ORANGE PASTA

This unique pasta recipe is tangy yet creamy and easy to make. A very pleasing dish from my childhood!

Number Of Ingredients 12

8 oz. rigatoni ((225g, or any other short cut pasta))
3 tablespoons olive oil
4 oz. pancetta or bacon ((115g; optional, the dish is otherwise vegetarian if you leave this out))
1 medium onion ((thinly sliced))
3 cloves garlic ((thinly sliced))
1 cup orange juice
½ cup tomato paste
salt and pepper ((to taste))
1/3 cup half-and-half or heavy cream ((80 ml))
¼ cup grated Parmesan cheese ((25g))
zest of 1/2 an orange
½ cup basil ((julienned))

Steps:

  • Bring a large pot of salted water to a boil and add the pasta. While that's happening, heat a skillet over medium heat and add the olive oil and pancetta/bacon (if using). Allow the pancetta to crisp up, and then add the onion and garlic. Cook for about 10 minutes, or until caramelized.
  • Stir in the orange juice and tomato paste, and bring to a simmer. Season with salt and pepper to taste, and add the half and half. Scoop in your cooked pasta (reserve the cooking liquid), and parmesan cheese. Give everything a good stir. Add in a little more of the starchy pasta water if the sauce needs thinning out.
  • Stir in the orange zest and basil. Give the pasta a taste and adjust the seasoning if needed. Serve!

12 ounces dried Chinese egg noodles or spaghetti
1/2 cup vegetable oil
3 cloves garlic, minced
1 tablespoon peeled, minced fresh ginger
1 orange, zested and juiced
1 teaspoon frozen orange juice concentrate, thawed
1/4 cup soy sauce
1/3 cup sweet hot chile sauce (nuoc cham ga or mae ploy, a Thai condiment)
Chopped scallions, for garnish, optional

Steps:

  • In a stockpot over high heat, bring about 8 cups of water to a boil. Add the noodles and cook until al dente, 7 to 10 minutes. Drain well and place in large bowl. Set aside.
  • In a bowl, whisk together the remaining ingredients. Pour the dressing over the noodles and toss well. Let sit at least 10 minutes before serving. Garnish with chopped scallions, if using.

400 grams Fusilli
6 Tbsps olive oil
salt
peppers (freshly ground)
3 Oranges

Steps:

  • Cook the pasta until al dente in boiling salted water.
  • Peel 2 of the oranges with a sharp knife, remove all of the pith, cut in half lengthwise and cut into half-slices, season with plenty of pepper and mix with the olive oil.
  • Squeeze 1 orange sand add the juice to the orange slice mixture.
  • Zest the orange until you have 2 tablespoons of zest.
  • Drain the noodles, and mix with the orange slice mixture. Arrange on your plates, and garnish with the orange zest.

  • Bring a large pot of water to a boil. Add the noodles and cook according to the package directions, cutting off 1 to 2 minutes from the cook time, so the noodles are al dente.
  • While the noodles cook, stir together the orange juice, soy sauce, maple syrup, sriracha, garlic, and ginger in a small saucepan. Place over medium heat and bring it to a simmer. Allow to simmer for about 10 minutes. Stir the water and cornstarch together in a small bowl or cup, then add it to the sauce and stir a few times. Allow to simmer 1 minute more, then remove from heat.
  • Coat the bottom of a large skillet with oil and place over high heat. When the oil is hot, add the broccoli and white parts of scallions. Stir-fry for about 2 minutes, until the broccoli's color intensifies a bit. Add the noodles and sauce. Continue to stir-fry until the liquid cooks off and the noodles begin to crisp, about 2 to 4 minutes, depending on how crisp you'd like the noodles to be. Remove from heat and add in the sesame seeds and green parts of scallions.
