- In a large skillet, saute cashews in butter and oil for 4-5 minutes or until golden brown. Spread on a paper towel-lined baking sheet; let stand for 2-3 minutes. Transfer to a large bowl. Sprinkle with salt, chili powder and pepper flakes; toss to coat. Store in an airtight container.

- Adjust the cooking rack to the bottom placement and preheat your toaster oven to 325 degrees F. Spray a small baking pan with cooking oil and set aside. In a large bowl, whisk together maple syrup, olive oil, curry powder, cumin, ginger, and sea salt. Add cashews and stir well to coat. Pour nuts onto prepared pan and arrange in a single layer. Cook nuts until lightly toasted, stirring occasionally, about 14 to 16 minutes. When the cashews are finished cooking, remove the pan from the toaster oven, stir nuts again, and arrange in a single layer. Leave nuts on the pan to cool completely before devouring or storing in a well-sealed container.

SLOW-COOKER SPICED NUTS
Oven space is always at a premium around the holidays, and these slow-cooker spiced nuts won't claim any of it. They're so good and so easy, though, that you'll want to use this method all year round.

- Line the insert of a 6-quart slow cooker with heavy-duty foil, and spray with cooking spray.
- Whisk together the maple syrup, butter, cinnamon, orange zest, salt and cayenne in a large bowl. Add the pecans and cashews, and toss to coat. Add the nuts to the slow cooker in an even layer, cover and turn the heat to high. Cook until a light syrup forms at the bottom, 1 hour.
- Turn the heat to low, stir the nuts and continue to cook, stirring every 20 minutes, until the nuts are glazed and the bottom of the cooker is dry, about 1 hour.
- Turn the slow cooker off, uncover and let the nuts harden, stirring occasionally, up to 2 hours. If not serving immediately, the nuts can be stored in an airtight container up to 5 days.

- Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, mix cashews with corn syrup until evenly coated. Set aside.
- In a small bowl, combine salt, zest, ginger, coriander, cumin, and cayenne. Sprinkle mixture over nuts, and stir until nuts are evenly coated. Transfer to one of the prepared baking sheets; spread in a single layer, separating nuts.
- Bake until the nuts are golden and the syrup is bubbling, about 15 minutes. Immediately transfer nuts to the other baking sheet. Separate cashews; let cool.

- Preheat the oven to 325 degrees F.
- Prepare a baking sheet with parchment paper and nonstick spray, or line it with a silicone baking mat.
- In a large bowl, combine the honey, brown sugar, garam masala, chile flakes, fennel seeds, orange bitters and kosher salt. Stir to combine. Add the mixed nuts and toss well.
