A great spread for pancakes, muffins and toast. This butter smells great and adds just a little orange flavor to what ever you use it on. For a pretty serving idea use half a hallowed out orange as a serving dish.

- In a mortar and pestle or food processor, pound or process the orange zest and the sugar. Add the butter and mix together until creamy and fluffy, dribble in the orange juice and CuraHao a bit at a time, still processing, until it is all absorbed. Pack into a ramekin and smooth off the top, and serve with warm breakfast breads. If desired, spread the butter on a long sheet of plastic wrap and roll up into a cylinder. Chill or freeze and cut off 1/2 inch disks of the flavored butter as needed.

- Preheat non-stick griddle. Mix together the dry ingredients in a medium bowl. Beat the eggs and 1 1/2 cups of the milk in a medium bowl until combined, then stir in the melted butter. Add the wet ingredients to the dry ingredients and mix until just combined then gently fold in the blueberries. If the batter seems too thick, add some of the remaining milk. Ladle approximately 1/4 cup of the batter onto the griddle for each pancake. Cook until the bottom is light golden brown, flip over and continue cooking for about 30 seconds. - Cinnamon Maple Syrup: Heat syrup and cinnamon sticks over low heat for 10 minutes. Remove and let steep for 1 hour. Remove sticks and pour into a small pitcher.

ROASTED TURKEY RUBBED WITH ROASTED JALAPENO, FRESH SAGE AND ORANGE BUTTER

- Put orange juice in a small nonreactive saucepan and bring to a boil over high heat. Cook until reduced about 1/4 cup. Let cool to room temperature.
- Put the butter, cool orange syrup, zest, jalapeno and sage in a food processor and process until smooth, season with salt and pepper. Scrape into a bowl. Can be made 1 day in advance and stored, covered in the refrigerator. Bring to room temperature before using.
- Preheat oven to 450 degrees F. Remove neck and gizzard from the turkey and discard. Rinse the bird thoroughly with cold water and pat dry. Rub the entire surface with 1/2 of the butter. Season the skin and the cavity liberally with salt and pepper. Truss the turkey and place on rack in a large roasting pan.
- Roast the turkey for 30 minutes, then turn the temperature down to 375 degrees and continue roasting for 1 1/2 hours or until the internal temperature reaches 165 degrees F, brushing with the remaining butter every 15 minutes. - Peel 2 oranges with a vegetable peeler; reserve peels. Juice oranges into a liquid measuring cup to measure ½ cup. Transfer juice to a blender and add ½ cup sugar. Blend until sugar dissolves, about 20 seconds-if you taste it, it should not be gritty.
- Return syrup to liquid measuring cup. Express oil from reserved peels into cup and stir to combine. Pour into a resealable jar. Seal and chill until ready to use. Do ahead: Orange syrup can be made 6 days ahead. Keep chilled. Shake well before using.
- Fill a Collins glass with ice. Add 1 oz. chilled club soda.
- Combine 1 tsp. acid phosphate, 1 oz. Orange Syrup, and 2 dashes orange bitters, if using, in a cocktail shaker. Fill shaker with ice, cover, and shake just until lightly chilled, about 5 seconds.
- Strain into prepared glass. Top off with more club soda. Garnish with orange twist.
