ORANGE CRANBERRY COUSCOUS LIKE WHOLE FOODS'
I love to pick up the orange cranberry couscous at Whole Foods Market but it's a little spendy. So I took the ingredient list from this salad and employed the methods from a similar salad in the "Whole Foods Market Cookbook" and voila!

Steps:
- In a sauce pot, bring the orange juice, water, first 2 teaspoons olive oil and grated ginger to a boil
- Add the couscous and stir well, cover and allow to reconstitute for 10-15 minutes.
- Meanwhile, stir together the dried cranberries, mandarin oranges, almond slivers and chopped parsley.
- Add the fruit mixture to the couscous and stir together.
- Top with the final teaspoon of olive oil and salt and pepper to taste.

Steps:
- Preheat oven to 350°.
- Mix all the wet ingredients plus wheat germ together in a large bowl.
- In another bowl mix the flour, salt, and baking powder.
- Add the flour mix to the wheat germ mix and stir very well.
- Fill your greased muffin tins 3/4 way full with batter.
- Bake for 10-12 minutes or until a toothpick inserted comes out clean.
CHICKEN SALAD LIKE WHOLE FOODS'
This salad is very similar to the Sonoma Chicken Salad at Whole Foods' Deli. I love it - just not the hefty price tag. I enjoy creamy chicken salads with grapes and hope others will too. This is a combination of some other chicken salads and the ingredient list from Whole Foods. Plan ahead, the dressing should sit overnight in the refrigerator to meld flavors before adding to the other ingredients.

Steps:
- Combine mayonnaise, cider vinegar, honey, poppy seeds and salt and pepper.
- Refrigerate overnight for the flavors to meld
- Place chicken breasts in a shallow baking dish with 1/4-1/2 cup water.
- Cover chicken and bake in a 375F oven until cooked through - about 25-30 minutes.
- Cool and cut the chicken breasts into 3/4 inch pieces (or whatever bite size you wish) then chill.
- Add the chopped celery, chopped toasted pecans, and grapes.
- Pour the dressing mixture over the chicken mixture and combine gently until coated.
- Serve on top of a green salad or as a sandwich.
