Orange Kiss-Me Cake image

A whole orange is ground up and added to this cake along with raisins and walnuts. A delightful fruit filled cake!

1 whole orange, with peel
1 cup raisins
⅓ cup chopped walnuts
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup milk
½ cup shortening
2 eggs
⅓ cup white sugar
1 teaspoon ground cinnamon
¼ cup finely chopped walnuts
1 orange, sliced in rounds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Squeeze orange and reserve 1/3 cup juice. Grind orange peel and pulp, raisins, and 1/3 cup walnuts together. Set aside.
  • In a large bowl, blend flour, 1 cup sugar, baking soda, salt, milk, shortening and eggs. Beat 3 minutes at medium speed. Stir in orange-raisin mixture. Pour into prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Drizzle reserved orange juice over warm cake. Combine 1/3 cup sugar, cinnamon, and 1/4 cup walnuts; sprinkle over cake. Garnish with orange slices.

1 orange
1 cup raisins
1/3 cup walnuts
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup milk
1/2 cup margarine, softened (or butter or shortening)
2 eggs
1/3 cup orange juice, reserved from orange used in cake
1/3 cup sugar
1 teaspoon cinnamon
1/4 cup finely chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 13-by-9-inch pan.
  • Squeeze orange, reserving 1/3 cup juice for topping; remove seeds. In blender container, food processor bowl with metal blade, or food mill, grind orange peel and pulp, raisins and 1/3 cup walnuts. Set aside.
  • In a large bowl, combine flour and all remaining cake ingredients at low speed until moistened; beat 3 minutes at medium speed. Stir in orange-raisin mixture. Pour into prepared pan.
  • Bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  • Drizzle reserved 1/3 cup orange juice over warm cake in pan.
  • In a small bowl, combine 1/3 cup sugar and cinnamon; mix well. Stir in 1/4 cup walnuts; sprinkle over cake. Cool 1 hour, or until completely cooled.
  • Time does not include cooling time.

6 ounces frozen orange juice concentrate, thawed
2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, softened
1/2 cup milk
2 eggs
1 cup raisins
1/3 chopped walnuts
1/3 cup sugar (TOPPING recipe)
1/4 cup chopped walnuts
1 teaspoon cinnamon

Steps:

  • Sift together flour, sugar, soda and salt.
  • Stir together 1/2 cup thawed orange juice concentrate (save remaining juice for topping cake) with milk, eggs and softened butter.
  • Add flour mixture to wet ingredients stirring well to incorporate. Add raisins and chopped nuts.
  • Pour into greased 9 x 13 inch cake pan.
  • Bake at 350*F for 40 to 45 minutes.
  • Remove from oven and drizzle remaining orange juice concentrate over warm cake.
  • Combine 1/3 cup sugar, 1/4 cup chopped walnuts and 1 teaspoon cinnamon in a small bowl.
  • Sprinkle topping over warm cake. Allow to cool and serve.

This has become a Christmas morning tradition for my husband and me every year. I make it the night before, then warm it up first thing in the morning. It's wonderful with mimosas, or a warm cup of tea (or coffee, if you prefer).

1 orange
1 cup dried cranberries
1/3 cup walnuts
2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup milk
1/2 cup margarine or 1/2 cup butter, softened
2 eggs
1/3 cup orange juice
1/3 cup sugar
1 teaspoon cinnamon
1/4 cup finely chopped walnuts

Steps:

  • Heat oven to 350 degrees. Grease and flour a 13"x9" pan.
  • Squeeze orange, reserving 1/3 C juice for topping (removing seeds).
  • In a food processor using the metal blade, place orange peel and pulp cut into large chunks, cranberries, and 1/3 C walnuts. Pulse until coarsely chopped. Remove from processor, place in medium size bowl.
  • In processor, place all remaining cake ingredients, and blend well, scraping down sides.
  • Pour and scrape cake batter into bowl with orange mixture and stir well to blend.
  • Pour into prepared pan. Bake at 350 degrees for 35-45 minutes, or until toothpick inserted in center comes out clean.
  • Remove to rack. While cake is still warm, drizzle 1/3 reserved orange juice over cake.
  • In a small bowl, mix together 1/3 C sugar and cinnamon. Stir in 1/4 C chopped nuts.
  • Sprinkle sugar mixture over cake. Cool completely (well, cool until you can't stand not eating it! I actually serve it warm.).
