WHOLE WHEAT CRANBERRY ORANGE MUFFINS



Whole Wheat Cranberry Orange Muffins image

Yummy, light muffins. I usually make these muffins when we are having a "special" breakfast, for holidays or birthdays. The adults and kids both love these muffins. It has no sugar and uses whole wheat pastry flour. Note, you must use whole wheat pastry flour or the muffins are too grainy and dense. You can also use egg substitute.

2 cups whole wheat pastry flour
2/3 cup sugar substitute (such as Splenda)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
5 tablespoons butter or 5 tablespoons margarine, melted
2/3 cup orange juice, use juice from can of mandarin oranges, adding enough orange juice to make 2/3 cups
3 eggs, beaten
3/4 cup fresh cranberries
1 (11 ounce) can mandarin oranges
cooking spray

Steps:

  • Preheat oven to 375°F.
  • Combine dry ingredients.
  • Melt the butter.
  • Whisk the eggs and orange juice into the melted butter.
  • Add the liquid to the dry ingredients mixing until just moistened.
  • Fold in the cranberries and oranges being careful not to mash the oranges.
  • Spoon the batter into a muffin tin that has been coated with cooking spray.
  • Bake for 15- 20 minutes, or until firm and golden brown.

1/2 cup raw wheat germ
1/2 cup dried sweetened cranberries
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
3/4 cup packed brown sugar
1/4 cup canola oil
1 teaspoon grated orange rind
1/2 cup fresh orange juice
2 large eggs
cooking spray
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 375°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 7 ingredients (through nutmeg) in a large bowl; stir with a whisk. Make a well in center of mixture.
  • Combine brown sugar, oil, rind, juice, and eggs; stir with a whisk. Add egg mixture to flour mixture; stir just until combined. Spoon batter into 12 muffin cups coated with cooking spray.
  • Sprinkle with turbinado sugar. Bake at 375° for 17 minutes or until muffins spring back when touched in center.

1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup granulated sugar
1/4 cup toasted wheat germ
2 teaspoons baking powder
1 teaspoon ground cinnamon
2/3 cup carnation fat-free evaporated milk (5 ounce can)
1/3 cup 100% apple juice, Premium
1/4 cup vegetable oil
1 large egg
1 1/4 cups baking apples
3/4 cup dried sweetened cranberries (OCEAN SPRAY CRAISINS)
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 400º F.
  • Grease or paper-line 12 muffin cups.
  • Combine all-purpose flour, whole-wheat flour, granulated sugar, wheat germ, baking powder and cinnamon in medium bowl.
  • Beat evaporated milk, apple juice, vegetable oil and egg in small bowl until blended.
  • Add to flour mixture; stir just until moistened.
  • Fold in apple and cranberries.
  • Spoon batter into prepared muffin cups, filling 3/4 full.
  • Sprinkle with cinnamon-sugar.
  • Bake for 14 to 16 minutes or until wooden pick inserted in center comes out clean.
  • Cool in pan on wire rack for 2 minutes.
  • Remove to wire rack to cool slightly.
  • Serve warm.

Number Of Ingredients 12

2 cups wheat bran
1/2 cup sugar
2 1/2 cups flour (I use combo of white & wheat)
2 1/2 teaspoons baking soda
1 teaspoon salt
1/3 cup fresh squeezed orange juice (approximately)
1 2/3 cups low-fat milk (approximately)
1 -2 tablespoon orange zest
1/2 cup applesauce
1 teaspoon vanilla
2 eggs, beaten
3/4 cup dried cranberries

Steps:

  • Combine dry ingredients in a large bowl.
  • In a separate bowl, squeeze orange juice from orange(s) and combine with enough low-fat milk to make 2 cups total. Add zest from orange(s). Mix in applesauce, vanilla and eggs. Add wet ingredient mixture to dry ingredients and mix well by hand. Stir in cranberries.
  • Divide between muffin tins, and bake at 350°F for 18-20 minutes.

A lo-fat muffin that tastes great. This is a "heavy" muffin - not light & fluffy, but tasty. To reduce fat & cholesterol I replaced the butter with Smart Balance regular (not light) spread and used 2 egg whites.

1 cup flour
3/4 cup whole wheat flour
1/4 cup wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons unsalted butter or 4 tablespoons Smart Balance butter spread
1/2 cup sugar
2/3 cup orange juice
1 eggs or 2 egg whites
1 cup dried sweetened cranberries
1 cup chopped dried apricot halves

Steps:

  • Preheat oven to 350 degrees. Prepare muffin pans by spraying with oil or use paper liners. This recipe seems to make more than 12.
  • Combine first six ingredients. Can replace 1/4°C wheat germ with additional 1/4°C whole wheat flour.
  • Add butter until mixture is crumbly.
  • Stir in the sugar.
  • In a separate bowl, combine orange juice & egg.
  • Add to flour mixture just until blended. Dough will be stiff.
  • Add cranberries and apricots.
  • Fill muffin cups 3/4 full.
  • Bake 18 minute until a toothpick comes out clean when inserted into a muffin.
  • Cool 5 minutes & then remove from pan & completely cool on rack.

  • Sprinkle tops lightly with a bit of sugar.
