3/4 cup butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
2 large eggs, room temperature
1-1/2 cups mashed ripe bananas (about 4 medium)
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped pecans, divided
ORANGE GLAZE:
1 cup confectioners' sugar
3 tablespoons orange juice
1 teaspoon grated orange zest

Steps:

  • Preheat oven to 350°. Cream butter, cream cheese and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in bananas and vanilla. In another bowl, combine flour, baking powder, baking soda and salt; gradually add to creamed mixture. Fold in 1 cup pecans. , Transfer to 2 greased 8x4-in. loaf pans. Sprinkle with remaining pecans. Bake loaves, covering with foil if they darken too rapidly, until a toothpick inserted in each center comes out clean, 1-1-1/4 hours. Cool 10 minutes before removing to wire racks., While loaves are still slightly warm, whisk glaze ingredients. Drizzle over loaves, using a baking pan or parchment under racks to catch excess. Cool completely.

1-1/2 cups sugar
3 tablespoons canola oil
2 large eggs, room temperature
3 medium ripe bananas, mashed (about 1-1/4 cups)
3/4 cup orange juice
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup chopped walnuts

Steps:

  • In a bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. I have found this recipe to be very moist. It makes ordinary banana bread a special treat. Hint: Create layers. Pour 1/4 of the batter in the pan, add the pecans & brown sugar, then top with a little more batter, and more topping for a layered effect. You layer it in the pan, and it becomes a wonderful surprise to the ordinary banana bread we have all come to know. The photo is not layered... my oops. I forgot about it until I got to the pecans, but it sure didn't hurt the flavor.

1/2 cup(s) butter or margarine @ room temp
1 package(s) cream cheese @ room temp (8 oz.)
1 1/4 cup(s) sugar
2 large eggs

Steps:

  • Preheat oven @ 350. Grease and flour two 8" x 4" pans.
  • Cream together butter and cream cheese 'til fluffy; gradually adding in the sugar. Add eggs, beating after each egg.
  • Stir in mashed bananas; add vanilla and stir.
  • Add measured flour, baking powder and soda. Mix ONLY 'til moistened. (DO NOT over stir or beat.)
  • In a small cup mix together pecans and brown sugar along with cinnamon, if desired; set aside.
  • Divide batter into fourths. Pour 1/4 of the batter into each of 2 prepared pans. Sprinkle 1/4 of pecans and brown sugar mixture over batter. Top with remaining batter and sprinkle on remaining pecans and sugar. Note: You have just layered batter, pecans and sugar twice.
  • Bake @ 350 for 1 hr 10 min. or 'til toothpick inserted comes out clean. Remove from pans and serve hot from the oven or cold. Wrap in plastic wrap to keep moist. Enjoy!

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
  • In a large bowl, combine the flour, baking soda, and salt; set aside.
  • Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.
  • Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.
  • Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners' sugar, and serve.

1/3 cup milk

1/2 cup sugar

Steps:

  • Beat together eggs, juice, milk, sugar, vanilla, and nutmeg. Arrange bread in a single layer, top with egg mixture. Refrigerate 2 hrs. Melt butter in 10" x 15" x 2" pan, and arrange bread on top. My husband and I were vacationing recently and had this lovely French toast at a bed and breakfast. When we came back home, I kept missing it so I called them up and requested it. They actually gave me the recipe over the phone! I generally halve the recipe for my husband and I, and bake it in an 8 inch square pan. Reheats well in the toaster oven. I served it to my in-laws recently and they loved it. Serve with a little sweetened whipped cream and berries!

⅓ cup butter, melted
2 tablespoons light corn syrup
⅓ cup chopped pecans

1/2 cup pecans, chopped
1 tablespoon orange zest
2 (11 ounce) cans ready-to-bake refrigerated buttermilk flaky biscuits
3 ounces cream cheese
1/2 cup butter, melted
1 cup powdered sugar
2 tablespoons orange juice

Steps:

  • Combine sugar, pecans, orange zest.
  • Separate each biscuit, (there shoud be 20 biscuts - so you will have 40 layers).
  • Cut cream cheese into 20 pieces.
  • Place one piece of cream cheese on each of 20 biscuit halves.
  • Top with remaining biscuits halves and pinch the edges to seal them.
  • Dip filled biscuits in melted butter.
  • Dredge in the sugar mixture. I do have to make extra mixture sometimes.
  • Stand each biscuit on it's edge in a lightly greased 12-cup bundt pan, spacing evenly, but together.
  • Drizzle with remaining butter and sugar mixture.
  • Bake at 350 degrees for 45 minutes, or until golden brown.
  • Immediately invert onto a wire rack.
  • Combine powdered sugar and orange juice, and drizzle over the danish.
  • Serve immediately.

1/2 cup chopped pecans
PINEAPPLE SPREAD:
1 package (8 ounces) cream cheese, softened
1 cup canned crushed pineapple, well drained

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in bananas. Combine the flour, baking powder, baking soda and salt; add to creamed mixture. Fold in pecans., Transfer batter to a greased 9x5-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes before removing from pan to a wire rack., In a small bowl, combine cream cheese and pineapple. Serve with bread.
