1 pound sweet potatoes (about 2 medium)
2 medium apples
1 medium orange
1 teaspoon salt
1/2 teaspoon pepper
1 cup orange juice
2 tablespoons brown sugar
2 teaspoons cornstarch
1 teaspoon ground cinnamon
1 teaspoon ground ginger
2 pork tenderloins (about 1 pound each)

Steps:

  • Preheat oven to 350°. Peel sweet potatoes; core apples. Cut potatoes, apples and orange crosswise into 1/4-in.-thick slices. Arrange in a foil-lined 15x10x1-in. baking pan coated with cooking spray; sprinkle with salt and pepper. Roast 10 minutes., Meanwhile, in a microwave-safe bowl, mix orange juice, brown sugar, cornstarch, cinnamon and ginger. Microwave, covered, on high, stirring every 30 seconds until thickened, 1-2 minutes. Stir until smooth., Place pork over sweet potato mixture; drizzle with orange juice mixture. Roast until a thermometer inserted in pork reads 145° and sweet potatoes and apples are tender, 45-55 minutes longer. Remove from oven; tent with foil. Let stand 10 minutes before slicing.

1 teaspoon salt
1 garlic clove, minced
2 to 3 fresh thyme sprigs or 1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 boneless pork loin roast (5 pounds)
GLAZE:
1 cup orange juice
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1/3 cup cold water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour. , Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. Add to orange juice mixture. Bring to a boil; cook and stir 2 minutes. Reserve 1 cup glaze for serving; brush half of remaining glaze over roast. , Bake until a thermometer reads 145°, 20-40 minutes longer, brushing occasionally with remaining glaze. Let stand 10 minutes before slicing. Reheat reserved glaze; serve with roast.

Pork roasts are an easy and affordable option for feeding a crowd, but the lean meat can become dry in the oven. This recipe solves that problem with a super flavorful brine full of bright, warming flavors like orange, ginger, star anise and dried chilies.

2/3 cup kosher salt
1/3 cup sugar
2 2-inch pieces fresh ginger, quartered lengthwise and smashed
3 cloves garlic, smashed
12 star anise pods
8 dried chiles de arbol, torn into pieces
1 orange, quartered
1 bone-in, center-cut pork roast (8 ribs; about 7 pounds), bones frenched
1/2 cup fresh orange juice (from 2 oranges)
1/3 cup hoisin sauce
1/4 cup soy sauce
1 teaspoon sugar

Steps:

  • Brine the pork: Combine the salt, sugar, ginger, garlic, star anise and chiles in a large pot with 4 cups water. Bring to a simmer, stirring occasionally to dissolve the sugar and salt. Remove from the heat and let cool completely. Squeeze the orange juice into the brine, then add the squeezed orange pieces and 2 cups cold water.
  • Place the pork on a cutting board, fat cap-side down and make a few slits between the ribs with a sharp knife; transfer to a large pot or resealable plastic bag. Add the brine, plus up to 2 cups more water if needed to cover the pork. Cover and refrigerate overnight.
  • Preheat the oven to 375˚ F. Remove the pork from the brine and pat very dry. Let stand at room temperature for 30 minutes. Set a rack in a roasting pan and place the pork on the rack, fat-side up. Roast until a thermometer inserted into the center registers 115˚ F to 120˚ F, about 1 hour 15 minutes. Remove from the oven and increase the temperature to 425˚ F.
  • Meanwhile, make the glaze: Combine the orange juice, hoisin sauce, soy sauce and sugar in a medium nonstick skillet over medium heat. Simmer, stirring, until thickened, 5 to 8 minutes. Set aside about half of the glaze for serving.
  • Brush some of the remaining glaze over the roast. Return to the oven and continue cooking, brushing with more glaze every 5 minutes, until the thermometer registers 135˚ F to 140˚ F, 15 to 25 more minutes. Transfer the pork to a cutting board and let rest 20 to 30 minutes before carving. Serve with the reserved glaze and any collected juices.

2 pork steaks
1 tablespoon olive oil
1/4 cup orange juice
1 tablespoon dried basil
1/4 teaspoon black pepper
1/4 teaspoon seasoning salt

Steps:

  • Put all ingredients in a medium sized freezer bag. Shake well. Let sit in the refrigerator at least 1/2 hour.
  • Preheat a pan on the stove (I recommend cast-iron) on medium heat.
  • Remove the pan from the heat to set the steaks in the pan.
  • Pour the marinade over top of the steaks.
  • Return the pan to the heat, flipping the steaks several times (every 3 minutes or so)until the marinade has cooked off and the steaks have browned (about 10-15 minutes).
  • Serve and enjoy! Can be doubled in a large enough pan.

