3 eggs
1 cup white sugar
1 tablespoon orange zest
1 ½ cups all-purpose flour
2 teaspoons baking powder
6 tablespoons orange juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 9 inch round pan.
  • Separate the eggs while cold, then bring to room temperature.
  • Beat egg yolks, sugar and grated orange rind until light and fluffy. Mix flour and baking powder together. Alternately add flour mixture and orange juice to the egg yolk mixture.
  • In a separate large CLEAN bowl, with a CLEAN whisk or beaters, beat egg whites to stiff peaks, and fold into batter.
  • Pour batter into prepared pan and bake at 325 degrees F (165 degrees C) for 50 to 60 minutes.

Not your average fruit cake, this one is made with cream cheese and is a family favorite. A hot cup of tea and a slice of this is so good.

1 cup butter, softened
8 ounces cream cheese
1 1/2 cups sugar
2 teaspoons lemon zest, grated
1 teaspoon vanilla
4 eggs
2 cups flour
1 1/2 teaspoons baking powder
1/2 cup raisins
1/2 cup golden raisin
1/2 cup mixed deluxe candied fruit
1/2 cup maraschino cherry, drain on paper towel

Steps:

  • With electric beaters, cream butter and cream cheese.
  • Add sugar mix well.
  • Beat in zest and vanilla.
  • Add eggs, one at a time beat well after each addition.
  • Reserve 1/4 cup flour.
  • Sift remaining flour with baking powder and blend into creamed mixture.
  • In a small bowl combine both kinds of raisins, candied fruit and maraschino cherries; toss with the 1/4 cup flour. (The cherries I like to leave whole--I think they look nice when the cake is cut, but its up to you to either leave them whole or chop them.).
  • Stir fruit into batter.
  • Pour into greased and floured 10-inch bundt or tube pan.
  • Bake 300°F for 70-80 minutes or until toothpick comes out clean. Let cool in pan for 10 minutes then turn out onto wire rack to cool completely.
  • I have made this cake in loaf pans (2) (Bake time for loaf is 45-55 minutes) which allows me to cut them into smaller servings and I put them on my Christmas goodie trays. This cake freezes well.

3 large eggs
1 1/4 cups sugar
1 cup milk
1/2 cup olive oil
Zest of 1 orange, minced
1 3/4 cups flour, sifted
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 orange
1 1/2 cups orange juice
1 1/2 cups sugar

Steps:

  • Preheat an oven to 400 degrees F. Butter an 8-inch cake pan with 2-inch sides, then dust with sugar and flour.
  • Beat the eggs with the sugar to pale yellow ribbons. Beat in the milk, oil and orange zest. In a small bowl, sift the flour with the baking powder, baking soda, and salt. Add the flour mixture to the egg mixture a tablespoon at a time, stirring well after each addition.
  • Pour batter into prepared cake pan and bake for 45 to 55 minutes or until middle of cake springs back when lightly touched. Remove cake from oven, let cool slightly on a rack, then invert and cool completely.
  • Meanwhile, prepare the syrup: Use a sharp paring knife to cut the orange rind off the orange used for zest and the remaining orange, leaving the bitter white pith on the orange. Cut the skin into very thin strips and reserve. Cut away and discard the white pith, remove the orange supremes, and reserve.
  • In a large saucepan, combine the orange juice, sugar, and thin orange strips. Bring to a simmer and cook for 30 minutes, or until a thick syrup. Strain the syrup and reserve the orange strips, along with 1/2 cup of the syrup. Use a toothpick to poke holes in the top of the cake, then pour the warm strained syrup all over the cake so that it soaks through.
  • Place the remaining 1/2 cup syrup in a small saucepan, bring to a simmer and reduce to a few tablespoons. Use a spatula to spread the thick glaze over the top of the cake. Place cake on a serving platter, and arrange the reserved orange strips and orange supremes on top of the cake.

125 g all-purpose flour (maida)
75 g butter
2 eggs, beaten
1 teaspoon baking powder
4 tablespoons orange juice
4 tablespoons mixed fruit
100 g sugar

Steps:

  • Beat eggs in a bowl, one at a time, until light and fluffy.
  • Use cold eggs as eggs tend to separate best when cold.
  • Cream in sugar.
  • Add butter; mix well.
  • Add flour and baking powder; mix well.
  • Add juice and 2 tbsps of the mixed fruit and continue to mix.
  • Grease a cake tin.
  • Spread out the remaining 2 tbsps of mixed fruit in the ring-shaped baking tin/pan.
  • Add the cake mixture.
  • Bake for 20 minutes in an electric oven at 100°C or until a wooden toothpick inserted in the center comes out clean.
  • Allow to cool in pan for 10 minutes.
  • Unmold from pan.
  • Allow to cool completely on wire rack.
  • Cut and serve with tea for a delicious snack!

100g skinned hazelnuts , ground
50g semolina or polenta
175g golden caster sugar
1½ tsp baking powder
2 large oranges
4 medium eggs
200ml light olive oil
generous pinch saffron threads
85g icing sugar
Greek yogurt or crème fraîche and orange segments to serve, optional

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Oil the base of a 23cm ring tin (or oil and line the base of a 20cm round or 18cm square cake tin). Put the ground hazelnuts in a frying pan and toast over a medium heat, stirring frequently until evenly browned. Leave to cool, then mix with the semolina, caster sugar and baking powder.
  • Finely grate the zest from one orange and combine with the eggs and oil. Beat well with a wooden spoon, then fold into the dry ingredients. Pour the mixture into the prepared tin and bake for 30-40 mins, until risen and firm to the touch.
  • While the cake is baking, pare the zest from the other orange and cut into very thin shreds. Put in a saucepan with the juice from both oranges, the saffron and icing sugar. Bring to the boil, then simmer gently for 5 mins.
  • When the cake is done, leave it to cool in the tin slightly, then turn out onto a plate. Peel off the lining paper. While the cake is still warm, skewer it well and spoon the syrup over. Serve as it is, or with yogurt or crème fraîche and orange segments. The cake will keep in the fridge in an airtight container for 3-4 days.
