Almost every square inch of this cheesecake contains an over-the-top bite of your favorite sandwich cookie. Not only are they in the crust and filling, we even make Oreo truffle balls to decorate the top.

One 14.3-ounce package chocolate sandwich cookies, such as Oreos®
1 stick (8 tablespoons) unsalted butter, melted
Four 8-ounce packages cream cheese, at room temperature
1 cup sugar
1 cup sour cream
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
2 cups chocolate sandwich cookies, such as Oreos® (about 18 cookies), roughly chopped
14 chocolate sandwich cookies, such as Oreos®
2 ounces cream cheese, at room temperature
1/2 cup chocolate sprinkles
1/2 cup hot fudge sauce, warmed

Steps:

  • For the crust: Position an oven rack in the middle of the oven and preheat to 325 degrees F.
  • Place the cookies in a large resealable plastic bag and crush until fine crumbs form but there are still a few larger chunks. Pour in the butter, reseal the bag and shake until the cookies are well coated.
  • Firmly press the cookie mixture into the bottom of a 9-inch springform pan (use the bottom of a measuring cup to help pack it in and make it even). Bake until crisp and set, 10 to 12 minutes. Let cool completely, about 30 minutes. Wrap the bottom and sides of the pan with a large piece of foil and put it in a large roasting pan.
  • For the filling: Beat the cream cheese and sugar together in a large bowl with an electric mixer on medium speed for 1 minute. Add the sour cream and beat until just combined. Mix in the eggs by hand, one at a time. Mix in the vanilla by hand until just combined. (Take care not to overmix or the cheesecake will puff up and crack).
  • Pour half of the batter into the springform pan. Sprinkle the chopped cookies over the top and gently press down on them so some sink into the batter. Pour the remaining batter on top. Add enough hot water to the roasting pan to come about halfway up the side of the springform pan.
  • Bake until the outside of the cake is set but the center is still slightly loose, about 1 hour. Turn the oven off and leave the cheesecake in the oven for another hour. Remove the cheesecake from the roasting pan to a cooling rack. Run a knife around the edge and cool to room temperature. Cover and refrigerate at least 8 hours.
  • For the topping: Pulse 9 of the cookies in a food processor until fine crumbs form. Add the cream cheese and pulse until incorporated and sticky enough to form a ball. Scoop out 1 tablespoon and form into a ball, then roll the ball in the sprinkles until completely covered. Place on a baking sheet and repeat with the remaining cookie mixture and sprinkles for 9 balls total. Refrigerate until ready to use. Cut the remaining 5 cookies in half.
  • Run a knife around the edge of the pan once more and open the clasp to unmold the cheesecake. Transfer to a serving plate or cake stand and smooth the edges with a knife. Drizzle the hot fudge sauce all over the top and sides of the cake, and use an offset spatula to spread it evenly, letting some drip over the sides. Make a decorative ring around the edge of the cheesecake with the cookie balls. Place a cookie half cut-side down in between each ball. Serve cold.

1 1/2 cups Oreo cookie crumbs (about 18 to 23 cookies finely chopped)
2 tablespoons melted butter
1 1/2 lbs cream, cheese-24 ounces (3 blocks of cream cheese)
1 cup sugar
5 large eggs
1/4 teaspoon salt
2 teaspoons vanilla
1/4 cup all-purpose flour
8 ounces sour cream
5 Oreo cookies (coarsely chopped for the batter)
7 -9 coarsely chopped Oreo cookies, for the top of cheese cake

Steps:

  • Mix melted butter with Oreo crumbs and press in the bottom of a greased 9 inch springform pan. Cover bottom and 1/2-1 inch up the sides with crumbs. Refrigerate for 15 minutes.
  • All ingredients need to be at room temperature before beginning.
  • Beat cream cheese until light and fluffy.
  • Keep mixer on a low setting during the mixing and beating process.
  • Add sugar gradually and continue beating cream cheese until mixed through.
  • Add eggs one at a time and continue to beat until blended.
  • Stir vanilla, salt and flour into cream cheese and egg mixture.
  • Add the sour cream.
  • Turn off the mixer and gently stir in the 5 coarsely chopped Oreo cookies with a spoon.
  • Pour mixture into springform pan; top with the 7-9 remaining coarsely chopped cookies.
  • Place pan on top rack and in the middle of a preheated oven at 325 degrees and bake for 60- 75 minutes or until it jiggles slightly in the middle when the pan is gently shaken.
  • Turn off the oven, prop the door open several inches and let the cheese cake stay in the oven for one hour.
  • Cool on wire rack.
  • When cool, refrigerate for 24 hours.