1/4 teaspoon Cajun seasoning
1/4 teaspoon cayenne
Salt and pepper
2 tablespoons canola oil
1 (14 ounce) NY strip steak
Orange Bourbon Glaze, recipe follows
2 tablespoons diced shallots
1/4 cup butter, divided
1 cup bourbon
2 seedless oranges, peeled and segmented
1/2 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups beef stock

Steps:

  • Preheat grill to high and oven to 350 degrees F.
  • In a medium bowl, combine Cajun seasoning, cayenne, salt, pepper and 2 tablespoons canola oil. Rub mixture on both sides of the steak. In a saute pan, sear steak for 7 minutes on both sides. Place steak in a plastic bag to marinate for 1 hour in refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 12 minutes (6 minutes on each side). Remove from grill with tongs and let rest for 8 to 12 minutes. Using a serving spoon, add Orange Bourbon Glaze to steak.
  • In a medium saucepan over medium-high heat saute the shallots in 2 tablespoons of butter until caramelized. Whisk in the bourbon, oranges, brown sugar, salt and pepper. Bring to a simmer over medium-high heat. Reduce heat to medium-low and add beef stock. Simmer until mixture is a sauce-like consistency. Remove from heat. Whisk in the remaining 2 tablespoons of butter.

Leaves you with a great meal and time to mingle. Cut the recipe in half and use only one 2 lb. steak or two 1 pound steaks. Other steak cuts work well, too. 2/3 cup dry red wine
1/2 cup fresh orange juice
1/3 cup fresh lime juice
1/2 cup honey
1/4 cup cider vinegar
1/4 cup soy sauce, preferably Kikkoman
2 tablespoons mild olive oil
1 1/2 teaspoons minced garlic
1 teaspoon finely grated orange zest
1 teaspoon Tabasco sauce
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon fresh ground black pepper
2 (2 lb) beef flank steaks, marinated in marinade overnight

Steps:

  • To make the marinade, combine all the ingredients in a shallow 14-inch glass baking dish and stir until the honey is dissolved.
  • Add the flank steaks and turn to coat with the marinade. Cover and refrigerate overnight.
  • Bring the steaks to room temperature.
  • Prepare coals for grilling or preheat the broiler.
  • Drain the steaks, reserving the marinade.
  • Place the marinade in a large skillet and bring to a boil over high heat. Continue boiling until the liquid is syrupy and mahogany-colored, about 10 minutes.
  • Remove from the heat and let cool. (There should be about 1 cup of glaze.).
  • Brush the glaze on both sides of the steaks.
  • Grill or broil the steaks 4 inches from the heat until nicely glazed, about 5 minutes.
  • Turn and grill or broil 5 minutes longer for medium-rare steaks.
  • Let the meat rest for 5 minutes before carving.
  • Transfer the steaks to a cutting board. If you broiled the steaks, reserve any pan drippings.
  • Holding a sharp knife at a 45-degree angle, cut the steaks across the grain into thin slices.
  • Transfer the meat to a warmed platter, top with the pan drippings, and serve immediately.

  • Mix the five-spice powder, honey and enough orange juice to loosen, then smear over the chops. Leave to marinate for 10 mins.

6 pork steaks (or use 6-8 center-cut pork chops about 3/4-1-inch thick)
black pepper (to taste)
1/2 cup brown sugar
1 tablespoon cornstarch
1 teaspoon ginger
1/4 cup ketchup
1/4 cup Heinz Chili Sauce (use mild chili sauce)
1 -2 tablespoon fresh minced garlic (or to taste)
3/4 cup low sodium soy sauce (use only low-sodium soy sauce)
cooked rice

Steps:

  • Set oven to 325 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Season both sides of the pork steaks or chops with a small amount of black pepper, then place in the baking dish.

1/3 cup orange juice
1/3 cup orange marmalade
1/4 cup maple syrup
2 tablespoons red wine vinegar
1 garlic clove, minced
2 pork tenderloin, approximately 1 lb. each
salt and pepper
1 teaspoon extra virgin olive oil

Steps:

  • In a small saucepan, all the orange juice, marmalade, maple syrup, red wine vinegar, and garlic. Whisk together over hight heat. Boil for 5-8 minutes, whisking occasionally until sauce is slightly thickened. Divide glaze in half. Keep half of the glaze warm in the saucepan.
  • Season the tenderloins with salt and pepper. Over high heat, in an ovenproof skillet, heat the extra-virgin olive oil and sear all sides of the tenderloins. Transfer skillet into a preheated 375°F oven After 10 minutes, brush the tenderloins with half of the glaze. Continue to cook until the internal temperature of the pork reaches 160°F Remove the pork from the skillet and tent with foil to rest for at least 5 minutes before slicing. Slice into 1/2 inch medallions and arrange on serve platter, Drizzle with remaining glaze.

1 tbsp olive oil
2 garlic cloves , sliced
4 pork steaks
200ml hot strong flavoured chicken stock (or gluten-free alternative)
1 tbsp fresh thyme
4 tbsp chunky marmalade
vegetables , to serve

Steps:

  • Heat the oil in a large frying pan and briefly cook the garlic, stirring with a wooden spoon, to start it softening. Add the pork to the pan in a single layer, season and cook for 6 mins each side, until golden and cooked through.
  • Meanwhile, mix the stock with the thyme and marmalade. Remove the pork from the pan and set aside briefly to rest on a warm plate. Pour off any oil from the pan, then pour in the marmalade mixture and bubble to make a sauce. Return the pork to the pan, coat in the sauce and serve with quick-cooking vegetables like baby potatoes, spinach and peas.
