely chopped (or to taste)
2 (2 1/2 ounce) packages slivered almonds
3 tablespoons sunflower seeds
2 packages Top Ramen noodles or 2 packages other ramen-type soup
3 tablespoons oil
3/4 cup vegetable oil or 3/4 cup canola oil
4 1/2 tablespoons seasoned rice vinegar
4 1/2 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Prepare dressing and set aside.
  • Smash noodles of Top Ramen (discard seasoning packets) and brown over medium heat in 3 tbs oil.
  • Once noodles have begun to slightly brown, add slivered almonds.
  • If you start to brown the Ramen and almonds at the same time, the almonds will burn before the Ramen browns.
  • Once the ramen noodles have turned a dark golden brown, remove from heat and set aside.
  • Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.
  • Add the ramen/almond mixture and stir well.
  • Add dressing and stir to coat.
  • I generally prepare the dressing right before serving.
  • If it sits in the refrigerator too long, it gets very thick and won't remix well.
  • Also, this amount of dressing is just the right amount to give the salad a good coating.
  • If you are one of those who likes more dressing, I would recommend making 1/2 batch of extra dressing.
  • If you plan on eating this left over, keep in mind that the noodles will not stay crunchy.

1/2 Napa cabbage, thinly sliced
1 c. julienned carrots
1/4 c. cilantro, roughly chopped
1 lemon, juiced
1/4 c. red wine vinegar
1/4 c. soy sauce
2 heaped tsp. honey
1-inch piece of ginger, peeled + grated (I use a microplane)
1 tsp. salt
1/2 tsp. freshly ground black pepper
3/4 c. olive oil
1/2 c. chopped cashews
sesame seeds

Steps:

  • In a small skillet, add the cashews and toast gently over low heat. Transfer to a cutting board to cool. Chop into bite-sized pieces and set aside for garnish.
  • To make the vinaigrette, add the first 7 ingredients to a bowl and whisk well to combine. Slowly add the the olive oil and continue whisking to emulsify.
  • Remove both breasts from the chicken and thinly slice (or shred with your hands). Save the rest of the chicken for another use.
  • To a large bowl, add the cabbage, carrots, cilantro and chicken.
  • Add a small amount of vinaigrette and toss well. Taste the salad, and add more vinaigrette if desired.
  • Garnish with chopped cashews and sesame seeds.
  • Serve at room temperature.

2 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp pepper

1/2 cup grated carrots (roughly 1 large carrot)
1/2 cup shelled edamame
3 green onion (whites and light green), thinly sliced
4 oz ramen noodles, broken into pieces
1/4 cup chopped almonds
2 tbsp sesame seeds
optional: handful of fresh cilantro, chopped
3 tbsp olive oil
1 1/2 tbsp honey
2 tbsp rice wine vinegar
1 1/2 tsp freshly grated ginger

Steps:

  • Marinate chicken in combination of soy sauce, hoisin sauce, sesame oil and pepper in a large bowl for 30 minutes.
  • Preheat oven to 350 degrees F.
  • Bake chicken (with any remaining marinade juices) in a shallow dish for 15-20 minutes or until chicken runs clear
  • Remove from oven and let sit for 5 minutes before cutting into strips.
  • Heat a skillet over medium-high heat and add almonds. Cook for about 2 minutes and then add ramen noodles to toast for another 2 minutes or starting to brown. Add sesame seeds and cook for 1 more minute or until everything is lightly browned.
  • Combine cabbage, carrot, edamame and green onions in a large salad bowl.
  • Add almonds, noodles and sesame seeds to salad.
  • Combine all dressing ingredients.
  • Top salad with chicken, cilantro (if using) and desired amount of dressing. Mix well.
  • Salad keeps in the fridge for 2-3 days. Will keep longer if you reserve dressing for before serving.

1 red bell pepper, cored and thinly sliced lengthwise

2 cups (about 4 ounces/115 grams) bean sprouts
One 8-ounce/227-gram can sliced water chestnuts, coarsely chopped

2 large navel oranges
2 tablespoons hoisin sauce
2 tablespoons rice wine vinegar

Steps:

  • For the salad: Remove the skin from the chicken and shred the meat with a fork. Toss in a large bowl along with the scallions, red pepper, cabbage, lettuce, bean sprouts, water chestnuts, cilantro, peanuts and chow mein noodles. With a sharp knife, cut the peel from one of the oranges, then cut the segments away from the membranes. Coarsely chop the segments, then add them to the bowl. Slice the other orange in half and squeeze over a small bowl, reserving 2 tablespoons juice.
  • Make the dressing: Whisk together the reserved orange juice, hoisin sauce, vinegar, ginger and garlic in a small bowl. 4 large garlic cloves, minced

5 1/4 cups sliced Napa or green cabbage
4 1/4 cups sliced red cabbage
2 cups sliced mushrooms
1 1/2 cups grated carrots

  • Bring broth to simmer in heavy large skillet over medium heat. Add chicken and simmer until just cooked through, about 7 minutes. Transfer to work surface to cool. Add snow peas to broth and cook until tender, about 3 minutes. Using slotted spoon, transfer peas to bowl of cold water. Drain. Set aside.
  • Boil broth until reduced to 1/3 cup, about 7 minutes. Transfer to bowl; cool.

Cook until chicken is fully cooked and register 375 on an instant read thermometer on thickest part of thigh. Once cooked, set chicken aside. When cool to handle dice or shred to add to salad.
  • To assemble salad, in a wide salad bowl add all chopped salad ingredients: cabbage, carrot, bell pepper, and red onion. Add half of remaining dressing. Add generous pinch of salt and black pepper. Gently fold salad in dressing to coat everything evenly.
