This is one of my favorite recipes during the week cause it's so quick and easy. It is basically ready as soon as the spaghetti is cooked al dente. If you'd like a vegetarian version, just leave off the smoked salmon.

1 (16 ounce) package spaghetti
1 cup heavy whipping cream
1 tablespoon butter
2 cloves garlic, minced
1 bunch fresh flat-leaf parsley, chopped
1 lemon, zested and juiced
1 pinch salt and freshly ground black pepper to taste
2 (3 ounce) packages smoked salmon, flaked
1 tablespoon freshly grated Parmesan cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Combine cream, butter, and garlic in a small pot while spaghetti is cooking and heat over low heat until hot. Stir in parsley, lemon juice, and lemon zest. Season with salt and pepper. Heat until cream sauce is heated through but not boiling.
  • Drain spaghetti and place into a large bowl with cream sauce. Stir in smoked salmon and serve immediately with freshly grated Parmesan cheese.

3 tablespoons butter
1 tablespoon olive oil
2 cloves garlic ( minced)
1/2 cup chicken or veggie broth
1/2 cup dry white wine
juice from 1/2 a lemon
1/4 cup heavy cream
6 ounces smoked salmon (torn or chopped into small pieces)
kosher salt and black pepper (to taste)
for serving: fresh dill and fresh parsley

Steps:

  • Boil a large pot of water and add a generous pinch of salt. Cook pasta just to al dente, according to package directions.
  • While the pasta cooks, prepare the sauce. Add butter and oil to a large skillet set over medium-high heat.
  • When butter is melted, add garlic and cook for about 30 seconds, just until fragrant.
  • Add broth, wine, and lemon juice to the pan. Cook until the sauce is reduced by about half, about 4 minutes.
  • Stir in the cream and let the sauce cook for 1 minute more, just to warm it through. Remove pan from the heat, stir in the salmon pieces, and season lightly with salt and pepper.
  • Drain the pasta and add it to the skillet, stirring gently to coat with the sauce. For a pop of color and flavor, sprinkle with chopped fresh dill and parsley. Serve right away. Enjoy!

16 ounces salmon, skin removed and diced to about ½ inch
1 tablespoon all-purpose flour
3 tablespoons butter
1 tablespoon minced fresh garlic
2 tablespoons finely diced onion
½ cup sliced fresh mushrooms
¼ cup white wine
¾ cup heavy cream, at room temperature
¼ teaspoon salt
¼ teaspoon pepper
½ cup frozen peas
1 tablespoon chopped fresh parsley

Steps:

  • Cook the pasta in a large pot of salted boiling water according to package instructions. Drain.
  • While the pasta boils, prepare the sauce. Toss the salmon in flour.
  • Melt butter in a large skillet or Dutch oven over medium-high heat. Add salmon and saute for 1 minute. Add garlic, onion, mushrooms, salt and pepper. Cook until garlic is golden and mushrooms are tender, about 5 minutes. Stir in white wine, scraping the browned bits from the bottom of the skillet as you stir.
  • Reduce the heat to medium-low and simmer until the sauce is reduced by half. Add cream and reduce to a medium consistency. Stir in frozen peas and cook for 1-2 more minutes, or until heated through. Remove from heat.
  • Add cooked pasta to the skillet and toss to coat. Taste and season with additional salt and pepper, if necessary. Garnish with fresh parsley and serve.

4 5-ounce salmon fillets (see notes)
1 tablespoon cooking oil (we like avocado oil)
⅓ cup heavy cream or cashew cream (see notes)
Minced parsley (to serve)
1 tablespoon paprika
1 ½ teaspoons EACH: onion powder and garlic powder
½ teaspoon EACH: thyme, oregano, salt, pepper, and cayenne (see notes)

Steps:

  • Mix the seasoning ingredients together in a small bowl. Reserve about ½ tablespoon of the seasoning then sprinkle the remaining evenly over the top of the salmon.
  • Heat the oil in a large nonstick pan over medium-high heat. Add the salmon to the pan, top side facing down. Cook for 5 minutes, or until the side of the salmon that is facing the pan is well-browned (blackened). Flip the salmon over and continue to cook for another 3-4 minutes, or until the salmon is fully cooked. It should reach an internal temperature of 140 degrees Fahrenheit. Remove the salmon from the pan.
  • Add the cream and the reserved ½ tablespoon of cajun seasoning to the pan. Simmer for about 1 minute, or until the cream reduces slightly. Serve the salmon with the cajun cream sauce poured over the top and a little minced parsley for color.

2 cloves garlic, finely chopped
2 shallots, finely chopped
200 ml white wine
200 ml double cream
1/2 grated lemon, zest of
2 tablespoons lemon juice
2 tablespoons chopped fresh chives
200 g smoked salmon, slices cut into strips
500 g pasta (eg. fettuccine, linquini, tagliatelle)
salt, black pepper
4 teaspoons salmon roe (optional)
1/4 cup chopped fresh flat leaf parsley

Steps:

  • Melt butter in a large frying pan over medium low heat.
  • Add shallots and garlic and cook, stirring occasionally, until soft, 5 minutes.
  • Add wine and simmer until reduced by half, 3 minutes.
  • Add cream, lemon zest and juice, chives and salmon.
  • Heat over medium low heat, without boiling, until hot through, 1 minute.
  • Add salt& pepper to taste.
  • Meanwhile, cook pasta, drain, reserving 1/2 cup pasta water.
  • Add pasta to the sauce.
  • Toss well to coat, adding reserved water as needed.
  • Stir through chopped parsley, if using.
  • Top with Salmon roe, if using.

1/3 cup chopped fresh Italian parsley
2 tablespoons chopped fresh thyme
4 ounces smoked salmon, cut crosswise into 1/4-inch strips

Steps:

  • Boil wine in medium saucepan until reduced to 3/4 cup, about 8 minutes. Remove wine from heat and whisk in crème fraîche.
  • Meanwhile, cook pasta in large pot of boiling salted water until almost tender but still firm to bite, stirring occasionally. Add sugar snap peas or edamame to same pot and cook until peas are crisp-tender, about 2 minutes. Drain pasta and peas, then return to pot.

Boil until mixture is reduced to 1 1/2 cups, about 4 minutes. Transfer mixture to blender. Blend until parsley is finely minced. Pour sauce into strainer set over bowl; press on solids to extract as much liquid to same saucepan and boil until sauce coats spoon, about 3 minutes.
