"Looking for something sweet and all natural? I made this for my husband's birthday and we all fell in love with it. I used only all natural or organic ingredients. I don't use the nuts however, I've included them in the recipe because I know a lot of people enjoy them. Excellent with whipped cream or vanilla frosting! Both home made of course."

1/2-1 cup organic unbleached cane sugar (depending on how sweet you want it)
1 cup extra virgin olive oil
2 organic eggs
2 teaspoons organic real vanilla
2 cups organic whole wheat flour
1 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon
4 cups finely chopped organic apples
1/4-1/2 cup organic brown sugar
1 cup walnuts (optional) or 1 cup pecans (optional)

Steps:

  • Beat sugar, oil and eggs.
  • Add vanilla, soda, salt, nutmeg, cinnamon, and apples. Mix, then stir in flour and (optional) nuts.
  • Put in greased 9x13 pan.(Be sure to flour your pan also if using a bundt pan.).
  • Top with brown sugar.
  • Bake for 40 mins - 1 hour (depending on your pan)or until toothpick comes out clean.

Make this apple and almond cake to fill your cake tin. It's an ideal treat for anyone following a dairy-free or vegan diet, and is delicious for afternoon tea with a cuppa

150g dairy-free spread, melted, plus extra for the tin
300ml oat milk
1 tbsp lemon juice
350g self-raising flour, plus 1 tbsp to coat the apples
100g caster sugar
100g light brown soft sugar
1 tsp baking powder
1 tsp almond extract
300g Granny Smith apples, peeled, cored and chopped into 2cm cubes
2 tbsp flaked almonds

Steps:

  • Use the spread to butter a 20cm deep cake tin and line with baking parchment. Heat the oven to 180C/160C fan/gas 4. Pour the oat milk into a jug, add the lemon juice and leave to sit for 5 mins at room temperature.
  • Put the flour, both sugars and the baking powder in a large bowl, pour over the thickened oat milk mixture and almond extract, then add the butter and ½ tsp salt. Beat everything together using an electric whisk. Tip the apples into a second large bowl, sprinkle over the extra 1 tbsp flour and toss to coat. Fold the apples through the cake batter using a spatula, then spoon the mixture into the prepared tin and sprinkle over the almonds.
  • Bake in the centre of the oven for 1 hr-1 hr 20 mins, or until golden and firm to the touch. Leave to cool for a few minutes in the tin. Serve warm, or turn out onto a wire rack and leave to cool completely. Once cool, will keep in an airtight container for up to three days.

  • Preheat the oven to 325°F and adjust rack to middle position. Stir together honey, eggs, oil, coconut milk, almond flour, coconut flour, gelatin, baking soda, sea salt, cinnamon and vanilla in a large bowl. Fold in apples, coconut and pecans (if using).
  • Pour the batter into a buttered bundt pan. Bake for 1 hour until cake tester comes out clean and cake is a deep golden brown.
  • Place butter, honey, coconut milk, lemon juice and baking soda in a medium pan over medium heat. Bring to a boil and boil for 1 minute. As soon as the cake comes out of the oven, pour butter mixture over hot cake (you might need to do this in 2 stages, as it can take a few minutes for the sauce to soak into the cake). Let the cake stand for 1 hour and then invert it onto a cake stand. Serve warm or at room temperature.
  • The cake freezes very well. To freeze, place in an airtight container and place in the freezer for up to 3 months.
