KOREAN-INSPIRED GROUND BEEF LETTUCE WRAPS



Korean-Inspired Ground Beef Lettuce Wraps image

Number Of Ingredients 12

1 pound ground beef, preferably grass-fed and organic
3 cloves garlic, minced
3 scallions, white part only, thinly sliced
1-inch piece ginger, minced
1/2 cup soy sauce
3 tablespoons gochujang (Korean red chile paste)
1 tablespoon honey
4 teaspoons sesame oil
1 1/2 cups short-grain white rice
1 1/2 tablespoons avocado oil
Sliced cucumber, for serving
1 head butter lettuce, separated into whole leaves

Steps:

  • For the beef: Add the beef to a medium skillet over medium-low heat. Cook, breaking up with a wooden spoon and slowly rendering the fat, 8 to 10 minutes. Using a large spoon remove half of the rendered fat and discard. Add the garlic, scallions and ginger and cook an additional 2 to 3 minutes. Set aside.
  • For the sauce: Stir together the soy sauce, gochujang, honey and sesame oil in a small bowl. Stir some of the sauce into the beef, a few tablespoons at a time, until seasoned to your taste. Set aside.
  • For the sticky rice: Rinse the rice until the water runs clear. Combine the rice, oil and 1 1/2 cups water in a pressure cooker or Instant Pot®. Cook on high pressure, 8 minutes. Allow the steam to release slowly, for about 5 minutes, then remove the lid. Roll the beef, sticky rice, sauce and cucumber slices in lettuce leaves and eat.

Delicious and bursting with flavor, Asian lettuce wraps are a great idea for entertaining or a family style meal. Each person can build their own fresh, delicious wrap. Just be sure to have plates or napkins available since the mixture can sometimes drip a little. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito and enjoy!

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

1 1/2 lbs boneless beef top sirloin steaks
1 tablespoon cornstarch
2 tablespoons vegetable oil
3/8 teaspoon crushed red pepper flakes
1/2 cup green onion, thinly sliced
8 ounces water chestnuts, drained and diced
2 heads green leaf lettuce
3 tablespoons frozen orange juice concentrate, thawed
3 tablespoons hoisin sauce
3 tablespoons rice vinegar
3 tablespoons soy sauce
1 tablespoon cornstarch
shredded carrot
diced cucumber
salted peanuts
peanut sauce (optional)

Steps:

  • Cut steak into 1/8" thick strips and place in a medium bowl. Add 1 T. cornstarch and toss to coat the beef with the starch. Set aside.
  • Wash lettuce and separate into individual leaves; set aside.
  • Make orange sauce:.
  • Combine orange juice concentrate, hoisin sauce, rice vinegar, soy sauce and 1 T cornstarch in a small bowl. Whisk together and set aside.
  • Heat oil in a large wok or skillet. Add red pepper flakes. Add half of the beef and stir fry until brown on all sides, about 1-2 minutes. DO NOT OVERCOOK. Remove from wok and set aside. Stir fry remaining half of beef. Return first half of beef to wok and add orange sauce, green onions and water chestnuts. Cook until sauce is thick and bubbly.
  • To Serve immediately:.
  • Place a small amount of beef mixture on a lettuce leaf. Top with garnishes of choice. Fold sides in and enjoy.
  • To Freeze:.
  • Remove from heat and allow to cool. Freeze in a large ziploc bag.
  • To serve: Thaw in fridge. Reheat in a skillet on low until just warmed through - DO NOT OVERCOOK or the meat will be tough. Place a small amount of mixture on a lettuce leaf, add garnishes of choice, roll up and eat!

This is such an excellent recipe for a quick, week night meal. Loads of flavor and something different to have. I printed this off a food blog and now I can't find which blog it was from! I modified the recipe to the tastes of my family, and we all loved it.

16 leaves boston bibb lettuce
1 lb lean ground beef
1 tablespoon cooking oil
1 large onion, chopped

1 (8 ounce) can water chestnuts, drained and finely chopped

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions, and stir. Stir in chopped water chestnuts, green onions, and sesame oil, and continue cooking until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito.

This recipe was in the local Sunday paper. It sounded good and is. It is also very easy and quick to prepare. I didn't mix in the vegetables as I was selling it to DS as "Asian tacos." LOL. I did have some tortillas on hand for DS to use also. I did not use mint. Substitute iceberg or romaine lettuce for Boston lettuce, as desired. This recipe can also be found in "The Healthy Beef Cookbook."

1 1/2 lbs ground beef
1/2 cup hoisin sauce
1/2 cup peanut sauce
1 medium cucumber, seeded and chopped
1/2 cup shredded carrot
1/4 cup torn of fresh mint (optional)
salt, to taste
pepper, to taste
12 large boston lettuce leaves, approximately 2 heads
of fresh mint, to garnish (optional)

Steps:

  • Brown ground beef in large skillet over medium heat, approximately 8 - 10 minutes or until no longer pink.
  • Drain meat.
  • Stir in hoisin sauce and peanut sauce until meat is coated.
  • Heat meat through.
  • Just prior to serving, add cucumber, carrots and torn mint.
  • Mix gently.
  • Season with salt and pepper to taste.
  • Serve with lettuce leaves, garnishing with mint, as desired.
