3 pounds boneless skinless chicken breast halves
2 tablespoons canola oil
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 cup packed brown sugar
1/2 cup honey
1/3 cup lemon juice
1/4 cup butter, melted
2 tablespoons prepared mustard
2 teaspoons reduced-sodium soy sauce

Steps:

  • In a large skillet, brown chicken in oil in batches on both sides; transfer to a 5-qt. slow cooker. In a small bowl, combine the remaining ingredients; pour over chicken. , Cover and cook on low for 3-4 hours or until meat is tender. Strain cooking liquid, reserving pineapple. Serve pineapple with the chicken. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally and adding a little water if necessary.

1 cup orange juice
1/2 cup cider vinegar
1/2 cup brown sugar (packed)
1/4 cup honey
2 Tablespoons chili powder
1 Tablespoon ground coriander
1 Tablespoon ground cumin
2 pounds chicken thighs
1 tablespoon olive oil
salt and pepper

Steps:

  • In a small saucepan, combine orange juice, cider vinegar, brown sugar, honey, chili powder, coriander, and cumin. Bring to a boil, reduce heat and let simmer for 35-45 minutes or until sauce has reduced to one cup.
  • In a medium saucepan add olive oil and heat to medium high heat. Salt and Pepper the chicken thighs and cook until 165 degrees in center and no longer pink. Drizzle the glaze on top and allow to simmer for 1-2 minutes making sure the chicken is coated well in the glaze. Serve immediately.

1 cup orange juice
1/2 cup honey
1 tablespoon lemon juice

  • In a saucepan, combine the first nine ingredients. Bring to a boil. Remove from the heat; cool. Pour 1-1/3 cups marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 4-8 hours or overnight, turning occasionally. Cover and refrigerate remaining marinade., Drain chicken, discarding marinade. Grill, covered, over medium heat for 12-15 minutes on each side or until juices run clear. Meanwhile, combine cornstarch and water in a small saucepan until smooth; stir in reserved marinade. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove and discard skin from chicken. Serve chicken over rice; drizzle with sauce. 1 cup any white rice, uncooked
1 tablespoon olive oil
2 cloves garlic, fine chopped
1 tablespoon fresh grated ginger (optional)

1 large seedless orange, peeled and cut up into ½ inch cubes
1 orange, zest of (if you would like more of a pineapple taste, skip this)

  • Pre-Cook the rice, any method you like.
  • Preheat oven to 350 deg.
  • In a 3 Qt Dutch oven or other oven safe pan with cover.
  • Heat the olive oil add the garlic and ginger Sauté until garlic just starts to turn brown.
  • Add Chicken and Sauté until partially cooked.
  • Add Pineapple/w juice, Orange and zest, mix.
  • Add cooked Rice and mix well again.
  • Add wine and lime, mix.
  • Cover and place in oven for 20 minute.
  • If too much liquid take cover off, finished dish should be very moist with only a little liquid in bottom of pan.

1/2 cup freshly squeezed orange juice
1/4 cup olive oil
1/4 cup hot sauce
1/4 cup Dijon mustard
1 tablespoon grated orange zest
1 (4 pound chicken) cut into 10 pieces, patted dry with paper towels
4 tablespoons (1/2 stick) butter
1/4 cup honey
1/4 cup freshly squeezed orange Juice
1/4 cup Neely's BBQ sauce
1 tablespoon grated orange zest
2 tablespoons Dijon mustard
1/4 teaspoon allspice

Steps:

  • Mix the orange juice, olive oil, hot sauce, mustard, and orange zest together in a large bowl. Add the chicken and toss to combine. Cover with plastic wrap and let marinate for at least 1 hour and up to overnight in the refrigerator.
  • Prepare the grill to medium direct heat. Let chicken come to room temperature before grilling.
  • Drain the chicken from the marinade and pat dry. Grill on each side for 5 minutes, then turn the heat to medium-low and cover the lid of the grill. Continue cooking the chicken until it's cooked through, about 25 minutes more.
  • While the chicken is grilling, melt the butter in a small saucepan on the grill. Whisk in the honey, orange juice, BBQ sauce, zest, mustard and allspice. Reserve some of the glaze in a small ramekin for serving.
  • Brush the chicken pieces with glaze, then flip the chicken, glaze side down, and cook for 2 minutes. Brush second side of the chicken with glaze and flip again. Continue cooking for 3 more minutes. Remove the chicken from grill to a platter and serve with reserved glaze.

