MARBLEIZED MOCHA TART
In this dessert, two fillings - a dark mocha ganache and a white chocolate ganache - are swirled together with a small knife for a dramatic effect.

Steps:
- Blend flour, powdered sugar and salt in processor 5 seconds. Add butter and cut in using on/off turns until mixture resembles coarse meal. Mix in yolk and enough water to form moist clumps. Knead dough briefly on work surface to combine; flatten into disk. Wrap in plastic and refrigerate until firm, at least 2 hours and up to 1 day.
- Preheat oven to 375°F. Roll out dough on lightly floured surface to 16-inch round (scant 1/8 inch thick). Transfer dough to 11-inch-diameter tart pan with removable bottom. Press dough into pan; trim excess. Freeze crust 15 minutes.
- Place tart pan on baking sheet. Bake crust 10 minutes; pierce with toothpick if crust bubbles. Continue to bake until crust is pale golden, about 12 minutes. Transfer to rack; cool crust completely.
- Stir chocolate, cream and espresso powder in heavy medium saucepan over low heat just until chocolate melts and mixture is smooth (mixture will be warm, not hot). Pour mocha ganache into prepared crust.
- Stir white chocolate and cream in heavy small saucepan over very low heat just until chocolate melts and mixture is smooth. Drizzle over mocha ganache. Using tip of small knife or toothpick, swirl fillings together to marbleize. Refrigerate tart until filling is cold and firm, at least 3 hours. (Can be prepared 2 days ahead. Cover and keep refrigerated.)
- Push pan bottom up to free tart from pan. Cut tart into wedges and serve.
WARM MOCHA TART

- Special Equipment Needed: 9 1/2-inch fluted tart pan with a removable bottom.
- Position a rack in the lower third of the oven and preheat the oven to 350°F.
- To make the tart crust: Mix the melted butter, sugar, salt and vanilla in a medium bowl. Add the flour and mix just until well blended. Don't worry if the dough seems too soft. Press all of the dough very thinly and evenly into the bottom and up the sides of the tart pan.
- Bake for 20 to 25 minutes, or until the crust is a deep golden brown.
- Meanwhile, make the filling: Place the butter, sugar, cocoa powder and cream in a medium saucepan and cook over medium heat, stirring, until the mixture is blended and smooth and begins to bubble around the edges. Remove from the heat and stir or whisk in the espresso or coffee powder and vanilla.
- Just before the crust is ready, whisk the egg thoroughly into the hot chocolate mixture.
- Pour the filling into the hot crust and turn off the oven. Leave the tart in the oven until it quivers like tender Jell-O in the center when the pan is nudged, 10 to 12 minutes. Cool on a rack.
- Serve the tart warm or at room temperature.
- Chocolate Note: Either natural or Dutch-process cocoa works well here. The former has a livelier, more complex, fruity flavor, while the latter has a cozy old-fashioned flavor reminiscent of chocolate pudding.

FRESH ORANGE TART WITH HAZELNUT CRUST

- For orange filling:
- Sprinkle gelatin over 1 tablespoon water in small bowl. Let stand 10 minutes to soften. Combine sugar, 2 tablespoons orange peel, and lemon peel in medium metal bowl. Using fingertips, rub ingredients together until sugar is moistened. Add eggs; whisk until smooth. Whisk in both juices.
- Place bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); whisk constantly until mixture thickens and thermometer inserted into mixture registers 180°F, about 5 minutes. Remove from heat. Add gelatin mixture and stir until dissolved. Strain orange mixture into blender; let cool until thermometer inserted into mixture registers 140°F, about 10 minutes.
- With blender running, add room-temperature butter 2 pieces at a time and process until blended. Continue blending 3 minutes longer.
- Transfer filling to bowl; mix in remaining 2 teaspoons orange peel. Cover and chill overnight.
- For crust:
- Butter 9-inch square tart pan with removable bottom. Finely grind flour, sugar, nuts, and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add egg yolk and blend in using on/off turns just until moist clumps form (do not allow dough to form ball). Press dough onto bottom and up sides of prepared pan (crust will be about 1/4 inch thick). Using thumb, press around sides to extend crust 1/4 inch above edge of pan. Chill 1 hour.
- Preheat oven to 375°F. Bake crust until golden brown, about 20 minutes. Cool crust completely on rack. (Crust can be made 1 day ahead. Store airtight at room temperature.)
- Stir orange filling to loosen. Spoon enough chilled orange filling into crust to fill completely. Chill tart at least 1 hour and up to 4 hours. Garnish with candied blood orange slices. Drizzle oranges with some of syrup. Serve cold.

- Preheat the oven to 200C/180C Fan/Gas 6. Roll out the pastry on a lightly floured surface and use to line a 23cm flan or sandwich tin. Prick the base with a fork. Lay a piece of baking paper in the pastry case and weigh it down with ceramic baking beans or rice. Bake for 10 minutes, then remove the paper and beans or rice and bake for another 5 minutes. Set aside. Turn the oven down to 160C/140C Fan/Gas 3.
- Pare the zest off 1 orange with a vegetable peeler, then cut into thin strips with a small knife. Put the granulated sugar and 150ml water in a small pan and heat gently until the sugar has dissolved. Add the orange zest strips and simmer for 10-15 minutes or until translucent. Drain and set aside.
- Finely grate the zest of another 2 oranges and set aside. Squeeze the juice from all 4 oranges and put in a stainless steel pan. Simmer until the juice is reduced to 125ml. Pour into a measuring jug, add the grated zest, and leave to cool for 10 minutes.
- Lightly whisk the eggs and caster sugar in a bowl until evenly blended, but make sure you don't overwhisk and create unwanted air bubbles. Gently whisk in the double cream and reduced orange juice. Pour into the flan case and bake for 35-40 minutes or until just set. Leave to cool.
- Sprinkle the chocolate and caramelised zest strips on top just before serving.
