This light but creamy spinach artichoke hummus is great to use as a dip or spread, for an appetizer or to punch up the flavor of a sandwich or wrap!

1 (15 oz.) can chickpeas, rinsed and drained with 2 tablespoons of the can's liquid reserved
1 heaping cup packed fresh spinach leaves
3 artichoke hearts (from jar, packed in oil but not marinated)
Juice of one lemon
2 tablespoons tahini
2 tablespoons water or liquid reserved from chick peas
1 clove garlic
1/2 teaspoon salt

Steps:

  • Mix everything together in a food processor (I crammed it all into my small one but it would be easier to use a big one) and blend until smooth. Add an extra splash of water, lemon juice or oil if you need to, to get it to the right consistency.
  • Taste and adjust the salt.
  • Serve with veggies and crackers or pretzels or use as a sandwich/wrap spread. Delicious!

Here's what you need: chickpeas, baby spinach, artichoke hearts, garlic, tahini sauce, lemon juice, salt, black pepper, extra virgin olive oil

14 oz chickpeas, 1 can
1 cup baby spinach
3 artichoke hearts
1 clove garlic
3 tablespoons tahini sauce
2 tablespoons lemon juice
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons extra virgin olive oil

Steps:

  • Add chickpeas, spinach, artichoke hearts, garlic, tahini, lemon juice, and seasonings to the bowl of a 2-quart food processor. Blend until smooth.
  • While blending, slowly add in the olive oil until hummus is creamy and smooth.
  • Garnish with a few leaves of spinach, additional chopped artichoke hearts, and a drizzle of olive oil.
  • Enjoy!

I thought that using hummus as a base was a brilliant way to veganize spinach-artichoke dip (one of my favorites), so I decided to make my own, chunkier version. Serve with Recipe #473753. 28 ounces chickpeas (drained, but liquid reserved)
2 garlic cloves
1/4 cup olive oil
1/3 cup tahini
1/2 lemon (juice of)
10 ounces frozen spinach (thawed, squeezed, and drained)
14 ounces artichoke hearts, quartered (drained)

Steps:

  • In a food processor, puree the chickpeas and garlic. Add the olive oil, tahini, and lemon juice, and process until smooth, adding more liquid (either the liquid from the can of chickpeas or some water) if necessary.
  • Add the spinach, and pulse a few times, until it is incorporated but not pureed.
  • Transfer to a bowl and stir in the artichoke hearts by hand.
  • Serve with fresh pita chips!

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

3 large cloves garlic, smashed, divided
½ lemon
4 artichokes, trimmed and stemmed
¼ cup extra-virgin olive oil
2 teaspoons ground cumin
1 teaspoon white sugar, or more to taste
½ lemon, juiced
sea salt to taste
1 green bell pepper, diced
1 tomato, diced
1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
¼ cup plain European-style yogurt, or more to taste

Steps:

  • Pour enough water into a pot with a steamer insert to reach about 2 inches deep. Add 1 smashed garlic clove and half a lemon to the water. Put steamer insert into the pot and bring water to a boil. Arrange artichokes in the steamer insert and place a lid on the pot. Steam artichokes until a knife easily pierces the bottom of the largest artichoke, 30 to 45 minutes.
  • Blend olive oil, cumin, sugar, lemon juice, and a pinch of sea salt in a blender until smooth. Add green bell pepper and tomato; blend until smooth, about 1 minute. Pour chickpeas and yogurt into the blender; blend thoroughly. Thicken dip with more yogurt, if desired. Season with sea salt; serve with the steamed artichokes.

I decided to try a mayo-less version, and then raised the stakes even higher by excluding the sour cream as well. To counter this, a bit more cheese was added, and the results were amazing. A rich, creamy, cheesy, not greasy dip.

2 tablespoons butter
½ cup green onions, white and light green parts only, thinly sliced
2 cloves garlic, minced
salt
1 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
8 ounces cream cheese
½ cup shredded Gruyere cheese
½ cup finely grated Parmigiano-Reggiano cheese
¼ teaspoon hot sauce
1 pinch ground nutmeg
salt and freshly ground black pepper to taste
¼ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in a saucepan over medium-low heat; stir in onions and pinch of salt. Cook, stirring occasionally, until onions are soft, about 5 minutes. Stir garlic into onions and remove from heat.
  • Mix green onion mixture, spinach, artichoke hearts, cream cheese, Gruyere, Parmigiano-Reggiano, hot sauce, nutmeg, salt, and pepper in a large bowl until combined.
  • Spoon artichoke mixture into two ramekins. Top each with shredded mozzarella cheese.
  • Bake in the preheated oven until tops are golden brown and bubbling, about 25 minutes.