1 cup tomato sauce
1 (6 ounce) can frozen concentrated orange juice, divided
1/4 cup brown sugar
1/2 teaspoon mustard powder
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 (14 ounce) can pineapple chunks, reserve the liquid

Steps:

  • Set oven to 350 degrees.
  • Grease a med-size roasting pan.
  • Sprinkle chicken pieces with salt, pepper and paprika.
  • Brown lightly on both sides.
  • Place browned chicken pieces in roasting pan.
  • In a bowl, mix together, the tomato sauce, orange juice, brown sugar, seasonings and 1/2 cup juice from the canned pineapple.
  • Pour over chicken pieces.
  • Bake, covered for approx 30 mins, uncover, and bake for another 30 mins, or until chicken is cooked, basting occasionally.
  • Add drained pineapple chunks, 5 mins before removing from oven.
  • Note: if sauce cooks down too much, add pineapple juice.
  • Serve with white rice.

6 bone-in, skin-on chicken thighs (about 2 pounds)
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 cup pineapple juice

3 tablespoons honey
2 tablespoons hot sauce

Chopped cilantro, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.

This is sort of an American-ized version of the French Duck a l'orange. When reducing the glaze in step 4, remember that the skillet handle will be hot; use an oven mitt. To make sure the chicken cooks evenly, buy breasts that are similar in size-about 12 ounces apiece. If the glaze looks dry during baking, add up to 2 tablespoons of juice to the pan. If your skillet is not ovenproof, brown the chicken breasts and reduce the glaze as instructed, then transfer the chicken and glaze to a 13 by 9-inch baking dish and bake (don't wash the skillet). When the chicken is fully cooked, transfer it to a plate to rest and scrape the glaze back into the skillet to be reduced. This recipe was adapted from Cook's Illustrated, published Sept. 2007

Steps:

  • Adjust oven rack to middle position and heat oven to 375 degrees. Whisk 1 1/2 cups orange juice, corn syrup, honey, mustard, vinegar, pepper flakes, 1/8 teaspoon salt, and 1/8 teaspoon pepper together in medium bowl. Place flour in pie plate, then season chicken on both sides with salt and pepper. Working with one chicken breast at a time, coat chicken with flour, patting off excess.
  • Heat oil in ovenproof 12-inch skillet over medium heat until shimmering. Add chicken breasts skin-side down; cook until well browned and most of fat has rendered from skin, 8 to 14 minutes. (If after 3 minutes you don't hear definite sizzling, increase heat to medium-high. If after 6 minutes chicken is darker than lightly browned, reduce heat slightly.)   • Pour off all but 1 teaspoon fat from pan. Add shallot and cook until softened, 1 to 2 minutes. Increase heat to high and add orange juice mixture. Simmer, stirring occasionally, until syrupy and reduced to 1 cup (heatproof spatula should leave slight trail when dragged through glaze), 6 to 10 minutes. Remove skillet from heat and tilt to one side so glaze pools in corner of pan. Using tongs, roll each chicken breast in pooled glaze to coat evenly and place skin-side down in skillet.
  • Transfer skillet to oven and bake chicken until thickest part of breasts registers 160 degrees on instant-read thermometer, 25 to 30 minutes, turning chicken skin-side up halfway through cooking. Transfer chicken to platter and let rest 5 minutes. Return skillet to high heat (be careful-handle will be very hot) and cook glaze, stirring constantly, until thick and syrupy (heatproof spatula should leave wide trail when dragged through glaze), about 1 minute. Remove pan from heat and whisk in remaining 2 tablespoons orange juice. Spoon 1 teaspoon glaze over each breast and serve, passing remaining glaze at table.

8 skinless chicken breasts
1 small jar honey
1 small can crushed pineapple
2 tsp sugar
4 oranges

Steps:

  • Preheat oven to 350°F. Thoroughly wash chicken breasts. Place in a large baking dish. In a medium bowl, combine sauce ingredients. Pour the jar of honey into the bowl. Add the can of crushed pineapple with juice. Sprinkle with sugar. Mix honey, pineapple juice and crushed pineapple in bowl. The sauce should have a rather thick consistency. Glaze chicken with sauce, evenly coating the entire front side of the chicken breast.
  • Wash and peel oranges, but do not discard the peels. Squeeze oranges so that the juice covers the chicken and thins the sauce. Place orange peels in the casserole dish around the chicken breast which will give a stronger hint of orange taste.
  • Bake for 30-45 minutes or until the chicken has a white center and is golden brown.
