HOLIDAY BREAD IN A JAR
This is a wonderful gift or great to make to keep quick breads and desserts on hand. pint size breads baked right in the jar, sealed up there good for 6 months. I have many more differnt types to post so if you like this look around for the others. Special Equipment: 8 pint-size canning jars, with lids and rings (smooth sides and wide mouth only so the cake will slide out).

Steps:
- Cream the shortening and sugar. Add the eggs, baking powder, soda, salt and spices.
- Add water alternately with the flour. Stir in the nuts and can of cranberry sauce.
- Grease 8 pint size canning jars that have been washed in hot soapy water and dried.
- (Grease them by using a brush dipped in melted shortening). Fill each jar 1/2 full; wipe the rim clean and bake in a 325°F oven for 35 to 45 minutes (bake on cookie sheet on middle rack).
- Meanwhile, bring water to a boil in large pot. Turn off heat when water begins to boil. Place the lids and caps in the water and let sit for 10 minutes or more. Leave the lids in the hot water until ready to use.
- When the cakes are done, remove the jars one at a time. Wipe the rim and quickly add lid. No need to wipe off water from lid--the added moisture will not hurt the cake. Screw lids on tightly and let rest on towel until completely cool. Jars will seal as they cool.
- Makes 8 pint size jar cakes--stores up to 6 months in cool dry place.
- If giving as a gift, top with pretty fabric and attach a card with name of cake, date made, and expiration date.
- If not for a gift, just write the info on the lid with a permanent marker.
- When ready to use, if cakes do not slide out easily, just run jar under hot water for a few seconds or microwave with lids removed for 2 seconds.

- "These products are not recommended for canning. Choose recipes that you can freeze. In fact, most of these products are not really "canned." The directions call for baking in the jar and then closing with a canning lid. Many recipes for quick breads and cakes are low acid and have the potential for supporting the growth of bacteria like Clostridium botulinum if it is present inside the closed jar. You will see these products made commercially; however, additives, preservatives and processing controls not available for home recipes are used. Canning jar manufacturers also don't endorse baking in their canning jars.

ORANGE DELIGHT SALAD

Steps:
- Drain and reserve liquid from fruit. Add enough water to make two cups of liquid. Pour pudding mix & liquid into a pan.
- Cook until thickened, stir in dry Jello.
- Mix in pineapple and oranges.
- Chill.

ORANGE DELIGHT CAKE
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour two 8 inch cake pans.
- Sift together into a large bowl the cake flour, 1 1/3 cups sugar, baking powder, baking soda, and 3/4 teaspoons salt. Add grated orange rind, shortening, orange juice, and 1/3 cup water. Beat on medium speed for 2 minutes with an electric mixer, scraping bowl while beating. Add two whole eggs and beat batter for 2 more minutes. Beat in the lemon juice. Pour batter into prepared pans.
- Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes. Remove cakes from pans and let cool. Frost with Double Boiler Icing or whipped cream. Sprinkle cake with grated orange rind and finely chopped nuts or coconut.
- To Make Double Boiler Icing: In the top of a double boiler put; the 2 egg whites, 1 1/2 cups of the sugar, 5 tablespoons water, 1/8 teaspoon salt, light corn syrup, and cream of tartar. Place over boiling water and beat until blended. Cook mixture beating constantly until mixture will stand in peaks. Remove from heat and add the vanilla. Continue beating until of spreading consistency, about 5 minutes. Spread onto cooled cake.

FRUIT COCKTAIL BREAD GIFT AND BAKE IN A JAR
This starts with an orange bread and adds either coconut or almonds along with fruit cocktail to create this wonderful bread. It requires a wide mouth clean, new pint jar

- 1. Mix all but the fruit cocktail together and place in baggy. Put into the jar. Add the snack size fruit coctail in the package. Close lid and decorate and attach a tag
- 2. Fruit cocktail Bread (you bake in the jar) Remove contents of the jar. drain fruit reserving the juice. add 1 egg 1 tablespoon oil and the fruit cocktail. add 1 tablespoon reserved juice. Mix well. Spray the inside of the jar with cooking spray. place batter in jar and place jar in a smakk baking dish to stableize. do not put lid on jar. Bake at 350 for 35 minutes or until done. Remove from oven and cool 10 minutes. Run knife around jar to loosen and slide the bread out. slice and serve.
