2 sticks (1 cup) salted butter, cut into small cubes, plus more for buttering the pan
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1/4 cup all-purpose flour
4 large eggs
Zest and juice of 4 oranges (making about 1 cup of juice)
Powdered sugar, for sifting

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  • Stir together the flour, granulated sugar and salt in a bowl. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  • For the filling: Stir together the granulated sugar and flour in a bowl. Crack in the eggs and whisk to combine. Add the orange zest and juice and mix until combined. Pour over the crust and bake until the filling is set, about 20 minutes.
  • Allow to cool in the fridge for a minimum of 2 hours, then sift powdered sugar over the top before cutting into 16 pieces.

Steps:

  • Preheat the oven to 300°F. Line the bottom and sides of an 8-inch baking pan with parchment paper, leaving enough overhang on all sides. Set aside.For the crust:Combine the melted butter, sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.For the filling: Combine the cranberries, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the cranberries are evenly coated. For the streusel: Combine the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender until the mixture resembles coarse crumbs. Remove the crust from the oven, increase heat to 350°F. Pour the cranberry mixture on top of the warm crust. Sprinkle the cranberry layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.

½ teaspoon salt
¾ cup butter or margarine
1 egg, beaten
2 cups cranberry sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

¼ teaspoon salt
1 cup cold butter
¼ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375 F. Line a 9x13-inch baking pan with parchment paper.
  • Add the cranberries, ¾ cup sugar, orange juice, vanilla extract, orange zest, and cornstarch to a large saucepan and bring to a simmer. Simmer for about 5 minutes, or until the cranberries start popping and the liquid thickens. Remove the saucepan from the stove and let it cool.

So, I checked them out after I got off from work and at over $2 per little "triangle" piece, I decided I'd learn to make them for a lot less. My family members all urged me to recreate these. So after a bit of research, I found that there's a few copycat recipes online; but this is my twist on that concept.

1 cup unsalted butter, at room temperature
1 cup brown sugar
⅓ cup white sugar
3 large eggs
1 teaspoon orange extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Beat butter, brown sugar, and white sugar for bars together with an electric mixer until light and fluffy, about 5 minutes. Stir in eggs, orange extract, and vanilla extract until well blended. 2 large unpeeled oranges, cut into quarters
2 1/2 cups sugar
3 tablespoons cornstarch

1/2 cup chopped nuts (optional)
3 1/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon grated lemon peel
1 cup butter
3 large egg yolks
3/4 teaspoon vanilla extract
1 -2 tablespoon water

Steps:

  • Grind cranberries and oranges, including peel; set aside.
  • In a saucepan, combine sugar, cornstarch, ginger.add ground fruit -- bring to a boil.
  • Reduce heat, cook and stir for 15 minutes or until thick.
  • Remove from the heat; stir in nuts, if using.
  • Set aside to cool.
  • Meanwhile for crust:.
  • Combine flour, sugar and lemon peel in large bowl.
  • Cut in butter until coarse crumbs form.
  • Add egg yolks, vanilla and just enough water so dough holds it shape.
  • Pat two thirds of dough into 13x9 pan --
  • Cover with cranberry orange mixture.
  • Crumble remaining dough on top.

Steps:

  • Bright red cranberries and toasted green pistachios stud these tart-and-tangy bar cookies and make them a colorful addition to any cookie platter. They hold well in both the refrigerator and the freezer so they're an excellent make-ahead option.
  • To prepare crust: Position rack in center of oven; preheat to 350degreesF. Coat an 8-inch-square baking pan with cooking spray.

2/3 cup sugar
1/3 cup orange juice
1 pinch sea salt
2 cups graham cracker crumbs (from about 15 sheets)
1/2 cup butter, melted
2 Tbsp. brown sugar
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1-1/3 cups granulated sugar
4 eggs, at room temperature
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream, at room temperature
1/4 cup heavy whipping cream, at room termpature

Steps:

  • Before beginning, set all ingredients out on the counter to come to room temperature. This is very important because it ensures a creamy cheesecake.
  • Cranberry Swirl
  • Begin by making the cranberry swirl sauce. Add the cranberries, sugar, orange juice and salt to a medium saucepan.
  • Bring the mixture to a slow boil over medium heat. Reduce the heat to medium-low and let it simmer for 25 min., stirring occasionally, until the cranberries have burst and the mixture has gotten thick. (Don't break up the cranberries too much because you want to have nice juicy bursts in the squares. )
  • Remove from the heat and let this cool a bit while you make the cheesecake.
  • Cheesecake Squares
  • Preheat the oven to 325ºF and put a large pot of water on to boil. When it reaches the boiling point, pour it into a casserole dish or oven-safe pot placed on the bottom rack of the oven, filling the casserole dish almost all of the way. (This acts as a makeshift water bath and turns the oven into a "steam room," ensuring that the crust won't crack.)
  • To make the crust, mix together the graham cracker crumbs, butter and brown sugar.
  • Grease a 9x13-inch casserole dish, and line it with parchment paper so you can easily pull the squares out of the dish when you want to slice and serve.
  • Press the graham cracker mixture onto the bottom of the dish and set aside.
  • To make the cheesecake filling, add the cream cheese to a bowl and beat with a standing or hand-held mixer for 30 seconds, or until smooth. Add the sugar and cream together for about 1 minute.
  • Crack the eggs into a separate bowl. Add the eggs, 1 at a time, to the cream cheese, scraping the side of the bowl after each addition.
  • Add the sour cream and heavy cream and beat until everything is mixed well. Pour the cheesecake mixture into the dish.
  • Spoon tablespoon-sized dollops of the cranberry swirl sauce all over the cheesecake. Using a toothpick or skewer, swirl the sauce all over the pan making a design of your liking.
  • Place the dish on the middle rack of the oven.
  • Bake for about 1 hour. The cheesecake will be done when the side looks set but the center still jiggles slightly when nudged.
  • Turn the oven off and prop the door open a little bit. Allow the cheesecake to cool for an hour in the oven.
  • After the hour has passed, allow the cheesecake to cool completely before placing in the fridge to cool for at least 2 hours.
  • When you're ready to serve, pull up on the parchment to remove the sheet of cheesecake. Slice into squares, cleaning the knife between each slice to get a clean cut.

Crumble remaining dough over the berry layer.
