Steps:
- Preheat the oven to 350 degrees F.
- Wrap the outside of a 9-inch springform pan with 2 3/4-inch-high sides with 2 layers of heavy-duty foil. Finely grind the biscotti in a food processor. Add the melted butter and process until the crumbs are moistened. Press the crumb mixture over the bottom (not the sides) of the prepared pan. Bake until the crust is golden, about 15 minutes. Cool the crust completely on a cooling rack.
- Blend the ricotta in a clean food processor until smooth. Add the cream cheese and sugar and blend well, stopping the machine occasionally and scraping down the sides of the work bowl. Blend in the honey and orange zest. Add the eggs and pulse just until blended.
- Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the cheesecake is golden and the center of the cake moves slightly when the pan is gently shaken, about 1 hour and 5 minutes (the cake will become firm when it is cold).
- Transfer the cake to a rack and cool 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days. Cut the cake into wedges and serve.

Securely wrap foil around pan., In a large bowl, combine crumbs, 2 teaspoons orange zest and butter. - In a large bowl, combine the cracker crumbs, cinnamon, orange zest and butter. Press onto the bottom of a greased 10-in. springform pan. Stir into the room-temperature orange gelatin. Stir into cream cheese mixture, then fold in whipped topping. Pour into crust., For topping, in a large bowl, beat whipped topping and sugar. Beat in refrigerated orange gelatin (mixture will be thin). Chill for 30 minutes. Gently spoon over filling (pan will be full). Refrigerate for 8 hours or overnight. Remove sides of pan. Garnish with fruit and lemon balm if desired.

- Beat cream cheese until smooth.
- Beat in honey, OJ and vanilla.
- Then beat in eggs (one at a time) until well blended.
- Whisk in lemon and orange rinds.
- Place filling on crust (a store-bought graham cracker crust).
- Bake 15 minutes at 225 degrees and then reduce heat to 200 degrees and bake 1 1/2 hours.
- Topping: Mix ingredients. Remove cheesecake from oven and spread topping over the cheesecake. Bake for 5 minutes only at 400 degrees.

My mother used to make this all the time, but never really followed a recipe. I found this one in The New Jewish Holiday Cookbook: An International Collection of Recipes and Customs.

Steps:
- Coat with nonstick spray or grease two 9 by 5-inch loaf pans.
- Line the bottom of each pan with a small piece of wax paper cut to fit; then spray or grease the paper.
- Set the pans aside.
- Preheat the oven to 325 degrees.
- Put the hot water into a 2-cup measuring cup or a small bowl.
- Add the instant coffee granules, and stir until they are dissolved.
- Stir in the orange juice concentrate to cool the coffee.
- Set aside.
- Measure out the cinnamon, allspice, salt, baking powder and baking soda, and place in a small custard cup or on a piece of wax paper.
- Set aside.
- Measure the flour by spooning it into the proper-size measuring cups, and leveling off the top.
- After measuring the flour, sift it onto a large piece of wax paper or into an extra bowl.
- (Sifting is necessary as tiny lumps may not beat out during the mixing process and will appear in the finished cake.) Put the eggs, oil, sugar, and honey into a large mixer bowl.
- With an electric mixer at medium speed, beat them together until completely combined, about 2 minutes.
- Add the spice mixture, and beat until combined.
- Beat in about a third of the flour, then a third of the orange-coffee mixture, repeating twice until all the ingredients are added.
- Beat on low speed until the flour is completely mixed in, scraping the bowl if necessary.
- Then beat the batter on high speed for 1 to 2 minutes or until it is very smooth.
- The batter will be thin.
- Pour the batter into the prepared pans, dividing it evenly.
- Bake the cakes at 325 degrees for about 60 to 70 minutes, or until a toothpick inserted into the center of each cake comes out completely clean (test both cakes).
- If there is a wet spot in the center of the top of a cake, bake it a few minutes longer.
- Remove the cakes from the oven, and let them cool for 1 hour in their pans on a wire rack.
- The sides of the cakes should shrink away from the pans a little.
- Run a knife around the sides of each cake to loosen it; then turn the cake out of its pan, and peel the wax paper from the bottom.
- Invert the cakes so the tops are facing upward.
- Cool the cakes completely on the wire rack.
- Wrap the cooled cakes well for storage (use sturdy plastic wrap and/or heavy-duty foil).
- If the wrapped cakes are allowed to mellow overnight, their taste and texture will improve, and they will be easier to slice (a serrated bread knife works best).
- The tightly wrapped loaves can be kept at room temperature for up to 4 days, or they may be frozen for several months.
- (Defrost, wrapped, at room temperature, before slicing and serving.) To serve, cut each loaf crosswise into slices, and arrange the slices, slightly overlapping, on a tray or platter.

- Crush the biscuits roughly. You can do this by putting them in a plastic food bag and crushing them with a wooden spoon.
- Put the biscuits into a bowl and mix in the melted butter. Put the mixture into a 23cm cheesecake tin, then use the back of a spoon to spread it evenly and press it down in the tin to form the base. Put the tin into the fridge to set. This should take about 30 mins.
- Put the curd or cream cheese, orange zest, mascarpone, sugar and milk into a bowl and mix it well with the wooden spoon.
- Put the cream in a clean bowl and whisk until it is the consistency of thick custard. Add to the orange mixture and mix thoroughly.
- Remove the cheesecake tin from the fridge. Pour the filling over the biscuit base and spread evenly. Decorate with segments of orange and return to the fridge until ready to serve (at least 4 hours or overnight).
