Got this recipe from King Arthur's Baker Companion, and I'm posting this because a friend wanted this recipe. It produces such a nice moist loaf! A must try!

2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1 orange, juice and zest of (or 1/8 tsp orange oil and 3/4 cup orange juice)
3/4 cup sour cream or 3/4 cup yogurt
1 large egg, beaten
3 tablespoons vegetable oil
1 cup cranberries, chopped (fresh, frozen or dried)
1/2 cup chopped nuts (optional)

Steps:

  • Preheat oven to 350 degrees. Grease a 9X5 inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. In a medium sized bowl, combine the orange juice, zest, buttermilk, egg and vegetable oil.
  • Add the wet ingredients to the dry ingredients and mix until combined. Stir in the cranberries and nuts, then pour batter into loaf pan. Bake for 55 to 65 minutes, or until tester inserted in the center of the loaf comes out clean and the bread starts to pull away from the edges of teh pan. Remove it from the oven and let cool for 15 minute, then turn it out of the pan to cool completely on a rack.
  • The loaf will slice better if wrapped when cooled and left to rest overnight before serving.

2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup orange juice
1 large egg, room temperature, lightly beaten
2 tablespoons hot water
2 tablespoons melted butter
8 ounces fresh cranberries, halved
1/2 cup chopped pecans
4 teaspoons grated orange zest

Steps:

  • Preheat oven to 325°. Whisk together the first five ingredients. In another bowl, whisk orange juice, egg, water and butter. Stir into dry ingredients just until moistened. Fold in cranberries, pecans and orange zest. , Bake in a greased 9x5-in. loaf pan until a toothpick inserted in center comes out clean, 55-60 minutes. Cool 10 minutes before removing from pan to a wire rack.

2 cups all-purpose flour, plus extra for loaf pan
3/4 cup sugar
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 stick cold butter, cut into pea size pieces, plus extra for loaf pan
1 orange, zested
3/4 cup fresh orange juice
1 orange, peeled, sections removed and diced
1 egg
1 cup dried cranberries
Special Equipment: 9 by 5-inch loaf pan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a food processor combine the flour, sugars, salt, baking soda and butter. Pulse, pulse, pulse until the mixture resembles finely grated cheese. Add the orange zest, juice and the egg. Pulse, pulse, pulse until the mixture is just combined. Remove to a bowl and stir in the diced orange and cranberries.
  • Grease and flour the loaf pan and add the batter. Bake in the preheated oven for 1 hour and 15 minutes. Rotate the pan halfway through the cooking time to insure even cooking.
  • When done let cool for about 20 minutes and remove from loaf pan. Let cool completely before cutting.
  • Yummy!

1-1/2 teaspoons active dry yeast
1-3/4 cups water (70° to 75°)
3-1/2 cups plus 1 tablespoon all-purpose flour, divided
2 teaspoons salt
1 tablespoon cornmeal or additional flour
1 cup dried cranberries
4 teaspoons grated orange zest

Steps:

  • In a small bowl, dissolve yeast in water. In a large bowl, mix 3-1/2 cups flour and salt. Using a rubber spatula, stir in yeast mixture to form a soft, sticky dough. Do not knead. Cover; let rise at room temperature 1 hour., Punch down dough. Turn onto a lightly floured surface. Pat into a 9-in. square. Fold dough into thirds, forming a 9x3-in. rectangle. Fold rectangle into thirds, forming a 3-in. square. Turn dough over; place in a greased bowl, turning once to grease top. This is my husband's very favorite quick bread I make, a great holiday gift, and is my most-requested at parties, especially around the holidays. It originally came from the Betty Crocker Cookbook, but I usually omit the nuts (although I love pecans with the cranberries) and have added a glaze onto it, which really seemed to give it that extra little zing. When I serve it for parties or brunches, I slice it, then cut the slices in half top to bottom; people seem satified with the smaller pieces (though they often go back for more!) and it serves more that way. I always try to keep a bag of cranberries in the freezer for just this recipe.

3/4 cup sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt

1/4 cup margarine or 1/4 cup butter, softened
1 tablespoon orange zest
3/4 cup orange juice
1 egg
1 cup cranberries, chopped (fresh or frozen)
1/2 cup nuts (optional)
1 tablespoon orange juice
1 cup sifted powdered sugar
enough extra orange juice, to reach drizzling consistency

Steps:

  • Grease/spray bottom only of a 8x4 or 9x5 loaf pan.
  • Combine flour, sugar, baking powder, salt, and baking soda Add margarine and mix until crumbly.
  • Add peel, 3/4 c orange juice, and egg; stir until moistened Add cranberries and nuts.
  • Pour batter (it will be thick) into pan and bake until a knife comes clean from the center.
  • For a 8" loaf, about 75 min; for a 9" loaf, about 55-65 min at 350F (watch after about 50 min, depending on your oven).
  • Loosen sides from pan, remove& cool completely.
  • When cool, prepare glaze: combine 1 T orange juice, 1 c sifted powdered sugar, and enough extra OJ to drizzle.
  • Drizzle over top of loaf and enjoy!

