ORECCHIETTE PASTA WITH BROCCOLI SAUCE

Orecchiette Pasta with Broccoli Sauce image

Orecchiette Pasta with Broccoli Sauce - a simple vegetarian pasta dish hailing from Tuscany that is easy to make, healthy and oh so delicious!

Provided by Sylvia Fountaine

Categories     vegetarian main

Time 30m

Yield 4

Number Of Ingredients 11

12 ounces broccoli florets- cut or broken into very small florets about equal size (about 6 cups packed)
8 ounces short pasta- orecchiette pasta, penne, rigatoni, etc
3 tablespoons olive oil
1 fat shallot, diced
6 garlic cloves- rough chopped
generous pinch chili flakes ( Aleppo or Urfa biber is nice here)
generous pinch salt and pepper, more to taste
1 teaspoon miso paste (or sub 1-2 mashed anchovies)
2 cups veggie broth or chicken broth
1-2 teaspoons lemon zest
Garnish: grated parmesan or pecorino cheese, lemon zest, truffle oil, fresh basil ribbons, toasted pine nuts, toasted bread crumbs, truffle oil or kalamata olives- all optional.

Steps:

  • Steam small broccoli florets until very tender (easily pierced with a fork)and set aside.
  • Cook the pasta in 8 cups water with 1 tablespoon salt (measure), Save a cup of hot pasta water when you drain.
  • In a large pan, saute the shallot and garlic and chili flakes in the olive oil, over medium heat until fragrant and golden, about 3 minutes. Stir in the miso paste (or anchovy), then add steamed broccoli, salt, pepper and the broth.
  • Bring to a gentle simmer and start breaking apart the broccoli with a metal spatula into tiny pieces. As it cooks it will get easier to break apart. You want the broccoli to basically melt down into a "sauce". Continue simmering gently on low heat until half of the liquid evaporates and it becomes the consistency of a thick sauce, about 10-15 minutes.
  • If it seems watery and separated, just keep cooking it down. It won't be smooth- but just broken down and very very tender.
  • Add the pasta. Toss well. Add more hot pasta water to keep it " saucy." Add the lemon zest.
  • Taste for salt, adjust, adding more along with pepper, chili flakes. If you want more richness add another splash of olive oil (or pat of butter- my husband loves this). Stir in some optional pecorino.
  • Divide among pasta bowls and top with any of the garnishes you like. Grated Parmesan or pecorino adds depth, basil ribbons add flavor, and a drizzle of truffle oil elevates.
  • Enjoy!

Number Of Ingredients 7

5 garlic cloves
1/3 cup extra-virgin olive oil
2 (10-ounces) packages frozen chopped broccoli (do not thaw)
1 cup water
1/4 teaspoon hot red-pepper flakes
1/3 cup grated Parmigiano-Reggiano plus additional for serving
1 pound dried orecchiette pasta

Steps:

  • With food processor running, drop in garlic and finely chop.
  • Cook garlic in oil in a heavy medium saucepan over medium-high heat, stirring occasionally, until golden, about 1 minute. ORECCHIETTE WITH BROCCOLI AND PECORINO

Orecchiette with Broccoli and Pecorino image

Provided by Giada De Laurentiis

Categories     main-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 12

2 broccoli crowns, cut into small florets
1/2 cup extra-virgin olive oil
1/2 teaspoon kosher salt, plus for the pasta water
1 pound orecchiette pasta
1 1/2 teaspoons anchovy paste
5 cloves garlic, smashed
1/3 cup chopped fresh parsley
1/4 teaspoon red pepper flakes
3/4 cup freshly grated pecorino
1 teaspoon lemon zest, from 1 large lemon
1/4 cup golden raisins
1/4 cup pine nuts, toasted

Steps:

  • Preheat the oven to 500 degrees F. Bring a large pot of salted water to a boil over high heat.
  • Spread out the broccoli florets on a rimmed baking sheet and toss them with 1/4 cup of the olive oil and the salt. Transfer to the preheated oven and roast for 10 minutes, stirring halfway through.
  • Meanwhile, add the orecchiette to the boiling water and cook until al dente, 9 to 10 minutes. Drain well, reserving 1 cup of the pasta water for the sauce.
  • While the pasta cooks, heat a large skillet over medium heat. Add the remaining 1/4 cup olive oil, the anchovy paste and the garlic to the hot pan. Cook, mashing up the anchovy paste with a wooden spoon, until the anchovy has dissolved into the oil and the garlic has become softened and aromatic, about 3 minutes. Add the pasta, the roasted broccoli, and the parsley, red pepper flakes, pecorino, lemon zest, raisins and pine nuts to the skillet. Stir well to combine. Add pasta water as needed to loosen the sauce.

ORECCHIETTE WITH BROCCOLI RABE PESTO

Orecchiette with Broccoli Rabe Pesto image

Provided by Anne Burrell

Categories     main-dish

Time 32m

Yield 4 servings

Number Of Ingredients 7

1 bunch broccoli rabe, tough lower stems removed
1/2 cup pistachios, toasted
3/4 cup grated parmigiano-reggiano cheese, plus more for garnish
Kosher salt
1/4 cup part-skim ricotta cheese
1/2 pound orecchiette pasta
High-quality extra-virgin olive oil, for finishing (optional)

Steps:

