SIMPLE CANDIED ORANGE PEEL

Yield Makes about 2 cups

Number Of Ingredients 3

2 large oranges, 1/4 inch of top and bottom cut off
4 cups sugar, divided
3 cups water

Steps:

  • Cut peel on each orange into 4 vertical segments. Remove each segment (including white pith) in 1 piece. Cut into 1/4-inch-wide strips. Cook in large pot of boiling water 15 minutes; drain, rinse, and drain again.
  • Bring 3 cups sugar and 3 cups water to boil in medium saucepan over medium heat, stirring to dissolve sugar. Add peel. Return to boil. Reduce heat; simmer until peel is very soft, about 45 minutes. Drain.
  • Toss peel and 1 cup sugar on rimmed baking sheet, separating strips. Lift peel from sugar; transfer to sheet of foil. Let stand until coating is dry, 1 to 2 days. DO AHEAD: Wrap and freeze up to 2 months.

1 orange, cut into 6 slices, plus more for garnish
2 tablespoons sugar
2 tablespoons syrup from a jar of maraschino cherries
4 shots bourbon (recommended: Bulleit)
4 dashes orange bitters
Sparkling water

Steps:

  • In a pitcher combine the orange slices, sugar, and cherry syrup. Muddle with a wooden spoon or a muddler, until the sugar is dissolved and the juice is extracted from the oranges. Add the bourbon, and bitters and mix well. Pour into 4 low-ball glasses filled with ice, and top each with sparkling water. Garnish with an orange slice and serve.

2 cups granulated sugar
1 cup butter, softened
5 eggs, at room temperature
1 tablespoon grated orange zest
1/2 cup orange juice
2 1/2 cups self-rising flour
1 cup reduced-fat milk
1/4 cup butter, softened
1 tablespoon grated orange zest
1/3 cup freshly squeezed orange juice
1 lb confectioners' sugar

Steps:

  • Preheat oven to 350°F Grease and flour two 9-inch round cake pans.
  • To prepare cake, combine sugar and butter; cream with a mixer at medium-high speed. Add eggs and orange zest; blend well.
  • Reduce speed to low and beat in orange juice. Add flour alternately with milk; beat well. Pour into pans.
  • Bake 22 to 25 minutes, until a wooden toothpick inserted in the center comes out clean. Cool in pans for 15 minutes. Remove from pans and cool completely on wire racks.
  • To prepare icing, combine butter, orange zest, orange juice, and half the confectioners' sugar. Using a mixer at low speed, beat until well blended. Gradually add remaining sugar; beat until smooth.
  • Spread about ¾ cup of the icing on top of one layer. Place second layer on top. Spread remaining icing in a thin layer over top and sides.

1-2 dashes Angostura bitters
splash of water
60ml Scotch whisky or bourbon
soda water (optional)
orange slice
maraschino cherry (optional)

Steps:

  • Put the sugar, bitters and water in a small tumbler. Mix until the sugar dissolves if using granulated. Fill your glass with ice and stir in the whisky. Add a splash of soda water if you like and mix. Garnish with the orange and cherry.

1 scant teaspoon simple syrup
2 dashes Angostura Bitters, plus more to taste
1 half dollar-sized slice orange peel, including pith
2 ounces good-quality rye or bourbon
1 maraschino cherry

Steps:

  • In old-fashioned glass, combine simple syrup and bitters. Fill glass halfway with ice, then stir about a dozen times. Add enough ice to fill glass. Squeeze orange peel over glass to extract oils, add peel to glass, and add whiskey. Stir just until drink is cold and alcoholic bite has softened, about a dozen times. Garnish with cherry, swizzle stick, and straw.