  • 1.Preheat oven to 375.
  • 2.Line a baking sheet with parchment paper, I highly recommend using parchment paper when baking these cookies.
  • 3.In the bowl of a stand mixer with a paddle attachment cream together butter and cream cheese until well combined.
  • 4.Add in sugar and vanilla and mix well.
  • 5.Add in flour one cup at a time, with the mixer on low, until it is just combined.
  • 6.Stir in 1 cup of Oreo crumbles into the cookie mix.
  • 7.Pour remaining Oreo crumbles into a bowl.
  • 8.Roll cookie dough into 1.5" balls then roll into the cookie crumbles, making sure to coat each ball thoroughly (this will help hold the cookie together as it cooks).

2 1/2 cups Oreo cookie crumbs (33 cookies or 213 g)
7 tablespoons (91 g) unsalted butter, melted
24 ounces (675 g) cream cheese, at room temperature
2/3 cup (142 g) sugar
2 teaspoons pure vanilla extract
2 1/4 cups (507 ml) heavy cream
1 1/2 cups (135 g) crushed Oreos (20 Oreos with creme centers removed), plus 1 cup (85 g) for the "secret" layer (see Cook's Note)
4 ounces (115 g) bittersweet chocolate, chopped
1/2 cup (115 ml) heavy cream

Steps:

  • Make the crust: Combine the Oreo crumbs with the melted butter in a medium bowl and mix well. Transfer to a 9-inch springform pan and press over the bottom. Refrigerate while you make the filling, at least 30 minutes.
  • Make the filling: Combine the cream cheese, sugar and vanilla extract in a stand mixer fitted with the whisk attachment. Beat on high speed until smooth and no lumps remain, 3 to 5 minutes. Run a rubber spatula under the mixture to make sure there are no lumps of cream cheese.
  • Pour in the cream and whisk, starting at low speed then increasing to high speed, until the mixture becomes very thick.

  • Make the ganache: Place the cream in a small saucepan and bring just to a simmer over medium-low heat. Pour the hot cream over the chocolate in a medium heatproof bowl and let sit undisturbed to melt the chocolate, about 5 minutes. Whisk until smooth, then let sit at room temperature just until cool but still pourable, about 20 minutes. Pour the ganache over the surface of the cheesecake in the pan and spread it with an offset spatula. Tap the pan against the counter to smooth out the ganache.
  • Refrigerate for at least 8 hours (preferably 12 hours for best results) and up to 2 days. This recipe has no gelatin so it needs longer to set than a regular cheesecake.
  • Run a thin spatula around the cheesecake, then open the springform pan and carefully remove the ring. Place the whipped cream in a piping bag fitted with a large star tip. Pipe whipped cream rosettes around the rim of the cheesecake then top each rosette with a mini Oreo. Enjoy!

I'm posting this in response to a request, so let me know what you think! It suggests to use chocolate bourbon biscuits instead of Oreo cookies if you can't find them. Don't look at the calories! ;)

350 g Oreo cookies, crushed
100 g unsalted butter, melted
800 g cream cheese
4 eggs, beaten
175 g caster sugar
200 ml single cream
350 g Oreo cookies, broken into small pieces
400 g sour cream
2 tablespoons caster sugar
4 tablespoons sour cream
chocolate curls

Steps:

  • Preheat oven to 190°C/375°F/Gas 5.
  • For the base mix the crushed oreos with the melted butter and press firmly into a 14inch (12inch would also work) spring-form cake tin.
  • For the filling, whisk the cream cheese, eggs, and sugar until smooth.
  • Mix in the cream.
  • Pour half of the mixture onto the cake base.
  • Add the broken cookies and press down into the mixture.
  • Pour the rest of the filling on top.
  • Bake in the middle of the oven for approx 25 minutes, the cake edges should look quite set.
  • Take it out of the oven and increase the temperature to 240°C/475°F/Gas 9.
  • Mix the sour cream with the remaining 2 tbsp of sugar and cover the top of the cake with the mixture.
  • Make sure the oven has reached the new higher temperature and then return to bake for exactly 5 more minutes.
  • Take it out of the oven and allow it to cool completely, before spreading the remaining 4 tbsp of sour cream over the top and topping it off by sprinkling on chocolate curls.

