I make big Christmas cookie plates every year and it's fun to have something with a different shape to include. These have a delicious flavor with the gingerbread and orange, and they are really easy! This is also yummy with lemon zest if you prefer that over the orange. Number Of Ingredients 13

1/2 cup butter, softened
4 ounces cream cheese, softened
1/4 cup molasses
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup all-purpose flour
1/2 cup white baking chips
1/4 cup heavy whipping cream
2 tablespoons butter
4 teaspoons grated orange zest
Candied orange peel, optional

Steps:

  • Beat first 7 ingredients until light and fluffy. Gradually beat in flour. Refrigerate, covered, until firm enough to shape, about 1 hour., Preheat oven to 350°. Shape dough into 1-in. balls; press evenly onto bottom and up sides of ungreased mini-muffin cups. Bake until golden brown, 15-18 minutes. Press centers with the handle of a wooden spoon to reshape as necessary. Cool completely in pan before removing to wire rack., In a microwave-safe bowl, heat baking chips, cream and butter until blended, stirring occasionally. Stir in orange zest; cool completely. Spoon into crusts. Refrigerate until filling is soft-set. If desired, garnish with orange peel.

1 cup orange juice
3 tablespoons butter
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1 ½ teaspoons ground ginger
⅛ teaspoon salt
1 ½ cups all-purpose flour
1 ½ cups whole wheat flour
1 ½ teaspoons active dry yeast

Steps:

  • Place ingredients into the bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press Start.
  • When the machine signals the end of the cycle, remove the dough. Roll into a loaf, and place in a 9x5 inch bread pan. Set aside to rise until doubled, or until your finger leaves a dent when the dough is pressed lightly.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake the bread for 25 minutes in the preheated oven, or until a rich golden brown.

Vegetable oil
1 medium onion, diced
1 cup brown rice
1 teaspoon orange zest
1 tablespoon finely chopped or fresh ginger
2 cups vegetable stock
Salt and freshly ground black pepper

Steps:

  • Begin by sweating onions in oil in a medium sized pan until they are translucent. Add the rice and saute for 1 minute. Add the orange zest and ginger and cook for 1 more minute. Add the stock and bring to a boil. Cover the pan with a lid and cook over low heat for 20 to 25 minutes or until rice is tender. Add salt and freshly ground black pepper, to taste.

1 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
6 oz. (1/2 of 12-oz. can) frozen lemonade concentrate (Do not thaw.)
2 cups orange juice
1 Tbsp. ground ginger
1 tub (8 oz.) COOL WHIP LITE Whipped Topping (about 3 cups), thawed
6 small orange slices, cut in half
2 Tbsp. chopped crystallized ginger

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in lemonade concentrate.
  • Refrigerate 15 min. or until slightly thickened.
  • Stir in orange juice and ginger. Add COOL WHIP; whisk until blended. Pour into loaf pan.
  • Freeze 4 hours or until firm. Let sorbet stand at room temperature 15 min. to soften slightly before serving. Scoop sorbet into dessert dishes; top with orange and ginger.

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

2 salmon fillets (about 8 to 10 ounces each)
Kosher salt and freshly ground black pepper
1/3 cup orange marmalade
1-inch piece fresh ginger, grated (see Cook's Note)
3 tablespoons soy sauce
2 tablespoons olive oil
Juice of 1 orange (about 1/3 cup)

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

2 inches fresh ginger, peeled

Steps:

  • Put ginger and shallot in a food processor fitted with a metal blade; you could also just mince these with a handheld mincer.