3 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 pound (1 stick) butter, room temperature
1 cup sugar
1 tablespoon plus 1 teaspoon freshly grated orange zest
2 large eggs
2/3 cup orange juice
2/3 cup milk
2/3 cup finely chopped apricots
2/3 cup chopped walnuts
3 cups cranberries, picked over and chopped in a food processor

Steps:

  • Sift together the flour, baking powder, baking soda, and salt. Cream the butter and sugar in a large bowl. Beat in the orange zest and eggs, 1 at a time. Add the orange juice and milk and beat until mixed thoroughly. It will appear curdled.
  • Add the flour mixture and beat until it is just moistened. Stir in the apricots, walnuts, and cranberries.
  • Place baking rack in middle of the oven. Preheat the oven to 350 degrees F. Butter and flour five 5 3/4- by 2 1/4-inch loaf pans.
  • Pour the batter into the pans. Bake for 45 minutes. Test for doneness with a toothpick - it should come out clean. Remove the bread from the pans, transfer to a wire rack, and let them cool on their sides.

4 cups all-purpose flour
2 cups brown sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon ground cloves
1 teaspoon baking soda
2 large eggs
1 cup orange juice, freshly squeezed
1/2 cup grapeseed oil
2 medium oranges, grated zest of
12 ounces fresh cranberries
1 teaspoon almond extract
1 cup sliced almonds

Steps:

  • Preheat oven to 350 degrees F.
  • Then grease two 9 inch loaf pans.
  • In a large bowl, mix together the flour, baking powder, baking soda, salt and cloves.
  • In another bowl, beat the eggs, one at a time.
  • Whisk in the orange juice, oil, orange zest, almond extract and 1/4 cup of water.
  • Add the wet mixture to the dry mixture and mix thoroughly.
  • You will have a very thick batter.
  • Gently fold in the cranberries and almonds.
  • Divide the batter between the loaf pans.
  • Bake until the cranberry bread loaves are golden brown and a toothpick inserted into the centre comes out clean. It will take about 1 1/4 hours.
  • Cool thoroughly and serve.
  • This bread can be stored wrapped in aluminium foil or plastic wrap in the refrigerator for upto 2 weeks.

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Cut in shortening until well blended. Stir in the orange zest and lemon zest. In a measuring cup, combine orange juice and lemon juice; add enough water to measure 1 cup. Add eggs and juice mixture to dry ingredients; stir just until moistened. Fold in the cheese, cranberries and walnuts. , Pour into three greased and floured 5-3/4x3x2-in. loaf pans. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Number Of Ingredients 10

2 cups all-purpose flour
1 cup quick-cooking oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup orange juice
1/2 cup egg substitute
1/3 cup canola oil
1 tablespoon grated orange zest
3/4 cup chopped fresh or frozen cranberries, thawed

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the orange juice, egg substitute, oil and orange zest; mix well. Stir into dry ingredients just until moistened. Fold in cranberries., Pour into an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

¾ cup butter, room temperature
3 cups white sugar
3 eggs, room temperature
3 tablespoons orange zest
6 cups all-purpose flour
1 tablespoon salt
4 ½ teaspoons baking powder
1 ½ teaspoons baking soda
2 ¼ cups orange juice
3 cups whole cranberries
1 ½ cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease three 8x4-inch loaf pans. Line bottoms with parchment paper, if desired.
  • Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir in the orange zest.
  • Sift together the flour, salt, baking powder and baking soda. Add to the egg mixture, alternating with orange juice.
  • Coarsely chop the cranberries.
  • Pour the flour mixture into the mixing bowl alternately with the orange juice, mixing until just incorporated. Fold in the chopped cranberries and walnuts, mixing just enough to evenly combine. Divide the batter evenly among prepared pans.
  • Bake in the preheated oven for 30 minutes. Check for browning: cover the tops with aluminum foil to prevent them from becoming too dark. Bake until a toothpick inserted in the center of the loaves comes out clean, about 30 minutes more. Cool on wire racks.
