ORANGE CREAMSICLE TRUFFLES
These an orange lovers dream come true! These decadent treats have a bright orange goodness paired with a creamy, rich white chocolate flavor to compliment them.

Steps:
- Pour white chocolate chips into a mixing bowl, set aside. Melt butter along with orange zest in a small saucepan. Stir in cream and scald mixture. Pour hot cream mixture through a fine mesh sieve over white chocolate chips and using a rubber spatula press zest against sieve to release orange oils into mixture, add orange extract.
- Allow mixture to rest 1 minute, add optional food coloring to white chocolate chip mixture then stir until smooth. Cover mixture and refrigerate 2 hours or until firm enough to handle.
- Scoop mixture out by heaping teaspoon fulls and form into balls then roll in powdered sugar. Freeze truffles 20 minutes then enjoy. Store truffles in refrigerator as they will soften at room temperature or freeze for up to 1 month.

Sweet orange flavor meets white chocolate, butter, and cream for a perfect ganache that is then chilled and rolled into balls before getting a dip in powdered sugar--so delicious and surprisingly simple to make with only six ingredients.

- Pour the white chocolate chips into a medium, heat-safe bowl. Add the orange extract and food coloring; set aside.
- In a medium sauce pan, heat the butter over low heat until melted. Increase the heat to medium and add the heavy whipping cream; whisk to combine. Cook just until the mixture begins to simmer. Do not allow it to simmer for more than a couple of seconds. Immediately remove the pan from the heat and pour the liquid over top of the white chocolate.
- Immediately whisk until the chocolate is melted and the mixture is smooth and creamy.
- Cover the bowl and refrigerate until the white chocolate orange ganache is chilled and firm.
- Scoop the chilled ganache into 12 small balls and roll between your hands until smooth. Roll each ball in powdered sugar.
- Chill the truffles in the refrigerator until firm, or about 1 hour.

Up against a deadline and after throwing away the first attempt with a published recipe, I quickly altered a vanilla cupcake online to come up with this. Everyone who's tasted it seems to really like it!

Steps:
- 1. Cream butter and sugar well, about 5 minutes. Add eggs, continue beating.
- 2. Mix dry ingredients in another bowl and add to wet. Blend in flavorings, colors (*If desired), and liquids. Beat at high speed 2 minutes until fluffy and light.
- 3. Pour into greased 7" x 11" pan and bake at 350 for 30 minutes or until a toothpick tests clean. Cool completely.
- 4. For cake balls, crumble cake and mix with 1/2 c Orange DreamPudding to bind.
- 5. To make pudding, blend all ingredients together in mixer bowl. Refrigerate until ready to use.
- 6. To make the centers, scoop several scant 1/4 teaspoon portions into a shallow bowl spread with 1/4 c powdered sugar. Gently and quickly roll each little pudding ball in the sugar and put on a plate. Work quickly so the heat of your hands doesn't melt the pudding. Freeze until time to insert into cake balls.
- 7. Stuff by first rolling cake ball. Use your little finger to push an indentation almost all the way through the center of the ball. Add the "pudding bon bon." Pinch to close and reroll. Refrigerate 15 minutes before dipping in chocolate or white chocolate.
- 8. As an alternative to dipping in candy melts, mix 3/4 cup powdered sugar with one pack of orange-flavored unsweetened soft-drink mix (kool-aid). Spread in shallow bowl and roll cake balls.

- In a bowl, beat the cream with a whisk until soft peaks form. Set aside.
- In another bowl, beat the egg whites until soft peaks form. Add the honey and vanilla extract and continue beating until firm peaks form.
- Combine the egg whites mixture to the cream and add the orange juice and orange zest.
- Using a popsicle mold or wax paper cups, fill the molds and insert the popsicle sticks. Place in the freezer overnight and serve.

- Line a 9 inch square pan with "Release" foil or line with regular foil and spray with cooking spray.
- Place marshmallow crème and white chips in a large mixing bowl.
- Combine sugar, cream and butter in saucepan.
- Turn heat to medium and cook, stirring once or twice, until mixture reaches 235°F
- Remove from heat immediately and pour hot cream mixture into mixing bowl with chips and marshmallow crème.
- Stir well with a wooden spoon -- mixture might look slightly stretchy and unappetizing, but don't worry, it will smooth out.
- Remove 1 cup of mixture and set aside.
- Stir orange extract and a few drops of each color food coloring into mixture which remains in bowl.
- Stir until it reaches a lovely orange hue.
- Adjust colors if needed.
- Pour orange mixture into prepared pan. Pour or spoon white mixture on top.
- Drag a knife through both to make swirls.
- Using a sheet of foil, press down slightly to smooth top.
- Let cool to room temperature (about 40 minutes) then chill for one hour or until set.
- Lift fudge from pan using foil handles and using a large knife, score into squares.
