REFRIGERATOR BRAN MUFFINS
These are so great to make ahead and keep in the fridge for up to 2 months. They make a quick breakfast; bake as needed.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a muffin pan or line with muffin cups.
- Combine bran flakes and bran cereal in a heat-proof bowl. Cover with boiling water; stir and let sit until softened.
- Beat sugar, shortening, and eggs together in a very large bowl with an electric mixer until creamy.
- Sift flour, baking soda, and salt into a bowl. Add flour mixture and buttermilk alternately to sugar mixture. Stir in softened bran; mix until evenly incorporated.
- Spoon batter evenly into prepared muffin pan.
- Bake in the preheated oven until tops spring back when lightly pressed, about 15 minutes.

CLASSIC BRAN MUFFINS
A delicious source of fiber! My family have them almost every morning. Great healthy muffins! You may substitute dates for the raisins if you wish.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

- Place water in a suitable microwave bowl.
- Heat until boiling (about1 minute).
- Add bran and butter and stir until butter is melted and bran softened.
- Beat in sugar and egg.
- Blend in remaining ingredients.
- Spoon into double paper patty cases or paper lined.
- muffin cups.
- The batter for this recipe may be kept in a covered bowl in the refrigerator for about 4 weeks.
- To cook, allow 30 seconds on high.

MICROWAVE READY BAKE BRAN MUFFINS
These muffins make a great addition to any breakfast. They are easy to prepare ahead and batter will stay fresh in the refrigerator for up to six weeks.

Steps:
- In a large bowl, mix bran cereal with boiling water to soften cereal.
- Add remaining ingredients and stir well.
- To store in refrigerator, place in air-tight container.
- To bake in microwave, place baking cups in a microwavable muffin pan.
- Fill baking cups half-full with batter.
- Bake on high in microwave for approximately 45 seconds per muffin. Do not over cook. (Time will need to be adjusted per your microwave.).
- Serve muffins warm.
SWEET & SPEEDY BREAKFAST OAT BRAN MUFFIN (MICROWAVE)
Stir and pop into the microwave for an easy, healthy breakfast! I mix it up, microwave, and eat it straight out of a ceramic mug. The batter sticks a little, but to wash cleanly, pour in hot water and soap and let sit until you do the dishes! I was inspired by *Pixie* 's South Beach Muffin (http://www.recipezaar.com/South-Beach-Muffin-263983) but I didn't have the baking powder, yogurt, or flaxseed, so I improvised. Change up the recipe by adding in raisins, nuts, and other flavorings (almond extract, etc)

- Add cinnamon, baking soda, vanilla extract, and oat bran and mix completely.

MAMA'S MAKE-AHEAD BRAN MUFFINS
Mama made these for decades when she was a working mother (back in the day when most mamas didn't work). These are easy, so moist, and so good. And because you make up a big batch that's kept in the refrigerator and baked just a few at a time, they are a lifesaver for busy cooks. My kids can scoop 1 or 2 into a tin and pop it in the oven in the morning for their own hot and hearty breakfast. A lovely addition to a brunch because they can be prepared ahead and baked right before serving.

- Pour boiling water over Bran Buds® cereal in a medium bowl and let stand.
- Beat sugar, shortening, and eggs together in a very large bowl that has a lid (I use a large Tupperware® bowl) with an electric mixer until creamy. Add buttermilk, followed by bran-water mixture. Add flour, shredded bran cereal, raisins, baking soda, and salt. Stir until just combined; do not overmix and don't stir again.
- Let sit in the refrigerator at least 4 to 6 hours before baking.
- Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin tins or line with paper liners.
- Scoop batter evenly into the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 20 minutes.

NEVER ENDING BRAN MUFFINS
They are called never ending because this makes a HUGE amount of muffins! The batter has to sit overnight in the fridge and can be stored for 1-2 weeks in there, so you can have warm muffins everyday! Thanks to my friend Malorie for the recipe...*Update* Since this recipe makes so much I decided to freeze 1/2 the batch and it worked great. Just put cupcake liners in a muffin tin fill as usual, put the tin in the freezer for 1-2 hrs, take out and pop into a freezer bag. When ready to use just put back into the muffin tin, it will take about 3-5 extra minutes to bake!

- NOTE: I did not calculate prep time in fridge overnight.
- In a X-LARGE, bowl cream sugar and shortening.
- Add eggs, salt, baking soda and mix well.
- Add 1 c flour, stir until just combined.
- Add 1 c buttermilk, stir until just combined.
- Repeat this until all flour and buttermilk is used.
- Add 1/2 cup water and 1 cup Bran cereal, stir until just combined.
- Repeat this until all the water and cereal is used.
- * Be sure NOT to overmix*.
- Let sit overnight in fridge, covered.
- Take out and stir-the cereal should have broken down and will mix well.
- Pour 1/3 c batter into muffin tins.
- Bake @ 400 degrees for 20 minutes or until toothpick comes out clean.
HODGSON MILL'S OVEN-READY BRAN MUFFINS
From the back of a box of Hodgson Mill wheat bran. I like this recipe because you can make the batter in advance and store in the fridge in an airtight container for 2 to 4 weeks. That way I can bake a few fresh muffins whenever I want without having to break out the mixer.

Steps:
- Mix 1 cup wheat bran with 1 cup boiling water; stir and let water absorb into bran.
- In a separate bowl blend sugar and butter.
- Measure and combine flour, baking soda, and salt.
- Combine the moist bran with the beaten eggs, the remaining 2 cups of bran, buttermilk, blended sugar-butter mixture, and the flour, soda and salt.
- Stir until well blended.
- At this point you can place the batter in the fridge for future use or bake at once.
- When preparing to bake, preheat oven to 400 degrees.
- Stir batter well and spoon into prepared muffin tins.
- Bake 15 minutes.
- Keep remaining mixture in airtight container for 2 to 4 weeks.
