1 tablespoon baking powder
0.5 teaspoon salt
0.5 cup miniature semisweet chocolate pieces
2 eggs
0.5 cup sugar
0.5 cup milk
1 tablespoon finely shredded orange peel
0.5 cup orange juice
0.25 cup vegetable oil
1 recipe Streusel Topping
0.5 cup all-purpose flour
0.5 cup sugar
0.333 cup butter
0.5 cup chopped walnuts
0.25 cup miniature semisweet chocolate pieces

Steps:

  • Preheat oven to 400°F. Line twelve 2 1/2-inch muffin cups with paper bake cups; set aside.
  • In a large bowl stir together flour, baking powder, and salt. Stir in chocolate pieces. Make a well in the center of flour mixture; set aside.
  • In a medium bowl combine eggs, sugar, milk, orange peel, orange juice, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy).
  • Spoon 1/4 cup of the batter into each prepared muffin cup. Sprinkle generously with Streusel Topping. Bake for 18 to 20 minutes or until a wooden toothpick inserted in centers comes out clean.
  • Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm. Streusel Topping
  • In a medium bowl stir together flour and sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in walnuts and chocolate pieces.

Steps:

1/2 cup softened butter
1 cup sugar
2 oranges, zest of, grated
2 eggs
1/2 cup orange juice (no pulp is best)
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups flour
1 1/3 cups good dark chocolate chips
1/2 cup sour cream

Steps:

  • Preheat oven to 350, have eggs at room temperature Cream butter and sugar in a mixing bowl until light and fluffy. Add the eggs and mix on medium until incorporated.
  • Add grated orange zest, flour, baking soda, baking powder and sour cream, mix inches Add orange juice and chocolate chips, mix on low for about 30-45 seconds, until mixed well.
  • Fill greased muffin pan cups a little more than half full, bake at 350 for 12 min or more, until cake tester comes out clean - depends on your oven, should be between 12 and 15 minutes; mine usually takes 13 minutes

2 cups flour
1/3 cup sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup semisweet chips (i use the mini-chips)
3/4 cup milk
1/2 cup vegetable oil
1 egg
1 -1 1/2 teaspoon orange oil or 2 tablespoons orange zest
additional sugar, to sprinkle on top

Steps:

  • In medium mixing bowl, combine flour, sugar, baking powder, salt and chocolate chips.
  • In a small mixing bowl, whisk together milk, vegetable oil, egg,and orange oil or peel until light.
  • Add wet ingredients to dry and stir together for 20 seconds, or only until ingredients are just moist.
  • If you see lumps, it is OK to leave them.
  • Lightly grease cups of 12-cup muffin pan and fill each 2/3 full w/batter.
  • Sprinkle 1/2 teaspoon sugar over each for a crunchy, sugary crust.
  • Bake in preheated 400 F oven for 18 to 20 mins.

3 extra-large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
1 cup sour cream
1/4 cup milk
2 tablespoons freshly grated orange zest
1 1/2 cups semisweet or bittersweet chocolate chips

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350°F. Line two standard muffin pans with 16 paper baking cups or lightly butter the muffin cups.
  • Combine the flour, baking soda, cinnamon, and salt in a large bowl and set aside.
  • Using a mixer set on high speed, cream the butter and sugar in a large mixing bowl for 5 minutes, or until light and fluffy. Beat in the eggs, one at a time, beating well after each addition. Add the vanilla, sour cream, milk, and orange zest, and beat until smooth, occasionally scraping down the sides of the bowl.

I have looked through some wonderful chocolate-orange muffin recipes here but none quite like this one which I have tweaked from Jane Brody. It's a healthy light orangey muffin which is especially nice for breakfast.

2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt

1 1/2 cups orange juice (freshly squeezed for best results)
2 tablespoons orange zest
1 egg, beaten
100 g dark chocolate chips

Steps:

  • Combine dry ingredients in a large bowl.
  • Combine wet ingredients in a small bowl.
  • Mix the wet ones into the dry ones until the flour is just moistened. The batter will be quite thin.
  • Add chocolate chips ( I use couverture chocolate roughly chopped into chunks).
  • Bake at 200c for 20 minutes.