  • Bring a large pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Cook the broccoli rabe in the boiling water for 1 to 2 minutes and then immediately plunge in the salted ice water. This will prevent the broccoli rabe from being overcooked and will set the lovely green color.
  • Drain the broccoli rabe and squeeze out any excess water; coarsely chop. Place the broccoli rabe in the bowl of a food processor and puree until it is a coarse paste. Add the pistachios and parmigiano and puree until smooth. Taste and adjust the seasoning; you probably will need more salt. Add the ricotta and pulse until combined. Taste for seasoning once again-it should be full-flavored, slightly bitter and creamy at the same time. Set aside.
  • Bring a large pot of well-salted water to a boil. (If you are making the pasta right after the pesto, just use the broccoli rabe blanching water.) Cook the pasta 1 minute less than the cooking time on the package.
  • While the pasta is cooking, place the pesto in a large skillet and add about 1 to 1 1/2 cups of the pasta cooking water; place over medium-high heat. When the pasta is ready, drain and add to the skillet with the pesto. Stir vigorously to combine and cook until the sauce is creamy and heated through, 1 to 2 minutes; add salt to taste. Remove from the heat, add 1 to 2 tablespoons olive oil, if desired, and stir vigorously. Garnish with more parmigiano. Voila!

Broccoli adds a slight sweetness to this spicy vegetarian dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 30m

Number Of Ingredients 7

Coarse salt and ground pepper
12 ounces orecchiette or other short pasta
2 tablespoons olive oil
2 garlic cloves, thinly sliced
1/4 to 1/2 teaspoon red-pepper flakes
1 head broccoli (about 1 pound), cut into bite-size florets, stalks peeled and thinly sliced
1/2 cup grated Parmesan

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/2 cup pasta water; drain pasta and return to pot.
  • While pasta is cooking, heat oil in a large skillet over medium. Add garlic and red-pepper flakes; cook, stirring occasionally, until garlic is golden, 1 to 2 minutes. Add broccoli and 1/2 cup water; season with salt and pepper. Cover and cook until broccoli begins to soften, about 8 minutes. Uncover and continue to cook until water has evaporated and broccoli is crisp-tender, 1 to 2 minutes more.
  • To pasta in pot, add broccoli mixture, Parmesan (reserving some for later), and enough pasta water to create a thin sauce that coats pasta. Serve sprinkled with remaining Parmesan.

Categories     Bread     Sauce     Broccoli     Broccoli Rabe     Boil

Yield serves 6

Number Of Ingredients 8

1/4 teaspoon kosher salt, plus more for pasta pot
1 pound orecchiette
6 garlic cloves, sliced
5 tablespoons extra-virgin olive oil
1 pound sweet Italian sausage, removed from casing
1/4 teaspoon peperoncino flakes
2 bunches broccoli rabe, trimmed, chopped into 1-inch pieces
1 cup grated Pecorino Romano

Steps:

  • Bring a large pot of salted water to boil for pasta. Plop the orecchiette into the boiling water, and cook until al dente.
  • Cook the garlic in 3 tablespoons olive oil in a large skillet over medium heat. Once the garlic is sizzling, crumble in the sausage, and cook, breaking up the clumps with the back of a wooden spoon, until browned, about 3 minutes. Season with the peperoncino. Add the broccoli rabe, and season with the salt and the remaining 2 tablespoons olive oil. Toss to coat the broccoli with the oil. Pour in 1 cup pasta water, then cover and cook until broccoli rabe is tender, about 15 minutes.
  • When the broccoli rabe is tender, uncover, add 1 more cup pasta water, and bring to a boil. When the orecchiette is al dente, scoop the pasta from the water and add to the sauce. Toss to coat the pasta with the sauce. Remove from heat, sprinkle with the Pecorino Romano, and toss. Serve immediately.

ORECCHIETTE WITH BROCCOLI RABE AND SPICY SAUSAGE

Orecchiette With Broccoli Rabe and Spicy Sausage image

This pasta dish is from the Last Supper Club in San Francisco. Orecchiette means "little ears" and this pasta is sturdy enough to support the hearty sauce. If you are unable to find orecchiette you can use Farfalle.

Provided by cookiedog

Categories     One Dish Meal

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 tablespoons salt
1 1/2 lbs broccoli rabe, coarsely chopped (3 bunches)
10 ounces orecchiette (preferably Rustichella brand)
1 lb hot Italian sausage link (3 links)
2 tablespoons olive oil
1 cup chicken stock
1 1/2 ounces finely grated pecorino romano cheese (I use Asiago cheese)
1/2 lemon
1 1/2 tablespoons very crunchy toasted breadcrumbs (optional)

Steps:

  • Bring a large pot of water to a boil with the salt. Add the broccoli rabe and cook for 6 to 8 minutes, or until soft. Remove with a slotted spoon and set aside.
  • Return the same pot of water to a boil, add the orecchiette and cook for 10 minutes, or until slightly undercooked. Drain, reserving the cooking water.
  • Split the sausages lengthwise down the middle and remove from their casings.
  • Heat the olive oil in a high-rimmed skillet over medium heat. Add the sausage meat, breaking it up as finely as possible. Add the broccoli and continue cooking and stirring until the broccoli breaks down to a saucelike texture.
  • Add the chicken stock and orecchiette. Finish cooking the pasta in the sauce, being careful it doesn't stick. You may have to keep adding a little pasta water, additional stock or tap water until the pasta is soft yet chewy (al dente), making sure not to over-cook it.
  • Finish the pasta by folding in the cheese, a few squeezes of lemon juice and the optional breadcrumbs.

ORECCHIETTE WITH BROCCOLI RABE AND SAUSAGE

Orecchiette With Broccoli Rabe and Sausage image

This is from "Lidia's Italian Table: Italian American Favorites" by Lidia Matticchio Bastianich, author and host of the PBS television series of the same name. The shape of the pasta (orecchiette means "little ears" ) soaks up the flavorful sauce. This is a one-dish meal, very hearty and very satisfying. Serve with lots of crusty bread to soak up the sauce.