Found this yummy recipe from my "Best of the Best from Ohio" cookbook, which is a recipe from the Mon Ami Restuarant and Winery in Port Clinton, Ohio. Nice creamy combination of chocolate and cheesecake!!! (Time doesn't include any refrigeration time) UPDATE: Just made this and the taste is wonderful, but for me I would cook it at a higher temperature for the 50 minutes, like 300, as mine never set up very well, but I followed there directions, maybe it was my oven, but don't think that is the case, maybe an error in the cookbook!!

2 tablespoons butter, melted
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
4 (8 ounce) packages cream cheese, softened
1 1/4 cups granulated sugar
1/3 cup heavy whipping cream
2 tablespoons all-purpose flour
1 1/2 teaspoons vanilla extract
4 eggs
1 1/2 cups Oreo cookies, crushed into pieces
16 ounces sour cream
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 1/2 cups semi-sweet chocolate chips
1 teaspoon vanilla extract
14 -16 whole Oreo cookies

Steps:

  • Crust:
  • Mix 2 cups cookie crumbs, melted butter, brown sugar, and cinnamon in a medium bowl; firmly press mixture evenly into bottom and 1 inch up sides of a 10-inch springform pan.
  • Bake at 350º F. for 5 minutes; set aside.
  • Filling:
  • In a large bowl, beat cream cheese at medium speed of an electric mixer until smooth.
  • Gradually add 1 1/4 cups sugar, beating well.
  • Add 1/3 cup whipping cream, flour, and 1 teaspoons vanilla; beat well.
  • Add eggs, one at a time, beating after each addition.
  • Pour 1/3 of batter into prepared pan.
  • Top with 1 1/2 cups crushed cookie pieces; pour in remaining batter.
  • Bake at 350º F. for 45 minutes.
  • Sour Cream Layer:
  • Combine sour cream, 1/4 cup sugar, and 1 teaspoons vanilla; spread evenly on cheesecake.
  • Bake at 350º F. for 7 minutes.
  • Turn oven off and leave in oven 30 minutes.
  • Remove cheesecake and let cool completely on a wire rack.
  • Chocolate Glaze:
  • Combine 1 cup whipping cream and chocolate chips in a saucepan; stir over low heat until chocolate melts; stir in 1 t vanilla.
  • Pour mixture over cheesecake while still warm.
  • Refrigerate at least 8 hours before serving.
  • Remove about 1/2 hour to 1 hour before serving, remove ring from springform pan.
  • Decoratively place 14-16 whole oreo cookies around edges of cheesecake.
  • Serve chilled.
  • Cook time does not include chill time.

I found this on a blog called "Grace's Sweet Life" and fell in love with the idea of using an Oreo cookie as the "crust" for these tasty individual mini cheesecakes. They're great for birthday parties, baby shower or any time! You can also use mint Oreos and a little bit of mint flavoring and green food coloring to make a Minty Oreo Cheesecake Cup for a refreshing change.

24 whole Oreo cookies
12 Oreo cookies, coarsely crushed
3.667 (8 ounce) packages cream cheese, room temperature
1 cup sugar
1 teaspoon pure vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream
1 pinch salt

Steps:

  • Preheat oven to 275°F
  • Line standard muffin tins with paper liners.
  • Place 1 whole Oreo cookie in the bottom of each lined muffin cup.
  • In the bowl of a stand mixer, fitted with the paddle attachment, beat cream cheese on medium-high speed until smooth, scraping down sides of the bowl as needed. (I've used a hand mixer and it worked fine).
  • Gradually add the sugar, and beat until combined.
  • Beat in the vanilla.
  • Drizzle in eggs, a little at a time, beating to combine and scraping down sides of bowl as needed.
  • Add in sour cream and salt, beat to combine.
  • Using a large spatula, fold in the chopped Oreo cookies.
  • Divide batter evenly among the cookie-filled muffin cups, fill each cup almost to the top.
  • Bake, rotating muffin tins halfway through, until the filling is set, about 22 to 28 minutes.
  • Transfer the muffins tins to a wire rack to cool completely.
  • Refrigerate (in the muffin tins) at least 4 hours (or overnight).
  • Remove from tins just before serving.
  • Garnish with a dollop of whipped cream and some more crushed Oreo cookie if desired.
