INCREDIBLE ORANGE CHOCOLATE CHIP MUFFINS
These muffins are a staple in my house, they are amazingly fluffy and almost cake-like but light and SO delicious - not to mention easy! Taste them once, you'll make them over and over! Enjoy!

Steps:
- Preheat oven to 350, have eggs at room temperature Cream butter and sugar in a mixing bowl until light and fluffy. Add the eggs and mix on medium until incorporated.
- Add grated orange zest, flour, baking soda, baking powder and sour cream, mix inches Add orange juice and chocolate chips, mix on low for about 30-45 seconds, until mixed well.
- Fill greased muffin pan cups a little more than half full, bake at 350 for 12 min or more, until cake tester comes out clean - depends on your oven, should be between 12 and 15 minutes; mine usually takes 13 minutes

Orange juice and just a hint of orange zest add a bright flavor dimension to these scrumptious chocolate chip muffins.

- Preheat oven to 400°F. Line twelve 2 1/2-inch muffin cups with paper bake cups; set aside.
- In a large bowl stir together flour, baking powder, and salt. Stir in chocolate pieces. Make a well in the center of flour mixture; set aside.
- In a medium bowl combine eggs, sugar, milk, orange peel, orange juice, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy).
- Spoon 1/4 cup of the batter into each prepared muffin cup. Sprinkle generously with Streusel Topping. Bake for 18 to 20 minutes or until a wooden toothpick inserted in centers comes out clean.
- Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm. Streusel Topping
- In a medium bowl stir together flour and sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in walnuts and chocolate pieces.

- Cut orange into 8 or more pieces, remove seeds.
- Place cut orange into a blender or food processor.
- Blend into rind is finely ground; add orange juice to this mixture to make it easier to grind.
- Add dates (or chocolate chips), egg, and margarine; blend until mixed (if using chocolate chips you may want to add them in step 6 instead of in this step).
- In a large bowl, mix together flour, baking powder, baking soda, and sugar.
- Add orange mixture to dry ingredients; stir gently until just mixed.
- Spray 12 medium-large muffin cups with cooking spray.
- Fill tins 2/3 full.

- Heat the oven to 150deg C (fan)\160deg C (non fan). Line a deep muffin tray with 7 lareg paper muffin cases
- Sieve the flour into a bowl and stir in the sugar. Zest the orange into the bowl
- In a large jug mix together the egg, sunflower oil, milk and orange extract\flavour using a fork or wisk.
- Pour the wet ingredients into the dry and stir VERY gently together until just combined.
- Put a tablespoon of the mixture in the base of each paper case. Break a segment of chocolate in half and place two halves in the middle of each muffin. Top with the rest of the muffin mixture.
- Bake for 15 min (fan)\20 min (non fan) until risen and firm.
- For the coating, melt the rest of the chocolate orange segments over a bowl of hot water and then drizzle the chocolate on top of the muffins.
ORANGE CHOCOLATE CHIP MUFFINS
Steps:
- Position an oven rack in the middle of the oven. Preheat the oven to 350°F. Line two standard muffin pans with 16 paper baking cups or lightly butter the muffin cups.
- Combine the flour, baking soda, cinnamon, and salt in a large bowl and set aside.
- Using a mixer set on high speed, cream the butter and sugar in a large mixing bowl for 5 minutes, or until light and fluffy. Beat in the eggs, one at a time, beating well after each addition. Add the vanilla, sour cream, milk, and orange zest, and beat until smooth, occasionally scraping down the sides of the bowl.
- Turn the mixer to low and combine the flour mixture with the butter mixture, beating just until incorporated, with no streaks of flour remaining. Fold in the chocolate chips.
- Spoon the batter into the muffin cups, filling them two-thirds full. Bake the muffins for 20 to 25 minutes, or until the tops spring back when pressed lightly and are a light golden color, or a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and allow to cool in the pan for 5 minutes. Remove the muffins from the pan, transfer to a wire rack, and allow to cool for 15 minutes.

- In medium mixing bowl, combine flour, sugar, baking powder, salt and chocolate chips.
- In a small mixing bowl, whisk together milk, vegetable oil, egg,and orange oil or peel until light.
- Add wet ingredients to dry and stir together for 20 seconds, or only until ingredients are just moist.
- If you see lumps, it is OK to leave them.

FOOD PROCESSOR ORANGE DATE MUFFINS
These muffins are mixed up entirely in the food processor, although I did have to give them a final stir by hand to mix in some unincorporated flour. They are are absolutely delicious and freeze well.

- Toss the dates with 1/2 cup of the all-purpose flour.
- In a food processor fitted with a metal blade, process the mixture until evenly chopped.
- Add the orange and process until finely chopped.
- Add the orange juice, eggs and butter and process until blended.
- Stir together the whole wheat flour, remaining all-purpose flour, sugar, baking powder, baking soda and salt.
- Add the date mixture and process just until moistened but not overmixed.
- Spoon into large greased for paper-lined muffin cups, filling three-quarters full.

- Preheat oven to 400 degrees.
- Cut orange into bite size pieces, removing only the seeds.
- Place the orange into an electric blender on grind, while grinding add the juice, egg and butter into the blender and mix well.
