ORANGE CHICKEN

Orange Chicken image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons cornstarch
4 egg whites
4 boneless chicken thighs, cut into bite-sized pieces
1/2 cup orange juice (I used Simply Orange)
1 tablespoon soy sauce
1 packed tablespoon brown sugar
1 tablespoon rice wine vinegar
1/4 teaspoon sesame oil
Dash salt
Dash crushed red pepper
1 clove garlic, pressed
A little grated or minced ginger
1 teaspoon cornstarch
Vegetable or peanut oil, for frying

Steps:

  • For the chicken: In a large bowl, whisk together the cornstarch and egg whites with a fork until almost frothy, about 1 minute. Add the chicken to the mixture and allow to sit for 5 to 10 minutes.
  • For the sauce: Meanwhile, put the orange juice, soy sauce, sugar, vinegar, sesame oil, salt, crushed red pepper, garlic and ginger in a small nonstick skillet and whisk. Heat until bubbling and starting to thicken, about 5 minutes.
  • Whisk together the cornstarch and 1/4 cup water in a small bowl and add 1 to 2 tablespoons of the cornstarch slurry to the sauce. Mix in and thicken for 1 minute.
  • Heat about 2 inches of vegetable oil in a heavy-bottomed Dutch oven until a deep-fry thermometer inserted in the oil registers 350 degrees F. Carefully drop the chicken into the oil and move it around, flipping gently, until golden, 3 to 4 minutes. Let the pieces drain on a plate lined with paper towels for 2 to 3 minutes. Then drop them back into the oil for 1 minute to really solidify the coating.
  • Toss the chicken in the sauce and serve.

For the sauce:
1 1/2 cup strong chicken broth ((vegetarian/vegan: use vegetable broth))
2 tablespoons fresh orange juice
1 tablespoon orange zest
2 1/2 tablespoons soy sauce
1/4 cup fresh lemon juice
1/3 cup rice vinegar
1/2 cup granulated sugar
1/2 cup brown sugar
low sugar/diabetic substitute

Steps:

  • To make the sauce, stir together all ingredients, except for the garlic, ginger, green onions and orange slices. Set aside.

Pour over chicken in a sealable plastic bag and refrigerate for at least 30 minutes. Remove the chicken pieces from the bag, shake off the excess liquid, and give them another roll in some cornstarch (this will create a thicker coating).
  • Heat some high-heat, neutral-tasting on high in a wok, deep fryer, or heavy skillet and carefully lower the chicken into the oil. Fry until crispy golden brown on all sides. Using a slotted spoon, transfer the chicken pieces to paper towels to absorb the oil.
  • Reduce the heat to medium-high and add another teaspoon or so of oil to the saucepan or wok. Saute the ginger and garlic for 30 seconds, then add the sauce. Bring the sauce to a boil. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  • Add the chicken pieces (or prepared tofu) and green onions to the sauce, stir to coat, and bring the sauce to a low simmer and cook for 5 minutes. Serve immediately with steamed rice and fresh orange slices (optional).

You'll notice the sauce will thicken. Remove from heat and stir in the orange zest.
  • Prepare chicken: In a shallow dish whisk the flour and cornstarch together. In another shallow dish, whisk the eggs. Dip the chicken pieces in the egg first, then dredge through the flour mixture. Place on a plate. Repeat with remaining chicken.
  • Fry the chicken: In a heavy-bottomed pot add about 2 inches of oil and heat until it reaches 350 F degrees. Working in batches, add a few pieces of chicken at a time. Cook for about 2 to 3 minutes turning the chicken often until golden brown. Transfer the cooked chicken to a plate or bowl lined with paper towels. Repeat until all chicken is cooked.
  • Toss chicken with sauce: Transfer the chicken to a bowl, pour orange sauce over the chicken and toss well until all chicken is fully coated in the orange glaze.

  • Add the orange sauce to the chicken and cook for 4-6 minutes, stirring often until the sauce has thickened.

  • To a large skillet, add the oils, orange juice, soy sauce, honey, and the chicken pieces but not any excess cornstarch that's at the bottom of your bowl or bag.
  • Turn the heat to medium, and cook until chicken is done and cooked through; flip chicken and stir pan sauce that's forming nearly constantly. Tip - If at any time your sauce is tightening or thickening up too much before the chicken has cooked through, simply add additional orange juice to thin it and keep stirring.

  • In a small bowl, whisk together honey, orange juice, orange zest, 1 T olive oil, ginger, garlic cloves, red pepper and sea salt (about 1/4 tsp or to taste) and pepper. Place chicken in a medium bowl. Season with salt, pepper and garlic powder as desired (I like garlic, can you tell??) Pour marinade over top and toss to evenly coat.
  • Cut stems from broccoli and break into florets. Toss 2 tablespoons olive oil, dash of sea salt 1/2 tsp garlic powder and cracked pepper together so that broccoli is coated. This should double as oiling the sheet pan as well. Spread the broccoli out to the edges of the pan. Add the chicken to the center of the pan and pour remaining marinade over top. ** Short on time? Line the chicken straight onto the pan and pour the marinade right on top before popping in the oven.
  • Place in oven and bake for about 20 minutes or until chicken reaches 165°F internal temperature. When you pull out the pan, some extra liquid may be on it. Blot it with a paper towel or pour it gently off the side.

  • Whisk the orange juice, sugar, cornstarch, vinegar, soy sauce, ginger powder, garlic, and red chili flakes together in a medium bowl. Set aside.
  • Heat 2-3 inches of oil in a heavy-bottomed pot or wok over medium-high heat until it reaches 350 degrees F. Work in batches to cook the chicken, being careful not to crowd the pan which will cause the oil temperature to drop significantly. Cook for 2-3 minutes, turning frequently until brown and crispy on the outside and cooked through. Transfer to a wire cooling rack to drain and repeat with the remaining chicken.
  • Drain most of the oil from the pan, leaving only about 1 tablespoon in the bottom. Add the garlic and saute for 30 seconds, then pour in the sauce mixture. Heat, stirring frequently, for 5 minutes until thickened. Remove from the heat and stir in the orange zest.

  • It is important for the chicken not to have any extra moisture, dry it with a few paper towels and after that cut the chicken into 1-2 inch chunks.
  • Heat up your pressure cooker: press Sauté -> click on the Adjust button -> select More to get the Sauté More function, which means that the food will be sautéed over medium-high heat. Wait for the Instant Pot indicator to read HOT.
  • Add the oil to the hot Instant Pot, add the chicken and sauté for 2-3 minutes, stirring a few times. Cook until it just starts to get golden. When sautéing it, stir constantly so it doesn't stick to the bottom of the pan.
  • Also, after you sauté the chicken, check if bits stuck to the bottom, in that case, deglaze the pot with 1/4 cup orange juice and scrape them with a wooden spoon. If you leave the bits stuck to the bottom, they may burn or cause the pot not to come to pressure. If you want a truly golden-brown chicken, brown it on the stove top, as the Instant Pot isn't really good for that.
